Her whole concept 'Semi-homemade Cooking' utilizes processed and prepackaged foods for convenience and inventing ways to prepare quick, thrown-together meals so as to pass them off for meals that were laboriously prepared. The concept is appealing but most of her recipes are crap.

Recently I've gone on a bit of a pesto kick because damn that stuff is great, and I like me a good sandwich as well, so naturally I've made a few sandwiches with pesto. One of the sandwiches I made I put mayonnaise on the bottom half of my ciabatta roll and pesto on the top (we just so happened to have ciabatta, I swear I wasn't thinking about this horrid russipe). I can say for a fact that mayonnaise and pesto DO NOT go well together. It creates a disgustingly creamy texture and their flavors don't compliment each other AT ALL. They clash, actually. Don't ever try it for yourself, you'll only regret it. Mustard pairs much more nicely btw. I used a dijon or stone ground (I don't quite remember) but really whatever kind is your fave will give the best results.
flylikeabeetv pesto aioli (pesto mayo) is a VERY common ingredient at restaurants and bistros, especially on chicken or turkey sandwiches. It doesn’t clash either. It’s quite delicious. Maybe you have bad mayo or pesto!

I'm so late to this but pine nuts are really expensive. So is parmesan cheese and good Olive oil. Buying all those ingredients to make pesto would be hella expensive. This show is about using pre made store bought stuff. I think a little tub of store bought pesto is just fine here in a sandwich.

Everybody's already criticized what I had to criticize, so now I'll say my one positive: I never actually thought of marinating chicken in pesto. It doesn't look great, but I'm sure it probably tastes fine, and if it was in a sandwich it wouldn't matter if it didn't look great anyways. But not with the mayonnaise. I quite like pesto and mayo together. I think they go well together on sandwiches. I prefer pesto on its own for the most part tho

At the restaurant I work at,Paninis are not nearly popular enough to justify the cost of a panini maker. We do it exactly the way she did.
