As a Texan. I can tell you its quite common to fill up on chips, queso and salsa. Sometimes tortillas and take most of your meal home.
Yup, chips and salsa have ended many of a good meal before it has begun.
But, yet I still can't quit them once they hit the table all hot and fresh.
Same here in Alabama.
That's common everywhere
And that is no problem because Mexican food for some reason is one of those types of food that tastes exponentially better the next day.

There is Mexican chocolate in the mole, Mexican chocolate has cinnamon in it. The chocolate brand called Abuelita (Granny) is the most popular that is used.

Luckily for me I grew up with Tex-Mex, Cajun, Asian, BBQ, and Southern Comfort food as a child from south east Texas.
Texas is such a great place for foodies. Austin, Houston, San Antonio, DFW, and all the mom and pop places along the way spoil you rotten for choice.
Some places over emphasize a certain style of cooking and though good can get boring. You cant say that about Texas.
If you leave Texas hungry or not craving something you just discovered then everyone involved on that trip did something wrong.
Texas was a melting pot of cooking styles.
Even the Mexican flavors are a melting pot of French, Spanish and indigenous peoples.
Place looks legit. I am glad Mrs H pointed out the versatilty of pulled pork.. cook it seasoned with salt, pepper.. maybe garlic and get it to that place where you can do whatever you want with it... in this case put some Mexican spices and make carnitas.. put some barbeque sauce and make pulled pork sandwitch... put some soy sauce/oyster sauce/ginger/garlic and put it over white rice for an asian dish. So economical and easy.
It definitely is. I haven’t been, but it’s the same place Jolly went. The owner was with them in that video and he was on point the whole time.
The family has just become Tex-Mex fans for life! I think, without too much arm twisting, Mr. H and family would gladly move to Texas!
Someone needs to take Mr. and Mrs. H to a country bar and teach em to two step.
One of the main contributors to my (over) weight is living in Texas. The food is so good! BBQ, Tex-Mex, Blue Bell ice cream, etc. But it does help with my goal of being Santa. LOL.

On food which benefits from it, I mean. I know they've learned the necessary lessons about sauce being optional on good BBQ.
Mexican or Tex-Mex of that quality makes me want to cry with tears of happiness. Mr. H too, from his demeanor in this video.
Now that you've had Mole Poblano (the Mole part kind of just means "sauce", not so differently to how salsa also kind of just means " sauce") try it in different places. You'll come to see that no two places make it the same, although ancho chilles and chocolate are always part of it.
As an American who is lucky enough to have so many phenomenal Mexican and Tex-Mex restaurants, I can guarantee you that few countries have mastered flavor depth and balance as well as Mexicans. Incredible cuisine that I wish was better represented in England. We're going to have to get y'all up to speed with spice and heat.
As a chef, there is eating...and then there are meals you never forget!

I've been thinking that for a while now.
I saw on another video that someome asked them when they were moving to Texas, and they replied they are finishing up packing their house. Not sure if that was a joke or not, but that was their reply.
They do seem to love it here, and have taken several trips to Texas.
Mole is chilies, nuts, seeds, and chocolate. It is spiced with several different types of spices. Moles can have from 6 to 60 ingredients. Some say no two moles are the same.

I live in Vermont, but miss Texas. Lived there in the 1970's. Met great friends there. Plus - I loved the taquerias. The smell of a fresh corn tortilla can make me salivate. Walk down the Latino foods aisle of a supermarket and just sniff a package of uncooked fresh tortillas, and you'll see what I mean!

Mole sauce is incredibly complex in flavor. Authentic recipes can have 20-30 ingredients. I've never made it myself, but have watched several TH-cam videos (most uploaded by women that came to the U.S. from Mexico). They aren't difficult to follow, but require quite a bit of time and ingredients that may be difficult to find if you don't shop online or have a local Latin market nearby. It's my most frequent order at good Mexican restaurants.
I don't think I could live without Queso, it's kind of a staple in the diet. lol

I just ate but now I’m hungry! Now you have to come to New Mexico where we do that kind of food right! You should try to come during the Albuquerque International Balloon Fiesta in October every year. Baby H will have her mind blown, and so will you! You will never see so many hot air balloons in the sky anywhere else in your life!

Trust me, months from now you'll get a craving for that cheese dip! Every once in a while I will order some and take it home. That's all I'll eat for the day! Not healthy but SO good! They give you a container of queso dip, a bag of chips and a container of salsa!
This place is not too far from where I live, and whoever told you to try it knows what they're talking about. It's probably one of my favorite restaurants in all of Austin.

I grew up on good Mexican cooking and food. Mole is so versatile and in case no one told you, the secret ingredient is unsweetened cocoa - gives a rich, dark flavor to it. Now I'm hungry for 'home' cooking at is 3 a.m. Guess I'll wait a bit to try to find some.

I’ve been living in Austin Texas the majority of my life. For me this is pretty much every day food. I can’t imagine living somewhere that access to this food just doesn’t exist. It’s delicious and usually quite affordable.

My Tex-Mex go to has always been Chilis Rellenos (stuffed chilies). They're essentially Poblano peppers most commonly stuffed cheese, but other fillings aren't uncommon.

Being from Austin makes me biased, but between Texas BBQ and Tex-mex cuisine, I have not found better food in all my travels.
Someone once upon in time in Mexico had a French dip and thought, hold my beer. At that moment, the birria taco was born, and the French surrendered quicker than they did to the Nazis.

In order of Mrs. H salsa trying, 1st and 4th are excellent on breakfast tacos. Queso with a little ground beef in it is good too. I think it's time guys. You can find a nice 4 bedroom, 3 bath house in some new Texas neighborhoods, mostly in suburbs for 250 - 300K !!! Glad you got to try Mole Poblano with chicken, one of my all time favorites. The sauce takes a loooong time to make! It has at least 3 different peppers, sesame seeds, chocolate, cinnamon, cumin and other spices. That's what gives it that dark rich flavor.
I have not been to Eldorado Cafe. My favorite is La Playa Maya for the food, but Uncle Julio's has the best salsa
I'd love to see you cook BBQ brisket enchiladas and pulled pork & cheese quesadillas. Also, throw some salsa in those tacos!
Haa, Yall were in there eating when i came to pick up dinner the same night. Eldorado cafe makes some amazing food! I hope yall enjoyed it was much as we do. We eat there fairly often....wed eat there more often, but the place is usually so packed, the line is longer than we will wait- there are far too many good places to eat nearby.
Its been fun seeing yall enjoy good meals around here! All that delicious food your eating is our norm.
Our food pyramid is Tacos, BBQ, more Tacos, Soul food, Taco, more BBQ, Korean, more Tacos.
You might have noticed, there are so many places to get tacos, you could eat tacos every day at a new place, and still not hit all the places to get tacos in a year. You can get very spoiled on food living in Austin...taking a road trip around the country can be a serious culinary disaster. Ive many friends that have moved here and couldnt believe how delicious food can be.
Many people I know judge a mexican/ tex mex restaraunt by their salsa.....If the salsa not good...move on. Nice thing is, theres no shortage of delicious salsa making skills round these parts.

NOTE...That Mole you tried. The "secret" flavor is...Chocolate! Mole is one of those dishes that everyone has their special recipe....often a family secret.... and it all has a different flavor. Cant say Ive ever had a bad mole. I grew up eating a friends abuelas (grandmothers) mole! So delicious!

I can't believe that nobody is telling you that Queso simply translates as cheese. Its like saying "Salsa Sauce" when salsa means sauce.
Mole is from Oaxaca many different varieties and is made with chocolate! When your ready to taste Mexico contact me and I will amaze your taste buds with Martian crab , shrimp and fish tacos , birria and many things you won’t find over the border as I live in Mexico!

Queso blanco rules. Back home in Kansas, any time I would go to a Mexican restaurant I would order a large bowl of queso. Everyone would use it to dip their chips in, then when the food arrived we would pour it over our food. Good stuff!
Beans a bit runny,I like either refritos or beany pintos with more body.But if they taste good that's the point.Just need some cornbread for sopping.Most places I have eaten at had medium tomato salsa,pico de gallo and spicy queso.Up in Texoma you often had a split raw jalapeno as garnish.I like Santa Fe style chicken enchiladas.They usually had green sauce.That may be a more West Texas take,since the recipe is from New Mexico.Mole can contain cinnamon and chocolate powder,yes.
