Does anybody know how I can make an extra thick coating of the cornstarch without using any egg? A Chinese restaurant that used to be near me made the best salt and pepper shrimp I've ever had in my life. No place has ever compared to their recipe. I don't know how they got the coating on the shrimp so thick, it was really good you couldn't even see the shrimp until you cut it open. I like it that way and would like to try and make it myself
@@tammy_99x93 I'm not sure but they may use tempura batter instead of corn starch or potato starch. Or maybe, and this is truly guessing here, fry it LIGHTLY the first time in the starch coating, then coat again and fry. Better yet, ask them. In any case, good luck!

What kind of oil do you use?
You can use anything really! I usually buy peanut oil or canola oil.
Shrimp would be cold by you finished second stage.
