You can buy or make big flakes of salt for decoration. It's called fleur de sel. You can boil a pan of salt water. What's left behind are big flakes of salts. The use of banh phong tom is pretty smart though :)

I tried your recipe, and it turned out delicious!! Instead of potato starch I used lentil flour and I used pink himalayan salt. Sprinkled with coriander on the top. the shell is rich with calcium so you don't need calcium supplement by eating like this :)
In Vietnam we have a kind of small shrimp. It shell become crunchy when you deep-fried. That one is perfect for this receipe.
