How to prepare fruits for Christmas Fruit Cake, Black Cake. (Boiled, Stewed Fruits)

  • This recipe of Stewed Fruits is the way to go if you are planning to bake Christmas Black Cake. Loads of spices, tons of flavors.
    Ingredients
    1 1b Currant
    1 1b Raisins
    1 1b prunes ( remove seeds and cut if half)
    1/2 1b cherries
    (Any other fruits of your desire)
    3 bay leaves
    2 cinnamon stick
    1/2 tbs ground cinnamon
    1 tsp mix spice
    1 tbsp vanilla essence
    1 bottle rum
    1 bottle cheery brandy or wine
    Boil fruits for 2 hours under the lowest heat, check within that time frame add more water if needed.
    Allow to cool, pour in tight lid container along with Rum and Wine and allow to soak for at least a day before baking.

    Wow. Thats the exact way I make my fruit cake. Slight difference i never boiled my fruits but i surely will from now. Believe me i have fruits soaking in wine and rum year after year. Thanks for you video. Your cake looks amazing and i can actually taste it through the phone. Bless.

    Thank you guidance Miss Racquel , I boiled my fruits yesterday, I used your ingredients with the exception used the cinnamon leaf and I also added some Cloves….I tell you this smell so goooood!!!❤ thanks for this recipe … now on to making the cake

      You are so very welcome my dear, just remember to remove the cloves and leaves when blending the fruits.
      Also soak with your favorite rum & wine.
      Then you are ready to bake 👏🏽

    This is a proven shortcut to making your fruits super-ready for baking. a little tip = I cover the container with a plastic cellophane and then cover the lid to seal the goodness inside the storage container.

    Never done christmas cake with boiled fruits always , soak the fruits either ground or whole in whatever alcohol desires but, you're cope sounds different and good so I'll ty it

      The boil version is for persons who didn’t have time to soak their fruits but I can assure you. The boil version is so good !

      Yoooo! I boiled the fruits in water only because I am not down for wasting alcohol ..I know! I did not regret it.I did not soak the fruit in alcohol after,but I added more alcohol to the fruit before blending part of the fruit and putting all of it in the cake batter.Boil the fruit in water.Don't be afraid. I was skeptical.

    This year is the first i would like to bake a christmas cake but i didnt soak any fruits an i came across your vedio.Do you have to use the stew fruits the nexts day after stewing an does it have to be store in glass jar

      Thank you for watching Elizabeth, you can use the stewed fruits the next day after stewing or the next year.. it’s up to you. The alcohol preserves it unrefrigerated for as long as possible.
      You can stored your fruits into a plastic or glass container it doesn’t matter. Just make sure it’s tightly sealed.

    Hi Racquel, when you’re blending the soak mixture fruits are you blending the whole spice and bay leaf together or remove those two items and then blend?

      The flavors were already extracted so they are no longer needed

    How much water did you add the fruits to ? Did you pour all the 1 bottle or rum and wine when you finished boiled the fruits Thanks for this recipe oh my gosh

      Enough water to cover the fruits
      Pour as much wine or rum as you like, preferably enough to cover the fruits to keep them nice and saturated

      Years I would say, I have fruits soaking since last year in my pantry, and it’s perfect 👍🏾
      The alcohol preserve the fruits so no refrigeration is necessary.

      You can store it until you are ready, the Alcohol preserves it for as long as possible. I still have fruits remain since last year and it’s well preserve

    I bought a sweet wine mascato can I use it to store the fruit or must I have cherry brandy. Everybody has a different recipe and I’m so confused.

      Cherry Brandy is not sold everywhere so that sweet wine moscato should be good.
      Red Label wine is also a winner

      Shouldn’t be refrigerated Britney, the rum and wine will preserve it for years!
      I use only 4 -5 cups of fruits for my 1 pound cake recipe. So about 1/2 container still remain for another batch of cake

      No, mix spice is a combination of mace, cloves, cinnamon, coriander, ginger, nutmeg and yes all spice.

    Hi Racquel, Can I use the regular Jamaican White Rum? I see that you're using some type of Black Label Rum, but I'm use to the Jamaican white Rum. Also, What type of Browning do you use? Is there a Browning specifically for baking, or Is it the same type of Browning that we use to give color & flavor to our gravy?

      Hi Debra… Jamaicas Red Label Wine and White Rum is perfect… Use Alcohol of your choice
      Grace Browning is the favorite but any other type of browning would work just as good.
      Same Browning for baking and cooking 👍🏾

      After stewing, it could be use the very next day to bake…. Or you could soak for as long as possible, the alcohol will preserve it

      Even though the Bay Leaves or Cinnamon leaves gives great flavor, it could be excluded. You could add some cinnamon powder instead.

      Actually it’s not… remember it going to be simmering under the lowest heat, no rush, but you could boil yours less time if your prefer.
