I thought 350 was $350 dollars but in the middle of the auction i learned it was $3 and 50 cents a pound. I also learned you basically cut out the middle man and save almost half the price a grocery sells at. If you need a lot of fish I’d go straight to the auction
I wish I would have really tried an omakase somewhere in Hawaii when I went there 10 years ago. But the seafood I had there was some of the best I have ever tasted, and learned so much from a chef at a restaurant I went to about the intricacies of fish and the market.

Yeah its definitely a concern. They have quotas for different species depending on how overfished they are and for some, only certain time of the year you can catch something (in hawaii waters). I believe they also keep good record keeping of whats caught and discarded. Hawaii longline fisherman said they have concerns about international boats outside of hawaii waters not following the same rules as them. Closer to shore, certain areas will be closed to fishing for periods of time like say every other year. Other areas give local communities the ability to set catch limits, size minimum or what you can and cant catch since those communities are dependent on the ocean. Theres also federally protected waters northwest of the main islands I believe

cookie cutter sharks are very small and strangely enough, they have the largest jaw size to length ratio on all sharks, so that little nibble you see there is actually large compared to the actual shark
the passion that sushi chefs show is unlike any other food group. to the average person, it seems crazy to pay the amount for a single fish as shown. a 600lb tuna that sells for $3,000,000 is insane. how can they pay $5000/lb and still make a profit. i am very much a novice in the sushi world, but simple math for this makes my head spin
The market has picked up on these other species because they have overfished tuna, tuna ratings didn't just automatically go from larger isn't always better, its again because they've over fished tuna and now there's this perception that size doesn't matter when it kinda always did. If fishermen sold by "quality" and not be weight they wouldn't have fished them so hard. Jeez.
The only thing I can think when I see the marbling in the fillets on the thumbnail is those are some damn good looking fish

I went for the first and only time a few years ago. A nice man who works there was able to help me bid ( actually he did the bidding ) and I got a 35 lbs shibi. A heavy set Japanese man. Such a nice bugga l.
Fish farms. . This is one way we can keep supplying. however farming tuna is extremely hard to farm as you need very similar conditions for it to be farmed. There are people in Japan that do farm it though. Tilapia , shrimp, white fish are easy to farm though so in other words they can farm it easily. EEL is another fish that can easily be farmed as well.
The Chinese fish farms are fed via human waste. Those fish are full of chemicals that cause disease. I wouldn't buy tilapia at all anymore and tuna will soon follow.
