I didn’t know the U.S. had such an authentically Japanese large-scale fish distributor. The story of the family and the product they’re putting out is amazing.
For instance, in L.A. there are dozens of Japanese owned wholesale fish distributors. Its a challenge to buy because all displayed seafood is identified in either Japanese or Spanish. Visiting and buying is a glorious endeavor on a Saturday morning at 6 a.m.
i think these guys are mainly serving the east coast (mostly) restaurants, specifically around NYC / tristate. Pretty sure there's a similar enterprise on the west coast, perhaps by another family owned business.
Too bad it’s completely unsustainable and there won’t be any left in 20 years. Japan is basically fishing the seas empty. I love these videos and I love sushi but we should all take like 20 years away from fishing so the oceans can replenish.
The Japanese, no matter where they go, have this methodical attention to detail that you just have to respect. They focus on quality, quality and quality.

As a chef, I have a ton of respect for this guy - he's got great attention to customer service and quality, but also I can tell he enjoys what he does and his staff respect him.

There isn't going to be a single chain,clamp, grinder, and a bunch of other stuff in that welding shop tomorrow when I back in my trailer. All the sandblasting and painting equipment is demonstrably my personal property as well. 🤷♂️

My dad runs his business the same way hands-on and respects everyone. Some boss in an office who probably doesn't know your name, you don't care about their business you care about yourself. A boss who knows your kid's names and does the work, you care about not only your work but the business as a whole. My dad has a construction company where a job done right is left for everyone to see and when you don't care about your work it shows.
