If we continue with existing team members who are available at that time then once those team members come from sick leave can we have a meeting to plan their work?"
I have few doubts regarding DOD a) When exactly the DOD is prepared ? During Sprint Planning or Backlog Refinement ? b) Who is responsible for preparing the DOD ? c) Do we have a single DOD document for all the Sprint Backlog Items ? Or For each Sprint Backlog Item we have a separate DOD document ?

It's up to you , if you wish to do that. If not, you can politely tell your PM that's its not come under my responsibilities. Show your day to day activities where you are busy. Ask them to hire one more team member if they need. You can ask some other experience developer to have 70% of his/her capacity for development and rest 30% for mentoring, help other new developers. It's upto you at last who you project yourself
