P3 is my favorite also! I got it for Christmas back in 2007 and it brought back my love for RPGs after being burned out for a while. Honestly though I really think that P1 and P2 should get the remake treatment first especially 2. The Persona 2 duology is arguably the best story in the whole series and was way ahead in terms of dark/mature storytelling for its time. Those games are really in need of an upgrade considering they came out during the PS1 era.

Actually, in Persona 3 and 4, the Confidants are called Social Links, not Confidants. And here's a few other problems with the Social Links of Persona 3 which Persona 3 Portable, another version of Persona 3, did take note of to improve on for an added alternate route in Persona 3 Portable, which I'll talk about that.
The big problems with the Social Links of the orignal Persona 3 and FES which is that you only get to form Social Links with the party member girls and never at any point with the party member boys, with the Social Links you have in that game, they're pretty mix where while you have those that are very memorable and really good, others though are pretty forgettable, boring or even unlikable. I can tell you that a huge amount of fans would rather have Junpei be the Magician Social Link and spend time with him and not with this useless unlikable character being Kenji.
Another big problem is if you get far into a female student's Social Link, you'll automatically end up dating them, no choice included, not even a way to get out of the relationship without harming the Social Link, you're forced to date them regardless if you're interested in the girl or not, and some of the girls are not really the kind that you would even want to have that sorta relationship with. A lot of people actually hated Yukari and I prefer shipping Yuko with Kaz and not with our character. To give the perfect demonstration of what I'm talking about here, imagine if in Persona 4, you spend time with the female school Social Links and you're not exactly a fan of characters like Rise and Ai because of their personalities and behavor and you'd rather have Naoto be with Kanji than with you, but even with this, they all automatically fall for you, even those that you personally wouldn't want to date them, and you can't leave them without breaking their Social Links either, you're force to date them in order to finish their Social Links. This is pretty much the big problem with the female school Social Links of Persona 3. And the worst part is they didn't even bother to fix this for the male route in Portable.
So, this leads me to talk about what was added to Persona 3 Portable. You see that girl right next to the P3 protagonist in the same slot as him in the Persona 25th Anniversary key art much like the two characters in the same slot whom their names are Tatsuya and Maya? She's the alternate route added to Portable that I mentioned, the female protagonist of Persona 3 who made her debut in Portable. What made her unique and made her the best part of Persona 3 Portable is she's given the ability to form Social Links with all the party members, have her own unique Social Links as well, brand new scenes and scenarios, even different music tracks for the hub worlds and the battle theme by a different female singer and as her, you can date the boys, though with that, they're actually opinionable where 4 male Social Links in total, you're given a choice on if you want to date them or not and saying no on it still lets you continue ranking up with them and finish their Social Links without having to become a big cheater, just like in Persona 4. Persona 3 Portable even comes with improvements from FES like allowing you to take full control of the party members and the battle mechanics that you unlock through the Fool Social Link are actually carried over from Persona 4 and even has other neat editions too.
But a lot of people actually consider Portable to be the downgraded version due to the cutscenes all being downgraded to being this visual novel style, the anime cutscenes have been cut completely, only showing shots from them, with some of those shots being tweaked to have the female main character in and the hub world traveling and party select parts have been reduced to being his point a click style while the battles and dungeon crawling parts still being in 3D using the character models. My only guess is the PSP can't handle 3D for the cutscenes, world traveling, dungeon crawling and battles all at once like the PS2 can. So, for the cutscenes and hub world traveling, they had to reduce them to being as they are in Portable and the anime cutscenes are most likely scrapped completely because of the inclusion of the female protagonist and they just don't wanna remake the same scenes again, just with a different protagonist.
And another reason why people consider Portable to be the downgraded version is one thing in the female route in Portable which I can't say what exactly it is because of spoilers, but let's say this is never an opinion at all originally in the male route. But for one of the Social Links in the female route, there's one specific requirement that you need to finish the Social Link, which causes a big major plot related event to be slightly altered, which although I find the change to be clever because it insures that the rest of the story will play out the same way as it did before, it pissed off a lot of fans overall because of how it ruined the story, ruined the character developments of two major characters and that it goes against the game's main theme. Honestly, I'm fine with this opinion being there and that it's only in the female route, but I wish there was a second opinion to max out the Social Link which doesn't cause the alteration to happen.
And the third reason why Portable is consider the downgraded version is there was the epilogue chapter added to FES known as The Answer, which it didn't make the cut to Portable. Though I don't know if that's really a reason for why Portable is consider the downgraded version because The Answer has mixed reactions with most of them being that they really hate it. So, I don't know if this counts, but I'm bring it up anyways.
So yeah, both FES and Portable have their own good things and bad things. You've got one version which looks appealing and brings out the best story telling, but has problematic Social Links and the automatic party member mechanic while you have another version which adds a brand new alternate route with changes, fix ups and improvements to both the combat gameplay and the Social Links, but is presented in a less appealing presentation and brought in a few other problems. It's hard to point at which version is the best version. Which version of Persona 3 would you go with? This is why a Persona 3 remake needs to happen where not only do they go and update the graphics and improve the big problems the orignal game had, but they can also bring in the elements and best parts from Portable and improve that half of the game too, and thus, we would finally get the best version of Persona 3. What do you think?

A remake is crazy. I would give Minako a completely different story. SEES characters personalities are different, some characters the opposite gender,
Mitsuru are cheerful cheerleader a female pervert towards guys, Junpei a raging delinquent

I don't think that would be possible to do. The point of the female protagonist is the other characters don't have their personalities change, but rather how they view and interact with the protagonist changes because you're technically playing as a completely different person. That's the point of this.
