      It's a challenging technique! Make sure you keep it away from humidity, spread the mixture as thin as possible, and if you're making the glucose at home, make sure you have the right consistency!

    Thank you for the tutorial ! I have one question! Can the cake be refrigerated after the sheet is applied or does it become sticky? Get ruined or crumble off in the fridge? Thank you!!!!

      My pleasure! The sheet should stay as far from humidity as possible and the refrigerator is very humid! I would advise you not to because when it comes back to room temperature it will be bendy...

    Thank you this is brilliant. Just one question: Have I read the quantities correctly -130g liguid glucose or should it be 1 x 30g glucuse?

      130g is correct. The recipe mentioned at the beginning + additional sugar to sprinkle on top :)

    Thank you so much for the recipe! I love that you showed us how to make the glucose and I don’t have to buy another tub of something. I tried this last night and I don’t know what’s wrong with it 😩 I made half the recipe. It’s for a very small cake. A few questions... What does the lemon juice do for the mixture? Keep it pliable? Draws out moisture? I think I may have added a tiny bit too much. I rolled it out super thin, put in the oven, let it cool and waited a few hours and it was still sticky. I left it on the counter to dry overnight and it’s still sticking ☹️ I colored the sugar myself and I thought maybe there was too much gel coloring, making it extra moist?? Not sure. It’s been almost 24 hours. What do you think it might be? Also, is there a specific temp the glucose should reach rather than testing it in the cold water? I’ll have to try it again. You make it look so simple.
    PS. Your nails are beautiful. They look clean and well groomed. I’m not sure why the negativity from the other commenter

      Hi! Thank you for your comment on my nails, that's very sweet to mention!
      Regarding the recipe, I wanna start by saying don't beat yourself up this is a complicated technique although looks easy on video. The humidity plays a major part in these kind of decorations, I would say keep it in the oven on low temperature a bit longer. The coloring shouldn't affect it much. About the lemon in the glucose, it's used in order for the sugar not to crystallize so we need it to stay in liquid form.
      Things to consider: did you get your glucose the right consistency? I think there are a few recipes that use a candy thermometer for the glucose, which by the way is more accurate, but I don't have one so I test it in cold water.
      Also, I've uploaded a different method, did you check it? Maybe it'll suit you better?

    as it dries out more on the cake does it become really hard to cut? Or should it be removed before serving?

      You don't want to cut into it! I unwrap mine before cutting, but the good things is that it's easy to remove :)

      @@pastambutique2558 Hi! The humidity has a huge impact when working with sugar, this is why we bake it on low temperature. Give it some time! Some people leave it to dry more than 2 hours!

      My pleasure! It is advised not to store this in the fridge because humidity is the enemy of sugar, this is why I covered my cake with ganache :)

      It will settle but cannot be cut so you have to remove it before cutting the cake. Do not put it in the fridge or it might collapse ☺️

      Thank you! Make this at least 24hrs ahead! It can be placed on buttercream, ganache, and fondant! But do not place it in the fridge, the humidity will ruin it! ❤️❤️

      If it’s still sticks means it’s still humid. Leave it for a few hours or place it on the oven on the lowest temperature, the oven does absorb humidity.

      You need 130g of glucose, the recipe posted is for demonstrating purposes, but if I recall, it makes about enough!

      Hi! It can be used on buttercream, ganache, and fondant. Unfortunately whipping cream has so much water it’ll ruin the sheet.

    Hi nice tutorial, I have few questions this looks awesome but while cutting the cake will this be easy or hard to cut? Can we make this day's beforehand or have to make it on the same day?

      This will not be easy to cut into, specially using this method, I'll be working on filming other methods. The best thing to do is unwrap the sugar sheet before cutting the cake, the good news is it's very easy to remove! Regarding when to make this, sometimes it takes a few hours to actually dry but don't leave it out too much, also keep away from the fridge because sugar and humidity are enemies :)

      It is preferable to keep the sheet away from the fridge because the humidity of the fridge ruins it!

      The oven will help eliminate humidity from the sheet which will help it set faster but yes you can skip the oven if your weather in non-humid

      I wouldn’t advise you to. Whipped cream frosting has so much moisture in it and won’t harden like buttercream or ganache so that might crumble the sheet!

      I wouldn't advise you to do so. The humidity of the fridge will damage the sugar sheet.

    Whats the purpose of this? Is it edible? I mean obviously its edible but like do you really eat it (you know cause its a sugar coma in the making 😅), or is it like fondant just for decorative purposes? 🤔

      @@viidyyaamundaada3383 it is advised to keep it away from the fridge because of the humidity. Bakers who usually use it on buttercream, apply it at last minute.
