I have never heard of this! But my husband went to the Baker Creek Festival today and this was at one of the vendors. It was simple made, just noodles, cabbage, onions, carrots, broccoli and the sauce. Delicious! This was a huge festival of about 4000 people and the line was long for this.

Great vid! I need some of your expertise on properly cooking fish on the Blackstone. Butcher's Block has some great salmon, tuna, shrimp, and scallops, but I have little experience grilling fresh fish.
You haven't had yakisoba, until you have gotten it from a street vendor in Okinawa, Japan! I was stationed there in the 80's, and the food was out of this world! Yakisoba, yakitori, fried rice, taco rice and cheese! This video brings back some fond memories.

Good Cook!!! I have made a slightly different version using sweet and sour sauce. Which is similar to your fire cracker chicken dish. I use wok style noodles from my buddy's Mongolian Restaurant. But this a must for sure. Noodles make everything taste good.
I lived in Japan while in the Marine Corps and it was my favorite Japanese dish. I have not however seen the noodles charred. Otherwise looks good Hussey!
Just made this, it was really good! I was thinking about putting a little zucchini in the next time. The sauce had something a little strong, maybe the Worcestershire sauce. I’ll back off a little on the next one. Pretty simple to make. I am gonna buy the carrot matchstick for the next time, too tedious! I like to keep my fingers! Lol

Looks great I would enjoy it. I like to prepare a good stir fry like the veggies because they are crisp tender and not over cook; which helps from destroying some of the nutrients in them. My wife would like it as it is hasn't got alot heat spices. Though it little on the tame spice wise for me. I was surprise the recipe didn't call for Shichimi Togarashi or Nanami Togarashi blends and/or Nori Komi Furikake Japanese Multi-Purpose Seasoning Blend. As these are traditional spice blends commonly used in alot of Japanese cuisine.
Just noticed the cover for the rear grease hole. That something we would have to make or is that a product we can purchase somewhere? Found my food likes to run that way as my ground isn't exactly level so you have to catch it sometimes from running all back there.

Loved this! Last yakisoba I had was beef with zucchini and all the other veg. The sugar and salt hitting the grill makes the best flavor.
In Japan they often finish it with bonito flakes (dried fish flakes)

That looks authentic Japanese Yakisoba! You can use bacon instead of chicken and sprinkle crushed seaweed sheet (Nori) if you can find.

Depending on the griddle and where you are, medium will be pretty hot actually and I adjust a lot too.
Pro tip, sesame oil at the end.
I actually hit mine with some rice wine vinegar. Helped cut some richness. Seasame oil could help too.

Hungry Hussey on the Japanese yakisoba did you use the light soy sauce which is salty while the dark soy sauce is more for color.
