So ingredients in US for two loaves are: about 61/4c flour, about a quart of buttermilk, 2 tsp soda and salt?

Well done but you only barely knead the bread....that's the way my Irish mother showed us.

Very informative, e.g. about the importance of airing the flour, about the kneading technique for this very soft dough. Many thanks.

Would it be all right to add a pinch a sugar to the dry ingredients before adding the buttermilk?

As plain flour is very hard to find here at the moment due to lockdown, can I use strong white bread flour instead? Love your bread! 😍💚☘️

Why do everyone only give electric readings . Some people have gas ovens.

That's what a good oven thermometer is intended for; the Taylor version online won't cost you much more than the cost of your favorite beer in a pub. Useful no matter what kind of oven you have

Hi Imelda. Could you, or anyone reading this, tell me why my soda bread is always turnd out sticky on the inside please. Tried making this 4 times now and everything seems OK until I take out the oven and cut into it and it is always sticky. Many thanks for any help.

@goonerfan64 - be sure your dough isn’t too wet. You may not need to add all the buttermilk. Check the temp of your oven with a thermometer for accuracy.
You can also lower the oven rack down one level. Good luck!

You might leave it in the oven longer also cut down almost to the bottom
The loaf is thicker in the Middleton cutting helps it cook evenly.dont de afraid to knead to hard two on three times
      Cheers.

Thank you! Very clear instructions. You have one Chicago grandpa wishing he was sitting in that restaurant right now.
