  • The process making Irish soda bread (Irish griddle bread) is explained by a member of staff at Muckross Traditional Farm. The bread is made and then cooked on a griddle which hangs above an open fire burning peats.

    I've seen so many videos of professional bakers making soda bread and they end up making what I would call wheaten bread, THIS is what I would call soda bread.

      That's because people in the south make "wheaten bread" with white flour and name it Soda bread. Where as up north the wheaten bread is made with brown wheat flour.

      It’s called soda bread because it has soda in it nothing to do with the type of flour you use.

    I am Argentine, fan of so many Irish traditions. Today it is Saturday night and I am enjoying this video... that wonderful Iirhs lady, her cooking tools, the sounds she makes as cooking, her accent, the room, the colours.... Love it! I had the chance to taste the soda bread in Ireland.... delicious!!! Cheers!

    Soda Farls in the North as she says, which makes the transition into that southeast corner of Scotland where they are still popular. I remember my grandmother cooking them on the griddle, them and the 'tattie scones' 😍. I'm gonna try making both of these for myself, thanks for the reminder. good videos of genuine farmhouse kitchen cooking👏👏👏❗️

    I am Irish and I swear every family has their own soda bread recipe 🤣. Also, plum pudding and when we try others in our head we think "very nice, but not the same".

    I swear mothers & nana born during certain eras have asbestos hands by nature! My mother is in her 70’s & is the same way; my hands are wimpish no matter how hard I try !! Different generation. We don’t know what true hard labour is - that doesn’t mean we don’t work hard, but they’re so used to working the fields at a young age (helping Mum/Dad out on the farm as my own mother & auntie did) to using open fires (for *everything* - using a kettle, boiling water for washing, etc). Their hands have truly been through it; if you’re expecting dainty little fingers think again! They’re working hands. X

      My sainted Mother (RIP) used to make them with any left-over mashed spuds (- didn't happen often, but once in a while), and we kids knew them as 'potato cakes'; and even before they came out of the hot oven, we were lined-up ready to slather them with butter, and down them with a mug of tea; and, oh my, were they good! As for our home's version of Soda Bread, which we called a 'cake of bread', was close to the OPs recipe, and baked in the oven. It fed us more times than I can recall. I still make it now and then, and 'tis very good indeed...but not a patch on my dear old Mammy's bread. God bless!

    Fascinating to learn this. This is so appropriate for today 2020 with prospect of off grid living and becoming less reliance on ready made food from supermarket. The C virus scare brings us back to reality. Much appreciated for this.
    By the way, where can you obtain sour milk? Or how to make it?

      Use buttermilk. I'm from Ireland but I live in Spain and I can't get buttermilk here so my mother told me you can use normal milk with lemon juice squeezed into it (half a lemon should be enough), leave it to sit 15 or 20 minutes to curdle the milk and then mix with the flour. Apparently adding in some natural yoghurt has the same effect but I haven't tried that.

      Nikki On, simplicity is the key. Skills like these, once learned stay forever.
      Look up how to make homemade butter, 40% fat single cream, then you will have the buttermilk for the soda bread, and the butter to go on it. So much better for you than the shop bought stuff we rely on,look at the amount of ingredients in the average loaf, when all you need is flour,buttermilk,baking soda,and a little salt(egg is optional, my family recipe doesnt use egg) good for you for having a go.

      I would call it buttermilk which is hard to get around here so i put a tablespoon or two of lemon juice in half a pint of normal milk and leave it for 20mins or so, it will curdle like buttermilk and will react with the soda to give you a nice rise in your soda bread.

    Have tried your soda bread recipe delicious, had to improvise with the fire part got it done eventually, luv the recipes posted on this channel straight forward minimum fuss with ingredients that one always has on hand in the cupboard, can't wait for more of this home cooking, loved it so much I subscribed.👍🥰👍all the best from kiwiland

    That's how I was taught. Now, I use fresh milk and baking powder instead of bicarbonate of soda - I also add a little oil.

      There is no comparison between what you are making and soda bread. Soda bread is made with bicarbonate of soda and sour/butter milk. You may like whatever it is you are making, good for you but why are you comparing it to soda bread.

    I loved this video. I do make Irish Soda Bread about once every 3-4 months. Not sure why I dont do it more often but today i am prompted to make this bread due to my not wanting to buy bread period & I dont want to play around with yeast. Also with the Covid-19 I have chosen to avoid shopping & just use what I have o hand. Typically I use a dutch over or cast with lid & bake this in the oven on parchment so its easy to manage clean up & this bread always turns out high & moist. My Signature to this bread is a bit of rosemary & 1 large onion & a tsp of brown sugar to up the flavor & help reduce the soda taste, but if I had a hearth like that i would definitely be making it like that :)

    My mother still makes this in Ireland in 2020. She uses a frying pan (no oil) on a range or stove and it's called "griddle bread".
