    I am so lucky to call Margaret my Grandma! This bread an absolute staple in the Ward and Galati household. Grandma has been using the same square pan for the last 50 years. Thankful my Dad took the time to document this process.

    3 cups white flour
    3 cups wholemeal flour
    2 level teaspoons baking soda
    2 level teaspoons of salt
    2 teaspoons of suger
    Mix well - add 1 tablespoon of olive oil (optional)
    16oz buttermilk (can use rmix of regular milk and yoghurt or juice of a lemon)
    Mix very well - add little more milk if needed.
    12 x 12 inch pan - lightly greased.
    Spread out
    Score the top
    400 degress for one hour on middle shelf
    Allow 2 hours to cool off after turning it out.

      Hope she’s still with us on March 30,2020. She’s adorable! Love the brogue ! My grandma , a Sullivan, ( who I was named for) was from County Kerry. I didn’t know her but I’d like to think she was like your grandma ( but with a Kerry brogue)

      Your a lucky fellow Kevin and please tell your mom her recipe will be made and enjoyed and with each piece eaten will be a reminder of her in this video. Bless her heart!!! Thank you for sharing her !!! Please ask her for me if she remembers hearing anything about a Charlie Kerins, he was my ex-husbands relative on his fathers side, being only 2nd generation Irish-American himself. Would she, if she does know be willing to share as I'm trying to do genealogy and with both of my in-laws gone now, information is a hard thing to find from anyone who is still around. The publication found wasn't real specific only enough to say he'd been hung being with the IRA.... so any more info would be a welcome thing.

    In case anyone is interested - King Arthur Flour Co. does make a coarse, wholemeal flour. It is called (coincidentally) Irish Style Flour, and is made from red wheat.

    To those of you who fell in love with the fabulous Margaret WARD and her wonderful IRISH Bread Recipe I contacted Dr. Joe Galati and asked if his dear mother -in -law was still with us as of April 7th,2020. I was worried because of age in this age of COVID 19. He very kindly questioned my plea and confirmed that she is well and feeling fine. A BIG THANK YOU TO DR. Galati for his kindness in relieving our fears! YOU GO, My fellow MARGARET AND KEEP On baking THAT BREAD! I think Dr. Joe is originally from Long Island too!     Dia Dhuit! Lovely lady making soda bread. My grandmum and mum made soda bread. Best bread ever! My mum made it with currants and caraway seeds. She cut a cross in it with a knife (to bless the bread) and baked it in a round cast iron skillet. We'd eat it with slathers of butter and a pot of tea. She absolutely loved orange marmalade too. Yum. Go raibh maith agat agus athbhliain faoi mhaise dhuit ó New Hampshire!

    If you would like make this while camping get some buttermilk powder. Mix in with the dry ingredients and bag with a vacuum dealer .To make bread in the field simply add water and knead.

    Legend says that the cross on the dough is to bless it. The small marks are to let the fairies out of the dough so that they will not ruin the bread while it is in the oven.

    No kneading the dough, just pressing it down, this is the best and easiest soda bread I have ever seen. Make the cross to bless the bread and make the marks to let the fairies out. Thank you for sharing, Blessings ☘️

    Thankyou so much, so m uch, dear Margaret. It is so moving, so nice, so xweet, to look a t you making the bread, and hear your voice. I'm from Brittany, so a bit a celtic cousin (our languages gaelic and breton are cousins, even if breton is much closer to welsh). I saw a lot of irish soda breads various recipes, but yours is really different, with il, and cooked in a suare pan, so in my cooking notebook it will be calle "Margaret ward irish soda bread" (or maybe a nice irish nmame for Margaret, such as "Molly irish soda bread, a Margaret Ward recipe" ! . I was told that the holes on the bread, (between the arms of the cross, were to let the fairies go out, for them not to play with the bread and damage it while it is in the oven. IWe, celt people, we like the fairy tales, the fairies. so I llike this thinking about the holes in the bread. So, Margaret, kisses from Brittany (west of France).

    The cross is the Christian blessing and the extra slits are to let the fairies out (so they won't make mischief).

    I wrap mine in a tea towel after it comes out of the oven to soften the crust and I don't add any oil just flour, buttermilk and bicarbonate of soda and salt.

      @Sweetpea I recently added an egg but my son didn't like it but I did get a really good rise. Also I used kefir instead of buttermilk and that worked really well.

    We make little marks like that in the bread 'to let the fairies out'.
    I never saw anybody spread the dough out into a square before. Where I'm from in Ireland, it's shaped into a round cake, then a deep cross is cut into it to help it rise to the right shape. Also, butter is rubbed into the dry ingredients rather than olive oil. When it gets out of the oven, wrap it in a clean wet towel for a softer crust if you like.

    I couldn't wait to try this recipe for our St Patrick's Day Potluck Dinner at our community center. I ordered the Odlums Flour but didn't come in on time. So I substituted with wholewheat. I thought it was going to be a flop BUT it was the biggest hit of the entire dinner. Everyone loved your Recipe. We ran out of it. Next year I will have to make a double batch. Thank you so much for posting this video. I can only hope you will pass this information to Margret Ward herself in Ireland.

    Thank you so much for a lovely entertaining video. With the present problems on Covid 19 in the world we are all trying to be a bit more creative and this video certainly fits the bill. So many of these videos leave waste in the bowl and on the utensils but Margaret was not having any of that as she used every bit of the mixture. The only down side is that I would have loved to have seen the bread cut to have a nosy at the inside. I'm Irish and live in Scotland so I will definitely be trying this recipe once I manage to obtain flour as it is in short supply just now with everyone panic buying. Thank you again for a lovely, informative and very nature video.

      I think if you have a Vitamix, you could grind your own whole wheat berries to a coarse flour. It would be a lot better than $18 a bag--that's crazy!

    My family is from county Armagh. My gran makes soda bread with flour, buttermilk and salt. That's it & it's great! Gran didn't kneed it & just plopped in on a flat pan. Blessed it & let the fairies out.

    Irish soda.
    4 cups plain all purpose flour
    1 tsp baking soda
    1 tsp salt
    14 fl oz buttermilk
    Bake in oven 205 c for 30 min
    Tradional irish bread did not include butter, oil or sugar. It was baked with basic affordable rashins.

    One should never cook with iodized salt. Sea or kosher salt is best for baking. All purpose white flour? For bread one needs to use bread flour. It makes the bread softer and smoother and needs to be sifted, according to Jacque Pépin and Julia Child. Olive oil? Feh. Four table spoons of cubed butter smashed in the flour mixture is best. Num num num.

    This is just soda bread, savory, without dried fruit or caraway. The one with the caraway and fruit doesn't have the Odlum's in it. It's just flour, sugar, fat, salt, soda, raisins and caraway.
    Just in case anyone wanted to make the sweet one!

    Notice that Mrs Ward is concerned that the temperature of the oven has not yet reached 400 F. She knows the rise is dependent on the heat and the reaction between the buttermilk and the soda. Always wait for your oven to reach its temperature before adding the buttermilk to the dry ingredients. Work quickly and get it into the oven asap. BTW the Odlums Whole Wheat is fantastic tasting. Pricey buy worth it. Don't buy it at $18. With a little searching you can find it for less.

    Thank you Margaret.... you are so sweet and your bread looks fabulous.... I will try it. I see you don't use Currants. The only Irish Soda Bread I have ever had was made with Currants and it was only available from my local grocery store during the month of March, unfortunately. I think I might just love to live in beautiful Ireland, instead of Los Angeles. You were lucky to experience that life (in my eyes, anyway).

      @@kieransavage3835 my family live in remote part of Tipperary and used to only ever use butter. It was collected from the creamery every day when dropping off the churns of milk. Never saw oil and God forbid margerine. It was butter on everything.

    My mother a Wexford woman from Ireland made brown and white soda bread, in the 1960's she couldn't get butter milk in the UK then and the glass bottled milk still had cream on the top, not homogenized, so she would put a tea spoon of vinegar in a pint of milk over night it worked for baking just the same.

    My wonderful mam rip used to make beautiful bread .sometimes she would make it on the frying pan .i miss my mam so much and her lovely bread.this brings back wonderful meomries of when we had her with us.she was the best.love tina ireland.

    What a delightful video!! Several years ago, I vacationed at Castle Leslie in Monaghan. I stayed a night or two at a B&B owned by a older lady from America who had married an Irishman and moved to Monaghan.. I very much enjoyed my visit. I had hoped to meet the chef at Castle Leslie and learn how he made their soda bread, but it was busy and I felt like I was in the way... lol.. Thank you for the recipe! I will try this soon!

I wish I knew more about my grandmother's life, who was from County Cork. I lost her when I was about 12.
