Basic White Bread (Hand Kneaded)

  • This bread checks all the right boxes for me: fast to mix, easy to knead by hand, and screamingly delicious to eat. When completely cool, the bread can be sliced very thinly. Your comments are welcome! Ingredients listed below.
    Basic White Bread
    Ingredients for 1 8- or 9-inch loaf (double the recipe for 2 loaves)
    1/3 cup warm (110°F) water
    2 1/4 teaspoons active dry yeast
    1 1/2 tablespoons sugar
    1 cup lukewarm milk (scalded and then cooled)
    1 1/2 tablespoons shortening
    1 1/2 teaspoons salt
    3 1/2 cups all-purpose flour
    Melted butter for brushing
    Bake 425°F 25-30 minutes. Cool completely before slicing.

    Hi! I tweaked the recipe a little (added more salt to my personal taste and less flour - used just over 3 cups) and it's now my white bread go to! It can be sliced thinly and still holds up, great texture! When I watch your videos I feel like I've reached proper civilization. Thank you!

    I have watched this video so many times this year. It is by far, the most useful and approachable lesson on kneading that I have seen on you tube thus far ( there might some others - I watch tons of bread tutuorials and some may say what you have explained but they become so involved - you are straight forward). The added explanations on not using additional flour, stirring in one direction, etc. were extremely helpful. Knowing WHY you are doing certain things or using certain ingredients are the key to good basic skills in my opinion ( former chef de partie), this way its easy to graduate to more elaborate recipes and grow as a baker. Thank you for all of your videos.

    I have been making bread for 30 plus years, even worked as a baker in a restaurant that had fresh bread daily, and I have always added flour to reduce sticking.
    This old dog just learned a new trick today! I can't wait to give this method a go.
    I LOVE kneading dough, it is great way to reduce stress. 😃

      Hey, I'm back. I tried this method (and recipe) twice - smashing!! It was SOO good flavor-wise, but the texture was the real hit. It was moist, tender and yet the outside had a nice crust that also wasn't dry. And, in my family, crust is everything!
      Anyone iffy on using this recipe and method - don't be! This one is well beyond a keeper!!!

    My husband always hates my bread so I went searching for a new recipe. So glad I found this. I doubled it to make 2 and I think he ate an entire loaf by himself! The kneading part was wonderful! I think that's what I've been doing wrong all along! Thank you for this! I'm now subscribed and I'll be looking at your other recipes

      Kevin has wonderful, simple, always delicious recipes. I love how he explains and shows everything that’s important. Have a list of three, so far, that are absolute go tos. The leek and potato soup is delicious and easy, as is the cabbage casserole, even if you aren’t a fan of cabbage.

    I've been baking bread since I was about 12 (52 now). I have to say your bread is beautiful!! I didn't know about kneading it without flour. I've always used my Kitchen Aid mixer with the dough hook, but since we're now living in an RV, I don't have room for it. Your video was extremely helpful for me to get a feel for doing it all by hand. Thank you for that. My mom taught me a mnemonic for remembering the ingredients in bread..."Wow, You Should See My Bread, it's Fabulous!" (Water, Yeast, Sugar, Salt, Milk Butter, Flour) Happy Baking!!😁

    Thank you so much for the white bread recipe. I am 80 years young and made bread many years ago with my mom. She, of course kept putting flour in it.
    This was so easy is absolutely delicious without all that four. You explained everything perfectly.

    I'm a chef and this is by far the best recipe without soy lecithin I've been able to find a video for. Thank you! I don't have a great camera and wanted to find a video to show someone how to make white bread. This one isn't tough and is just like the one I learned, but with a tad less sugar.

    I made your bread recipe today. You don't know how bad I wanted to add flour while kneading, but I took your advice and stuck with it. Scraping the dough from the counter and beating it against the tabletop really worked. I chose to make rolls and they turned out great! Thanks for sharing your tips, Kevin.

    As a newbie, I have been watching video after video on how to bake bread. Thank you for explaining the flour-less kneading process to us. Both loaves looked great but the 9" pan loaf looked perfect. I was glad to see the difference in loaves from the 8" to 9" because I just bought three 9x5 pans.

    I wish I'd found you 2 years ago! I was baking bread and trying out different recipes in April of 2020. Our local stores had trouble receiving bread for a while. So I baked bread every few days. I no longer knead by hand but am enjoying your video seeing the dough change as you continue to knead it.

    After 30+ years of baking bread this has become my go-to recipe. In fact, I have two loaves of it in the oven right now. My father-in-law is returning home tomorrow night and requested a loaf for his first breakfast back. It's that good. Thank you so very much for sharing!

      Hmm, I don't think I kneaded my dough properly on my first loaf, on my second one today. It is on its first rise, so maybe I must go and give it some more time huh Kevin...
      Last time I made your Challah loaves. They were delicious, but the next day the surviving loaf was a bit hard. (We ate the first one in 10 minutes!!!) Aaarrrgh!

      Apparently, I never KNEADED bread correctly in 50 years of making bread, it was always on a floured surface and adding more flour to make it less sticky.
      I also apparently ATE it improperly, too, as I sliced it IMMEDIATELY after putting butter on the hot crust... I ❤️ it hot from the oven! I don't know if I could EVER wait 24 hours.🍞

    Hi Kevin!!! 🙋 I love your recipe! I just came about it several days ago and I've made three loaves already. The second one I forgot I even had a bread 🍞 baking in the oven, but like you said it's perfect for making bread crumbs and croutons. So it wasn't lost.
    I've given half a loaf to the lady upstairs and she was so thrilled to have homemade bread. I'm retired so I have the time and the pleasure to learn new recipes and to be able to share what I've created. By the way I love the pounding involved. It's like exercise.
    Keep doing what your doing. I'm thankful and following. 😁

      We don't eat a lot of Bread, Sandra, but we have neighbors who enjoy our homemade lightbread. I often take a loaf to each of them. They, in turn, share their garden's bounty with us. It is a win/win as I have a bad heart and cannot tend my garden very well.

    Hi,so I tried making bread 2times and both times I did add dustings of flour and yes I thought wow this came together so fast and thought just like you said that it was kneaded enough when it was not,so right now I'm watching you knead the dough without putting any extra flour on the table and because you did not cut video for time,you were able to show me that when I take the time and do it right and not be in a rush,that my bread will hopefully come out just like yours,so what I'm really trying to say is,thank you so much for keeping the video going through the whole kneading process.im in love with your kneading,I am 55 and just now realizing I can make my own bread and other things with flour.im truely amazed,thank you thank you.will let you know how my bread came out when I am done making it then baking it.🥰

    I greatly appreciated the kneading portion of the presentation. Thank you for explaining WHY you were doing what you were doing and the effect it had on the bread. I never knew if I was doing it right and I always put flour down first. I made it vegan with soy milk and raw sugar. My kitty came when she heard Tiger meowing.

    Here in Oct 2021 and it’s impossible to find decent bread at a bakery OR prepackaged. It contains so much cellulose ( filler ) that it compares to a dry sponge!! Homemade is best these days! Ty for the video👍🏻

    Ok, like many I watched this with headphones on, and was first tempted to comment on the audio. The jars and bowls hitting the table were especially harsh. But your excellent instruction caused me to perservere. I have made two batches of bread so far, and added too much flour and probably did not knead it enough both times. This is an EXCELLENT video for aspiring bread makers! Great job! and thank you!

    Thanks for this vid, friend - your showing the old hand way (which my grandma, like your mom, used to do) is extremely useful to those interested in more self-sufficiency during the pandemic and whatever might come next. The banter is cool, nobody wants to watch "just kneading", LOL. Your ad lib tips were quite helpful, and when doing a new thing, a friendly voice is always a good thing. I am going to teach myself how to make bread the traditional way; short of having a grandma available, your vid filled that void very nicely, and we here are thankful for it! :)

I'd be brateful if you taught me how a 71- year-old lady which I actually am ought to address a complete male stranger.     Thank you Kevin for your detailed video. I have not been successful at baking bread until I made your hamburger buns. Those turned out AMAZING for me the first time! This loaf of bread will be my second attempt at making bread. I think the secret is not adding flour during the kneading process, and it being your recipe, of course!

    I love your teaching method, you made it so much fun to listen throughout without skipping. I live in a typical country with high humidity so my breads have been quite heavy but I decided to keep practicing while reducing liquid volumes and their temperature. Thanks again for the kneading process, that too has been some sort of discouragement but I keep trying. I've learnt from you. Like the way it turned out.

    THANK YOU, THANK YOU, THANK YOU - SUCCESS at last! - All because of YOUR video!!! I'm so excited to finally say I can make bread! Your instructions where flawless. For anyone thinking they do not need a 23 minute video on how to make bread, - if you are like me it will be worth every second AND make all the difference in the world; Kevin does not waste any of your time 🙂 The time he in kneading he is imparting jewels of wisdom so we all can be successful bread makers! I like others had been adding extra flour - per OTHERS instructions :-); and have had epic falls- not anymore. I will say it took several minute longer to get my bread kneaded, I guess because I'm not as strong as you :-)
    I've watched the video 2 times, the first to learn, the second TO DO- you where my instructor as I made the bread in real time :-) I'll be watching it again to take notes on all your great advice!

    As I stated I watched the video a THIRD time... well maybe it was the forth: here's my notes
    Total time needed to make: about 3 hours
    In large bowl add water, yeast, and sugar, whisk together, than add cooled scalded milk, shortening, salt, and then flour. Stir IN ONE DIRECTION - stir until you cannot stir any more - turn onto a NON-FLOURED work surface. Clean and dry the bowl than grease the bowl. Start Kneading the dough, it will be VERY STICKY. Kneading will take about 10 minutes, but do NOT add flour, suggested when sticky, pick up dough with dough scraper and slam it down on the work surface. DO NOT add flour, continue to slam on counter when sticky. Test dough by pulling out a portion of the dough from the dough ball and if it tears instead of stretching CONTINUE kneading. When dough stretches when a portion is pulled away from the dough ball, form dough into ball by tucking the dough a couple of times ‘under’ itself- put into greased bowl, rub it a little to coat the dough then flip the dough to grease the other side, cover the bowl with plastic wrap and place the bowl in a warm location until the dough doubles in volume - about 90 minutes. Prepare loaf pan by greasing the entire pan- if 8” bread will likely be very high - suggest 9” pan. Remove plastic wrap - but save it. Deflate dough, either by punching it 😊 or simply by pulling it out of the bowl; does not matter how you deflate the dough. Now drop dough onto work surface and again DO NOT ADD FLOUR, form the dough into a ball again, by tucking in the sides a couple of times. Then pat the dough out into a disk, the disk should be the same diameter as the loaf pan, now stretch out the dough and make two Mickey Mouse ears… really, then fold the ears onto the rest of the dough. Now you want to take the point of the folded dough and roll the dough toward yourself and PUSH it into the rest of the dough, you want to continue to roll and push the dough with your thumbs until all of the dough is rolled up, when you get to the end you want to seal the seam by pinching the dough together, very well (you are creating surface tension by doing this. Now place the dough in the loaf pan with seam side down. - spray plastic wrap with vegetable spray and cover pan. Allow to rise until doubled, should take about 45 minutes Preheat Oven to be ready in 45 minutes. Bake at 425 for 25 to 30 minutes, brush top with melted butter. - best to wait 24 hours to cut.
    Lastly some FAQ from comments - Can I substitute bread flour for the all-purpose flour in your recipe? - Yes - what is important is the percent of protein The amount of protein found in bread flour is USUALLY higher. The more protein the more gluten is produced
    How long will it keep more or less? Kevin: In my experience, bread remains fresh and wonderful uncovered at room temperature for 12-24 hours. For long-term storage I wrap the bread tightly in plastic wrap and freeze it.
    Kevin: loaf-type breads are done when they reach an internal temperature of 190°F when checked with a digital thermometer.

    I tried baking bread before (back in 2015) and it never turned out right so I just stopped, but yesterday I made this bread and it turned out great. This is the first time my bread turned out like bread, lol. Your tutorials are very beginner-friendly. Thanks for sharing such great recipes :)

    I have been making my own bread for lots of years and always did the kneading with flour. It always turned out tasty but not always solid. I know now from watching your video that the extra flour made it too dry and that's why it crumbled when I cut it. Thank you for sharing. I just subscribed to your channel.
