They turned out really good! They look amazing,,,love the cracked top & texture is wonderful...a bit of a crunchy "shell" but chewy inside! I did mine a bit smaller (30 gram) and it made 20 cookies. I believe i will experiment with a bit more spice in the dough next time, but I will definitely be making again! Thanks so much!

I have a large stainless scoop that measures about 3/8 cup. You could also just heap up your quarter cup measuring cup. That works for some of my large cookies. Hope this helps, and thanks for watching!
Great video, Kiddo! I've been working on perfecting my cookie "base" recipe for years. Ya know, like chocolate chip cookies before the chocolate chips. If "chewy" is what you are after, try using bread flour and stir enough to develop some gluten. This will add to the chewy!

That’s a good idea. I would eliminate the rolling in sugar and spice mixture if you add frosting. You could put the pumpkin pie spice that would’ve gone into the coating and just add that to the batter. Then top with frosting. Let me know if you try it! Thanks for watching!

Can this be made ahead? I have two cookie baking dates this year, and I want to try this recipe. I know some cookie dough can be stored in the fridge or freezer until ready, and then some cookies can be frozen.. but others you can’t, lol.
Hi! My tip for freezing cookie dough (such as this recipe, snickerdoodles, or anything that is rolled in cinnamon/spice & sugar)…make the cookie dough, freeze the individual dough balls WITHOUT rolling in spiced sugar. Transfer frozen balls to a freezer bag or freezer safe container. When ready to bake, thaw the dough balls overnight in refrigerator, or on the counter for around 30 minutes. While your oven preheats, stir together the spiced sugar. Roll dough balls in spiced sugar right before baking 🙂. My experience with freezing snickerdoodles that were already coated in cinnamon sugar: once baked, the frozen cinnamon sugar turned really dark and lost a bit of its flavor, that’s why I like to wait till ready to bake for rolling in spiced sugar. So I just made these but my dough is a bit runny I have as I used pumpkin pump of my own by baking it and then dehydrating the water on stove. But still it was not like your consistency. I just added a bit more flour. I hope it works for me
Did you use 1/3 cup pumpkin puree? Or 1/2 cup? Homemade puree is more the texture of organic canned like I used in the video. It’s a little thinner than some brands. All brands of flour can bake up differently too, so I would say use the smaller amount of pumpkin (1/3 cup) and try chilling the dough in the freezer for 20 minutes to help. A little extra sprinkle of flour shouldn’t hurt the texture too much. Let me know how yours turn out. I hope you love them! Thanks for the message 🙂

I’ve wanted to try making these with maple syrup. I would say you probably could, but I haven’t tried it yet. Depending on your oven, they may have a little crunch around the edges and be very chewy inside. I baked mine on the convection setting. All ovens bake differently, so bake time can vary. My butter is usually still a little warm each time I have made these. You could roast a sugar pumpkin and make your own if you have a pumpkin, or use mashed sweet potato instead. But If you could run to the store and get a can of pumpkin, I think you’ll be glad you did! Let me know if you make these. Happy Baking! 🤗
I’m making these and I was wondering, if I use a thicker pumpkin purée and increase to 1/2 instead of 1/4 should I use more flour as well? Or would the ratio stay the same. I’m asking because I have a problem where my dough turns out more sticky and not as firm as yours.
Try to match the texture of the dough in the video. I have never added extra flour, but all brands of flour are different, and sometimes even the humidity level in the room can make slight differences in the dough texture. If you’ve already added the pumpkin (1/2cup) and the dough seems too wet, you could try adding just a little extra flour. Try not to add too much flour. This can change the final texture of the cookie. Instead of adding flour, you could quick chill the dough in the freezer for 15 to 20 minutes. I hope this helps! Let me know how yours turn out. 🙂👩🏻🍳
@@DoubleStopBakeShop hii so I decided to make 2 batches, the first I added the 1/2 of pumpkin purée with a little extra flour and the other batch I stuck to the recipe. The results from the first one were amazing the cookies did turn out a bit more cakey and a little more fuller/thicker, the second one turned out almost identical to yours. Both ways tasted so good and my family loved them! (I let both batches sit in the fridge for a while too so I think that helped with my dough consistency) but thank you for the recipe and help will definitely make these again!

@@Innerdiamond my recipe calls for a little less than a cup of sugar in the dough, total. (1/2 c. plus 2 Tbsp. brown sugar, 1/4 c. granulated sugar) If you use less sugar, the cookies will have more of a cakey texture. I’ve experimented with it quite a bit. I’ve had a few viewers ask for low sugar/healthy alternatives for desserts. I may add a few of my low sugar recipes in the future. I’ll add them under a playlist to make them easy to find. I would use 1/3 cup fresh pumpkin puree. 🙂 Start with that. Try to match the texture of the dough in the video the best you can…if the mixed dough looks dry, dryer than in the video, add a little dab of pumpkin. When I made homemade puree, it was a little thinner like the organic pumpkin I used in the video 👍 and it worked well, so I’m thinking 1/3 cup. I hope this helps! Thank you so much for responding!! I would greatly appreciate your help!! They turned out very thick. They didn’t flatten but they just got tall. They looked the the top of a cupcake. And they were almost rubbery and hard to chew! They were also very very smooth. Unlike yours, there was absolutely no cracks in them. I used Libby’s pumpkin purée and they barely tasted like pumpkin. I even increased to half a cup of purée like you said! They weren’t sweet at all. and before I added the flour my mixture was very very dark brown, almost black. It’s possible I browned the butter too much. But overall they looked like the top part of cupcakes, they were too thick and rubbery, they weren’t sweet, and they didn’t taste like pumpkin !! Please tell me what I did wrong!! Thank you so much for all your help ! I’m a big fan of your videos!!!!💕🎃🍪
Hello! I’ll list a few ideas I have to help. Since the cookies turned out thick with no crackles on top, sometimes that can be from too much flour. How do you measure flour? I like using a kitchen scale, 2 cups would be 8.5 ounces. If you don’t have a scale, be sure to fluff your flour before measuring into a measuring cup. Spoon the flour into the cup and level with a flat edge like a spatula or table knife. Try to avoid scooping the measuring cup into the flour. This can pack the flour into the cup and be too much flour for the recipe. When mixing in flour, only mix just until combined. Try not to over mix the dough. Over mixing can make a tough and rubbery cookie. Also, for the amount of sugar, make sure to add 1/2 cup plus 2 Tablespoons packed brown sugar, 1/4 cup granulated sugar, and 1 Tablespoon honey for the sweetness. This will be plenty of sweetness to add to the dough, so if the flour is measured correctly the sweetness will be just right. Another thing to double check: make sure not to confuse baking soda with baking powder. This recipe calls for both. Baking soda creates the crackles. Use 1 tsp. Baking soda, and only 1/2 tsp. Baking powder. I do love using parchment paper to line the baking sheets for baking cookies. I think they brown nicely using parchment, they won’t stick to the parchment, and makes for easy clean up. Hello! Thanks for the message. I always measure the flour using a kitchen scale. 2 cups = 8.5 ounces. If you don’t have a scale, fluff the flour with a fork and lightly spoon into measuring cup, leveling off with a straight edge knife or spatula. This prevents packing too much flour into the cups. Also, all brands of pumpkin are different textures. Did you use 1/3 cup or 1/2 cup of pumpkin purée? Libby’s seems thicker, so I sometimes use closer to 1/2 cup. Organic pumpkin seems thinner, so I use 1/3 cup if using organic. I hope this helps! 🙂 Let me know if you have any other questions. I’m happy to help!

I will definitely give this a try but just wanted to point out an observation here. I don’t know what kind of Irish jig type music you’ve got going on in the background, but it certainly doesn’t fit with pumpkin cookies. I don’t know why people think they always have to have music on in the background

They turned out really good! They look amazing,,,love the cracked top & texture is wonderful...a bit of a crunchy "shell" but chewy inside! I did mine a bit smaller (30 gram) and it made 20 cookies. I believe i will experiment with a bit more spice in the dough next time, but I will definitely be making again! Thanks so much!

If you don't have a cookie scoop, what size measuring cup works best for big cookies (like Crumbl size)... 1/4 cup?
I have a large stainless scoop that measures about 3/8 cup. You could also just heap up your quarter cup measuring cup. That works for some of my large cookies. Hope this helps, and thanks for watching!

Great video, Kiddo! I've been working on perfecting my cookie "base" recipe for years. Ya know, like chocolate chip cookies before the chocolate chips. If "chewy" is what you are after, try using bread flour and stir enough to develop some gluten. This will add to the chewy!

That’s a good idea. I would eliminate the rolling in sugar and spice mixture if you add frosting. You could put the pumpkin pie spice that would’ve gone into the coating and just add that to the batter. Then top with frosting. Let me know if you try it! Thanks for watching!

Can this be made ahead? I have two cookie baking dates this year, and I want to try this recipe. I know some cookie dough can be stored in the fridge or freezer until ready, and then some cookies can be frozen.. but others you can’t, lol.
Hi! My tip for freezing cookie dough (such as this recipe, snickerdoodles, or anything that is rolled in cinnamon/spice & sugar)…make the cookie dough, freeze the individual dough balls WITHOUT rolling in spiced sugar. Transfer frozen balls to a freezer bag or freezer safe container. When ready to bake, thaw the dough balls overnight in refrigerator, or on the counter for around 30 minutes. While your oven preheats, stir together the spiced sugar. Roll dough balls in spiced sugar right before baking 🙂. My experience with freezing snickerdoodles that were already coated in cinnamon sugar: once baked, the frozen cinnamon sugar turned really dark and lost a bit of its flavor, that’s why I like to wait till ready to bake for rolling in spiced sugar. So I just made these but my dough is a bit runny I have as I used pumpkin pump of my own by baking it and then dehydrating the water on stove. But still it was not like your consistency. I just added a bit more flour. I hope it works for me
Did you use 1/3 cup pumpkin puree? Or 1/2 cup? Homemade puree is more the texture of organic canned like I used in the video. It’s a little thinner than some brands. All brands of flour can bake up differently too, so I would say use the smaller amount of pumpkin (1/3 cup) and try chilling the dough in the freezer for 20 minutes to help. A little extra sprinkle of flour shouldn’t hurt the texture too much. Let me know how yours turn out. I hope you love them! Thanks for the message 🙂

Hi! Could I switch honey for maple syrup? Also are they pretty crunchy on the top and chewy inside ? Would cooling the dough make it better or worse?
I’ve wanted to try making these with maple syrup. I would say you probably could, but I haven’t tried it yet. Depending on your oven, they may have a little crunch around the edges and be very chewy inside. I baked mine on the convection setting. All ovens bake differently, so bake time can vary. My butter is usually still a little warm each time I have made these. If you try a batch with cooled butter, or chilled dough, let me know how they turn out and I will do the same 👩🏻🍳🙂 thanks for watching!

I don’t have the pumpkin purée what should I do?
You could roast a sugar pumpkin and make your own if you have a pumpkin, or use mashed sweet potato instead. But If you could run to the store and get a can of pumpkin, I think you’ll be glad you did! Let me know if you make these. Happy Baking! 🤗
I’m making these and I was wondering, if I use a thicker pumpkin purée and increase to 1/2 instead of 1/4 should I use more flour as well? Or would the ratio stay the same. I’m asking because I have a problem where my dough turns out more sticky and not as firm as yours.
Try to match the texture of the dough in the video. I have never added extra flour, but all brands of flour are different, and sometimes even the humidity level in the room can make slight differences in the dough texture. If you’ve already added the pumpkin (1/2cup) and the dough seems too wet, you could try adding just a little extra flour. Try not to add too much flour. This can change the final texture of the cookie. Instead of adding flour, you could quick chill the dough in the freezer for 15 to 20 minutes. I hope this helps! Let me know how yours turn out. 🙂👩🏻🍳
@@DoubleStopBakeShop hii so I decided to make 2 batches, the first I added the 1/2 of pumpkin purée with a little extra flour and the other batch I stuck to the recipe. The results from the first one were amazing the cookies did turn out a bit more cakey and a little more fuller/thicker, the second one turned out almost identical to yours. Both ways tasted so good and my family loved them! (I let both batches sit in the fridge for a while too so I think that helped with my dough consistency) but thank you for the recipe and help will definitely make these again!

Love these cookies, but way too much sugar for me, though. Wonder how to amend with about a cup.
@@Innerdiamond my recipe calls for a little less than a cup of sugar in the dough, total. (1/2 c. plus 2 Tbsp. brown sugar, 1/4 c. granulated sugar) If you use less sugar, the cookies will have more of a cakey texture. I’ve experimented with it quite a bit. I’ve had a few viewers ask for low sugar/healthy alternatives for desserts. I may add a few of my low sugar recipes in the future. I’ll add them under a playlist to make them easy to find. I usually make fresh pumpkin purée, how much would I need for the recipe?
I would use 1/3 cup fresh pumpkin puree. 🙂 Start with that. Try to match the texture of the dough in the video the best you can…if the mixed dough looks dry, dryer than in the video, add a little dab of pumpkin. When I made homemade puree, it was a little thinner like the organic pumpkin I used in the video 👍 and it worked well, so I’m thinking 1/3 cup. I hope this helps! I just tried this recipe. I was so excited! But they look absolutely nothing like yours and mine taste horrible! I used the exact ingredients and measurements but they still came out awful and I’m not sure why! I’m so sad 😭😭

Thank you so much for responding!! I would greatly appreciate your help!! They turned out very thick. They didn’t flatten but they just got tall. They looked the the top of a cupcake. And they were almost rubbery and hard to chew! They were also very very smooth. Unlike yours, there was absolutely no cracks in them. I used Libby’s pumpkin purée and they barely tasted like pumpkin. I even increased to half a cup of purée like you said! They weren’t sweet at all. and before I added the flour my mixture was very very dark brown, almost black. It’s possible I browned the butter too much. But overall they looked like the top part of cupcakes, they were too thick and rubbery, they weren’t sweet, and they didn’t taste like pumpkin !! Please tell me what I did wrong!! Thank you so much for all your help ! I’m a big fan of your videos!!!!💕🎃🍪
Hello! I’ll list a few ideas I have to help. Since the cookies turned out thick with no crackles on top, sometimes that can be from too much flour. How do you measure flour? I like using a kitchen scale, 2 cups would be 8.5 ounces. If you don’t have a scale, be sure to fluff your flour before measuring into a measuring cup. Spoon the flour into the cup and level with a flat edge like a spatula or table knife. Try to avoid scooping the measuring cup into the flour. This can pack the flour into the cup and be too much flour for the recipe. When mixing in flour, only mix just until combined. Try not to over mix the dough. Over mixing can make a tough and rubbery cookie. Also, for the amount of sugar, make sure to add 1/2 cup plus 2 Tablespoons packed brown sugar, 1/4 cup granulated sugar, and 1 Tablespoon honey for the sweetness. This will be plenty of sweetness to add to the dough, so if the flour is measured correctly the sweetness will be just right. Another thing to double check: make sure not to confuse baking soda with baking powder. This recipe calls for both. Baking soda creates the crackles. Use 1 tsp. Baking soda, and only 1/2 tsp. Baking powder. I do love using parchment paper to line the baking sheets for baking cookies. I think they brown nicely using parchment, they won’t stick to the parchment, and makes for easy clean up. GALLETAS MASTICABLES DE CALABAZA
Azúcar de calabaza con especias (para enrollar):
2 cucharadas colmadas de azúcar granulada (25 gramos)
2 cucharaditas de especias para pastel de calabaza (5 gramos) *o haz las tuyas propias, ver notas.
Masa para galletas:
1/2 taza más 2 cucharadas de azúcar moreno (150 gramos)
1/4 taza de azúcar granulada (50 gramos)
1 cucharadita de vainilla (5 gramos)
1 cucharada de miel (24 gramos)
1 barra de mantequilla dorada sin sal (113 gramos)
1/3 a 1/2 taza de puré de calabaza (80 a 120 gramos) (ve el video y las notas para obtener detalles sobre las marcas y la textura. Yo normalmente uso 1/3 de taza)
2 tazas de harina para todo uso (240 gramos)
1/4 cucharadita de sal, colmada (si usa mantequilla salada, que quede al nivel de 1/4 cucharadita) (2 gramos)
1/2 cucharadita de levadura en polvo (2,4 gramos)
1 cucharadita de bicarbonato de sodio (6 gramos)
1/2 cucharadita de especias para pastel de calabaza (1 gramo) (o haz la tuya propia, ver notas)
Instrucciones:
Azúcar especiado de calabaza: mezcle las 2 cucharadas colmadas. azúcar y 2 cucharaditas. Condimente el pastel de calabaza y reserve.
Mantequilla Dorada: Derrita y dore la mantequilla a fuego medio alto hasta que esté ligeramente dorada. Retirar del fuego y dejar enfriar. La mantequilla seguirá dorándose un poco más a medida que se enfríe.
Masa para galletas: Precaliente el horno a 350 grados. En un tazón, combine el azúcar moreno, la vainilla, la miel, la mantequilla dorada (está bien si todavía está un poco tibia) y el puré de calabaza. (*Cada marca de calabaza enlatada tiene una consistencia diferente. Yo usé orgánica, es un poco más delgada, por lo que 1/3 de taza fue suficiente. La calabaza de Libby es un poco más espesa y requirió usar más cerca de 1/2 taza. Vea el video para ver la forma correcta. textura de la masa.)

Hello! Thanks for the message. I always measure the flour using a kitchen scale. 2 cups = 8.5 ounces. If you don’t have a scale, fluff the flour with a fork and lightly spoon into measuring cup, leveling off with a straight edge knife or spatula. This prevents packing too much flour into the cups. Also, all brands of pumpkin are different textures. Did you use 1/3 cup or 1/2 cup of pumpkin purée? Libby’s seems thicker, so I sometimes use closer to 1/2 cup. Organic pumpkin seems thinner, so I use 1/3 cup if using organic. I hope this helps! 🙂 Let me know if you have any other questions. I’m happy to help!

I will definitely give this a try but just wanted to point out an observation here. I don’t know what kind of Irish jig type music you’ve got going on in the background, but it certainly doesn’t fit with pumpkin cookies. I don’t know why people think they always have to have music on in the background
