Regional Italian Cuisine | Part 2: South of Italy

  • Would you like to learn all about traditional Italian dishes like Sicilian Canoli, Pasta Amatriciana or Carbonara? Or how about where buffalo mozzarella comes from? Well, in this video I’ll teach you all about these and many more Southern Italian dishes and ingredients so that next time you order them or make them you know exactly how they should be prepared to get the best representation of each of them.
    This is part 2 of the video about Regional Italian Cuisine and on this one I focus on the dishes that you already know that come from the southern regions. Unfortunately it’s impossible to mention all traditional dishes from all the regions in the south but I do my best to give you tons of information about many of them. So if you like to learn about cuisines or you love Italian food, then you are really going to enjoy it.
    Let me know if you have any ideas or requests about dishes, cooking or baking techniques you would like to learn so I can make a video about it.

    PLEASE do more of these! With different ingredients, more unusual dishes, etc. Love knowing how the history, geography, politics impact the ingredients and dishes that come out of each region. This was great but I just wanted MORE!

    There are many types of Sicilian pesto which I will be making videos on eventually. There was a historical trading relationship between Genoa and Sicily which introduced pesto and Sicilians came up with their own varieties.

    You are really the "real deal" Sabrina. Watched part 1 the other day. I have never heard such totally competent info on cucina all'italiana ! My wife and I, are Italo American and consider ourselves italophiles. Our cooking is all original and of italian origin ( not italo american).

    Great video (part 1 as well), it's basically the same information I try to tell non-Italians who have no idea about the regionality of Italian cuisine.
    One thing though: the fact that fresh pasta in the south often (but not always) doesn't contain egg isn't just because of historical poverty. It's mostly to do with the types of flour they had access to. In the north, they had no choice but to use a lot of egg when making pasta fresca, because durum wheat and/or semolina just doesn't grow at all in that climate. So the only way to make pasta with enough protein to hold itself together was by using egg. But this doesn't mean in the south there is no tradition of making fresh pasta with egg - it's done all the time, especially in Campania. The only difference is that since they had such easy access to durum wheat/semolina, they didn't have to _only_ make fresh egg pasta, they had the choice.

    Calabria is very famous in Brazil, maybe because of the immigration.
    We have a spicy sausage called calabresa, now it makes sense to me. Great video 😁

    The teardrop shape arancini are from Catania and the east of Sicily. The round ones are from Palermo and the west.

    As a matter of fact amatriciana comes from Abruzzo. Amatrice was part of that region until 1927. The older version is called pasta alla Gricia, which is amatriciana without tomato. Only guanciale and pecorino, nothing else.

    I adore these two videos Sabrina, brava! I am impressed by your knowledge and the level of detail you go into. It is important to know where things come from so people's identities and traditions are respected, as is differentiating a country's regional cuisines. I am a food lover - cook, gourmand and researcher, and am working on finalizing a culinary map of Greece. This video has now inspired me, maybe I will be a able to do a similar thing (about the regional cuisines of Greece and the special ingredients/dishes and their origin) one day on TH-cam hehe. A big saluto from Australia and please keep making these fantastic videos! :)

      Wow Greek cuisine...yum! It's also so varied, fresh and delicious! I was lucky enough once to spend three weeks in Greece and I realized there's so much to it that people outside of Greece don't know about.

      @@x1achilles99 technically it’s a working farm….however the property has beautiful hotel accommodations, farm to table meals, stunning properties, unique out of hustle and bustle areas. Very special experiences. Check them out. I’ve stay in them all over Italy.

    I'm a UK/US dual national of 100% Italian ancestry. Many people of Italian extraction have ancestors from different regions of Italy. So, the Italian cuisine prepared by their families is already a mixture of different regions. This does not make it any inferior or less Italian than what you get in Italy.

      My family is a big cocktail as well (like I like to refer myself) and I love that about it. I love mixed cuisines and cultures, most of the best things in life come from mixes. By no means did I try to say that mixes would be inferior.
      With these videos I tried to give people a very good idea about how there is not a single "Italian Cuisine" but many depending on where you go. I tried to show people how geography, history and culture have shaped the dishes of every region. It is impossible to show every dish of every region because the cuisines are so vast, but that's the beauty of it. Even dishes within each region will change because every family gives its traditional touch, and this is beautiful as well.
      I'm sure you ate really deliciously growing up :)

      It's not offensive, that's how it started and that's the beauty of many dishes all over the world. Many dishes have been born out of necessity and they become staples of different cuisines that we all love. Obviously now a day when people and restaurants make arancini, they make the rice specifically for it and it is super delicious as well. I love arancini, especially on the boat that takes you from Catanzaro to Messina :)

      @@chefsabrinamancin4229 The ferryboat to Messina leaves from Villa San Giovanni (Reggio Calabria) not from Catanzaro. Regarding your assumption that arancini were made with leftover rice can I have a source? On the wiki page there isn any trace of what you said. Also with do have pesto in the south 'pesto alla trapanese' made with almonds,tomato,garlic,pecorino and oil.
