Great video. That is some of our lost history. Most people just skin the hogs now. Thank the Lord for my great applichian history. We still scrape the hogs that we kill.

I am curious as to why you all didn't kill and hang the night before so the meat stiffens up for working them down. We just did 2 yesterday.

Thanks for the comment. We just had some scheduling accommodations to make for the class instructor and that's why we didn't hang it overnight.
