I have seen this type of sandwich cooked in Korean street food videos only they get more elaborate.

Can I ask how you keep smoke down vs keeping it hot enough? Noticing the larger pieces of wood in the base, is this the trick? Cheers, Karl

I added bacon instead of cheese, cooked the bacon first which gave me some grease, added a bit of butter and then Andy’s way. It was delicious. Since it was my first try I used my propane camp stove instead of a twig stove.

Thanks andy. I go up and down long reach on the bunker barge I work on 3 or 4 times a week, but never walked along the fore shore. Keep an eye out for the seals that sunbathe on low water. Great channel.

Good choice to go to an industrial area where the businesses are likely closed and to do so early morning. I believe I'll make that tomorrow on sourdough with some extra sharp cheddar. Thanks for the idea. That may have been the lightest pack I've ever seen you carry! Seems you normally carry loads of stuff but this time you kept it simple.
