No Trimmed Smoked Brisket on the Old Country Pits.

So, I stole this idea from a TH-cam video. Sometimes I am not in the mood to trim my brisket and I wanted to see how it would work out. Now the brisket that I did pick had what seemed to be a low fat cap to start with.
The brisket turned out really well and was juicy, but the flat was under cooked. I don't think that had anything to do with not trimming it, just the way I cooked it.
