  • This gluten free ube mochi waffle recipe is perfect for breakfast or brunch. Follow along with this easy recipe as I show you how to make this yummy twist on a classic waffle.

    Ube Mochi Waffles Recipe
    Ingredients:
    For the waffles
    3/4 cups milk
    1 egg
    1/2 teaspoon ube extract amzn.to/3fjvlZc
    1/4 teaspoon vanilla extract
    1 1/4 cup mochiko flour
    1/4 cup sugar
    1 1/2 teaspoon baking powder
    1/4 teaspoon salt
    For the ube glaze
    1 cup powdered sugar
    1 tablespoon milk
    1/2 teaspoon ube extract
    1/4 teaspoon vanilla extract
    Directions:
    Preheat waffle iron.
    In a medium mixing bowl add milk, egg, ube, and vanilla extract. Whisk until well combined. Set aside.
    In another medium mixing bowl add mochiko flour, sugar, baking powder, and salt. Whisk until well combined.
    Add wet ingredients to dry. Whisk until just combined.
    Spray nonstick cooking spray on the waffle iron. Add 1/4 to 1/2 a cup of the batter to the waffle iron. Cook for 3-5 minutes or until golden brown.
    Add powdered sugar, milk, ube extract, and vanilla extract to a bowl. Whisk until well combined. This can be used to drizzle over the ube mochi waffles.
    Add toppings of your choice and ENJOY!

    I'm from Hawaii but I've been on the mainland for the past 10 years or so, This video reminded me of boys/girls day and getting snacks at school :), I'm defintially going to try this recipe I love anything ube

    I tried this recipe today. I used soymilk and added ground cinnamon. It was delicious! My son wanted to drink the glaze! 😆

      I've never tried that brand, but any brand will work.

    These look delicious! What can ube extract be replaced with? I looked at the ingredients list and there is no actual ube in it, just a bunch of chemicals, artificial colors and flavors. Can we use ube powder or ube jam? If so, in what proportions? Thank you!

      Ube powder would have to be rehydrated prior to adding, but both that and the jam should work. I’d say try about 1/4 cup. If using the jam you may be able to decrease the sugar.

      Yevgeniya mirkina did you try adding the ube powder instead of the ube extract? If so how did it turn out? I’ll be making some ube mochi waffle tomorrow & want to know if it tastes better using the powder instead of the extract. Thank you

    I tried this recipe using glutinous rice flour and came out very liquidy. How can i troubleshoot it? Please help.

      Mochiko flour is a type of glutinous rice flour, which is what this calls for. If too liquidy you can add a bit more mochiko flour to thicken up. Measuring flour is best done by scooping the flour with a spoon into the measuring cup and level off with a knife or flat edge.

      This also happened for me when I used other brand glutinous flour. But once I switched to Mochiko flour it came out perfect.

      Sure. You may want to thin it down ever so slightly for pancakes.

      If you use all purpose flour it would be an ube flavored waffle. It wouldn’t have the chewy mochi consistency. It’ll work, just different final product.

      You can but it changes to consistency a bit.

      Where do you live? On Maui Island Grocery Depot. O'ahu someone mentioned Pacific Market in Waipahu. I haven't heard anyone else mention for the other islands. If all else fails you can always get it on Amazon.
