And rightly so. I think Sumio Kawamura is definitely an underrated blacksmith. Today I was actually lucky enough to trade a knife I was trying to sell for a while, with a Yoshimune Kawamura 210mm Gyuto like the one in this video. Except, mine does not have that 'dolphin' tip, but a perfect belly and fit and finish throughout the whole knife. I'm very glad to have added this to my collection.
100% with you. I want one of those immediately because of how striking that tsuchime finish is. But I don't want one because I like a much flatter profile. Maybe, like you said, a nakiri is the solution. Get the look and the flat blade.

Never heard of the man before. I looooove that ku/tsuchime pattern. Up my alley. Love the S1 as well. You gotta take care of it like you love it ,😅. The Santoku shape reminds me of TF's masterpieces

I actually own a Gyuto and Nakiri. I love the look of the knives. Very distinct Tsuchime/Kurouchi finish. His steel is great. Easy to sharpen. Gets really sharp. His profiles are a bit inconsistent, and a lot of his knives are bent or wonky. So personally, I consider them 'project' knives. Like my Teruyasu Fujiwara Denka. I thinned it, polished it, re-handled it. It's a fantastic blade now.. The same thing with my Kawamura's. I am going to customize them. Out of the box, I don't think they are knives for everyone. That being said. We did polish the spines of this batch we have. I re-handled them properly. They're pretty much ready to go. What we have in stock most probably is his last batch of knives. He's retiring.

Are the profiles for the latest batch ok or do you think there are some that may need retouching? That is my only concern. In the video, the profile on the gyuto looked like a dolphin so I am wondering if that is how it's suppose to be or maybe it was just a wonky version of it.
@@garchtoto Most of the profiles are a bit like the one in the video. A little bit wonky. Usable, still. But wonky. Some of them are actually almost perfect. We did what we could to improve the fit and finish, with minimal effort. As a collector they sure are super interesting knives. And for usage, you could re-profile/enhance the profile yourself. If you're interest becomes concrete, you should sent an email to Meesterslijpers customer service and ask them to select the blade with the least wonky profile. I'm on vacation right now, but will be back this Friday. So I could personally hand-select the best one for you next week.

I have never heard of this blacksmith but I really like the visual of the tsuchime kurouchi

There's a Nakiri available at chefknivespro in Australia. I was tempted to buy it, but I am afraid of the custom fees and shipping costs.
