Poi FYI.... Underground tuber, cousin to potato, sweet potato, yam. Majority of poi grown in taro patches(lo'i), similar to rice paddies. Traditionally cooked in underground oven(imu) then mixed w/water & mashed using stone pounders & wooden boards, same as mortar & pestle. Hypo-allergenic, poi can be mixed w/other foods & fed to infant/toddlers w/digestive problems
