Oh by the way. If you like that cardamom, or how u say that spice. Try it in coffee. If you are using some coffeemaker with those papers where the coffee goes, put some cardamom there. We use cardamum specially at christmas so it brings back the christmas time
Yeah, the Finnish Finnish kids won’t usually bother to do anything with their parents but just do somithing with their phones. They just play games (boys) or follow social media (girls)…

Her "recipes" was passed down from my great grandmother in Karjala by just watching and participating in every day work. Everything was made by feel and experience. I miss my grandmothers food, specially karjalanpiirakat. Mine doesn't even come close to hers.

Yooper native here, and I grew up calling it nisu. I used to help my grandmother make it at Christmas time, my mother-in-law makes it occasionally, and my daughter recently learned how to make it. The smell of it baking instantly transports me back to my childhood and the holidays. Yum.
What I remember about pulla from my "mummi" was, that the secret was to get cardemum kernels, not the pre-grinded stuff. My responsibility was to grind them in the pestel mortel (also eat the dough). Made huge difference...since you mentioned twice that you like cardemum. Hyvää kevään jatkoa!
I haven't found whole cardamom pods in a long time but yes, I liked them better as well. When I was a kid I would always sneak into the kitchen when the dough was rising and take a pinch. :)
@@RoyRissanen I usually get the peeled cardamom, it's called decorticated, and I have a special coffee grinder I use to grind it- lot more flavor. You should be able to find whole (with the pod) in bulk food stores or Indian markets, they green (same as the white, just not bleached) , don't buy black cardamom pods though, those are for savory cooking. I get my cardamom from eBay, making sure it's organic and seller is not from abroad. I find pre-ground loses flavor fast and some brands have part of the pod ground with seeds to stretch the stuff which also mean less flavor. I also keep mine in airtight container in the fridge. I prefer Guatemalan cardamom opposed to Indian myself, I believe Finland imports lots of theirs from Guatemala.
My mother taught me that the best pullat are made when the dough is so moist that it is difficult to handle. I have to say, you are more finnish than most of the finns back here in Finland 😄
Looks delicious! Im not sure if it's just a local habbit or not, but we call those type of pullas "korvapuusti". The ones you roll like that. Edit: okay everyone seems to call them by that name.
If you heat the milk, you can add the dry yeast to a bit of flour and then add the rest of the flour....and melt the butter....anyhow there are as many ways to make pulla as there are bakers 😊
U need to make that cinnamon roll filling whit 100g room temperature butter 2dl brown sugar and 3 table spoons cinnamon. Or more if want. But thats common ish ration and it really makes difrence to a taste

Hi, I need to share my own pulla story. I was never taught to make it, I watched my mothers mother make it but never asked her recipe same with my mothers aunt. They both made pulla very differently and in the end (my mother hate baking) I ended up developing my own recipe and way to make pulla. I combined some my grans and great aunts methods but mostly it is my own recipe. I have had my 100yo grandpas approve so I'm quite confident about my pulla making. :D Also as a side note I don't ever use eggs. Those doesn't add anything to the pattern in my opinion.
Love to watch this video, you really have a skills to bake ☺ If you like, you can add a pinch of salt to the egg and mix, salt breaks the eggs texture and its easier to spread to the pulla ☺

I do not consider korvapuusti to translate as eardrumm. You are right, korva is an ear. Puusti, dunno. Probably nothing. Korvapuusti has another meaning too. Antaa korvapuusi means slapping (with an open palm) on ones ear or face.
pullapitko and honey makes best taste, well comparing to korvapuusti and i am not sure anymore, but anyway pulla works with honey (used same way as putter at end of video)
Okay, I'll cave. But this is just a ballpark of what I do... Mix it up and have fun with it. for bunn's... 2 cups Milk 50 g yeast 1 egg 2 tsp salt 1 cup (or less) sugar 1 tbs Cardamom 5-6 cups (or less) flower 3/4 cups Butter Bake 10-15 min at 430f For Loaf ... I'll add more flower and a couple more eggs. You can also add raisins to the mix, and sprinkle the top with sliced almonds ( I like to also rost the almonds first.)

I think pulla is called nisu more often at nothern or eastern Finland. For me pulla is pulla, because I'm originally from the west coast. :)
