- It is almost the end of summer and what better to celebrate than with Blåbärsbullar: Swedish Blueberry Buns? These are very similar to cardamom buns. Same dough, almost the same filling but instead of cardamom sprinkled in, its blueberries!

I make make biscuits most weeks (because I _always_ have sourdough discard that needs using). I shoot for 80-90g biscuits...although sometimes I end up with more dough and make 100-110g biscuits (mostly because I'm lazy and don't want to dirty another sheet pan). The 100g+ ones can be a bit much to eat all at once. 80g ones are a more manageable size.
There's something "aggressively American" about the drizzle?! Oh, I love it! Ha ha ha! That's great - and accurate. And thank you for explaining the egg wash thinking.

Hi Cecilia, hello from australia! Love your recipes - they're the only swedish buns I trust! I'm finding it difficult to use my KitchenAid for long periods of time as it seems to overheat after 5 or so minutes. Was wondering if you had a special kind of mixer or whether there was an alternative way of developing that gluten in the dough? Thank you xx

You are very welcome @@ceciliatolone! I did this recipe again today for a wedding this weekend. It's was quite popular the last wedding we did it for. I of course cheat and use croissant dough. (we get it in from a company here in Seattle by the full sheet)
Love your videos, is it ground cardamom that you put, is it the whole cardamom seeds that is grounded
Just the cardamom seeds, without the husks, ground coarsely. On her website, she recommends black cardamom, but I've made it with the seeds of green cardamom & the buns tasted just as good!

I have a blueberry farm and I can't wait to try these. However, I am looking at this blue mess wondering why you don't just cut wider strips, dot them with blueberries, fold the strips over, gently press down, twist and shape them and put them on the pan for the rise. The smooshing of that rolling with the blueberries in between and the cutting of the strips with the blueberries in between makes things quite messy. It's not like you are laminating butter between those sheets of dough. If you don't have to smoosh the berries or cut them, you'd cut out a few steps plus avoid such a huge mess.
I tried it both ways, and dotting them after slicing the dough was a LOT more finicky. By the time I stuffed the last strip with blueberries, the butter filling started melting and was oozing out of the dough bit by bit. Having a very cold kitchen counter could prevent that, although you will need a slightly warmer spot to proof the buns. Using fresh berries definitely makes less mess than frozen.
Why would I want them at 60g if I can have them 100g+ 🤤

Cecilia hi. For those of us in the United States, how much vanilla extract I can use instead of the vanilla sugar since that's not something you can easily get here? I used your cinnamon roll instructions. and made it for work, and they thought it came from professional bakery. Thanks.
You can sub vanilla extract 1:1 for the vanilla sugar! So glad your coworkers liked the buns!!

Can you use dried yeast instead of fresh yeast
Yes! Use one-third of the listed amount, so that's 23g of dried yeast if you're making the same big batch. I tried this recipe with SAF Gold instant yeast (used for sweet dough) and it turned out perfect.
