My Mom who has passed on now, use to make Sopapillas many times throughout the year and they were so coveted that they didn't last long once cooked. I agree with the recipe, but she cut them out as triangles and use her finger to make a circle hole in the middle of them. And instead of using oil she used Crisco Shortening to cook them, less of an oily taste. There are so many ways to enjoy them, what was especially popular was when she would melt some butter and use a small brush to apply a light covering on them then sprinkle some Cinnamon Sugar on them and you were in heaven. I grew up in Arizona and I love sopapillas but living here in Illinois going to a Mexican restaurant I ordered sopapillas and it was a flour tortilla with cinnamon and sugar on it. I am so going to be making sopapillas on my next day off.

My grandma taught me how to make these when I was little. She also told us to bite off a corner and then fill them with either the cinnamon-sugar or honey. No messy fingers! Although now, I have to try the powdered sugar! The only difference between your recipe and the one she taught me, is resting the dough. I've never rested it; just knead it, roll it out, cut, and then fry. So now I have to try both side by side and see which is better. Thank you for sharing!

Have you considered using baker's refined sugar for the cin-sugar dust? It's the same sugar crystal but extremely finely ground. We use it for things like sugar cookies and to add a little sparkle to plain icings on cupcakes. My sister swears by it for use in coffee.

I love these I never had any idea how to make these. I still like churros more but other than having to need the dough for so long that’s a lot easier than I thought it would be. Lol. I wonder if that chocolate dip that you made for the churros would be good on these as well. 🤤

Yes, sopapillas can be eaten just like tortillas. If it’s for dessert we normally eat them with honey. For meals, you use them to sop up your beans, rice, or whatever you’re eating. I’ve never had them with powdered sugar but I grew up in California and my grandparents are from northern NM.

These are my favorite at the local 100 year old Tex Mex restaurant. The owner showed me how he likes to eat them. He cuts open the hot sopapilla and inserts a pat of soft butter and rolls the sopapilla around coat the inside. Then coats the outside with honey. to

I passed by new Mexico on my way to Vegas. We stopped at a restaurant called Sadie's I believe. Man they had some great food and soppapillas
