I'm an island girl and we lived in Albuquerque NM. I now live in las Vegas Nevada. I don't see sopaillas made here. It was a favorite fried bread of mine. To remember NM it's the sopaillas lol! And to see it in TH-cam was so exciting, thank you so much!
There was a place, Carlito's Burritos, a New Mexico style kitchen and they made sopapillas but sadly after about 10-15 years they closed. Actually, I think they closed in 2024.
Wonderful! I grew up in Los Alamos helping my Mama making Sopapillas. I found that if I make the dough just right I don't have to do anything to make them puffy. To me they are one of the most versatile breads because the go with just about anything.

yes, sopapillas are the best, we just use the same masa that we use for tortillas, never sugar and always manteca. PS, Casa Bonita also makes excellent sopapillas here in CO. My mom grew up in NM.
I learned to make sopapillas from a family friend from the Taos Pueblo. I was about 10 in the early 70’s. She taught me the secret was to make an indention in the middle with your thumb before putting it in the hot oil.

I think you are talking about Arancini or Italian Rice Balls fried. Rice ball stuffed and breaded with Swiss cheese and ham. Then fried. So good. Hope this makes you happy. Easy to make.
I strongly recommend trying dry yest in place of baking powder and allowing the dough to rise for atleast 30 minutes inside a freezer bag for better results and making the testales( dough pieces ) bigger and rolling them thick 1/4 of an inch before cutting in courters or half moon shapes, oil temperature plays a very important role i,t must be smoking hot 🔥 to prevent heavy or overcooked sopas ( the hotter the oil the best results i get. This is how i get the instant golden color as well as softter fluffier slightly crisp on the outside soft in the inside . Enjoy the results ♥
I keep the temp at 375° and when I add the dough to the oil, hold a metal spoon on top of the dough in the oil for a few seconds and let me tell you, they puff so much. I use Baking powder also. Knead the dough until it's not sticky, usually 5 minutes is the key depending on the altitude and climate. From NM and Native American friends so know how it's done.
god i love those things, put a drizzle of honey, some powdered sugar, a scoop of vanilla ice cream and maybe some hot fudge & homemade strawberry sauce on it, you're good to go! 🥰💕
You can definitely fry several at a time. The larger the pan/pot, the more you can put in there. Just don't over crowd it. I usually fry in a large dutch oven and I can fry sopapillas 3 at a time in there. Hope that helps!

My parents were both born in New Mexico and sopapillas were one of our favorite desserts and you correct. Best filled with honey or even butter.

Hello do when I grew up in nm my mom and auntie used yeast they tasted so good. Do you use baking powder instead of yeast? 😊
I do use baking powder. I know others use yeast but baking soda is faster.

Why sugar, you don't need it unless you want a sweet dough. I don't use sugar and they taste great!
