Farmers Market Vegetable Soup

  • This soup is the result of walking through a farmers market in Vancouver and not being able to resist some of the fresh vegetables. I picked up a rotisserie chicken on the way home and made the stock from scratch. You could easily make this with a vegetable stock and forgo the chicken in the soup if you are vegan or vegetarian. This is a soup that will never be the same twice, as it depends on what is at the market. The key is to keep the vegetables in balance - and save extras for another use. I used the remaining vegetables in a pasta dish, video of which I'll post soon.
    Ingredients (these measures are approximate - yours will vary)
    - 1 1/2 cups of new potatoes, diced into 1 inch pieces
    - 1 cup of carrots in 1/2 inch pieces
    - 1/2 cup celery sliced very thin
    - 2 shallots (or onions) diced
    - 1 Tbsp minced garlic, about 3 cloves
    - 1 small can fire roasted diced tomatoes
    - olive oil
    - 1 rotisserie chicken from the grocery store
    - salt, black and white pepper to taste
    - Chlil crisp (optional)
    - fresh or dried parsley for garnish
