Spice Bag - An Irish take-away classic
If you are craving this dish and not in Ireland, this approach is a great fill in - all without the deep fryer mess. Although I make the chicken from scratch you can use frozen chicken nuggets or fingers. You can also make the chips from scratch but the technique I use here with frozen works better in the airfryer.

Ingredients for Spice Mix (by weight):
1 part MSG
1 part Chinese 5 Spice
.5 part salt
.3 part cayenne pepper
.2 part cumin
.2 part cinnamon
.2 part black pepper
If you don't have a scale you could use tsp measures (1 tsp, .5 tsp and 1/4 tsp) which won't be exactly the same but still delicious - It will make more than you need - season to taste.
Curry sauce to make 1 cup (enough for 4 servings):
1 tablespoon vegetable oil
1 tablespoons curry powder (adjust based on desired spiciness)
1.5 teaspoons flour (to thicken)
1 cup chicken stock
1.5 teaspoons soy sauce
1.5 teaspoons sugar
.5 teaspoon garlic powder
.5 teaspoon ginger powder
corn starch slurry if required for additional thickening

Normally I make Ina Garten's chocolate cake, but a colleague recommended this one from Sally's Baking Addiction and it is delicious! Fairly simple ingredients - a stand mixer or hand mixer will work. I don’t agree with olive oil in a hot pan. I think avocado oil goes better in a hot pan. Olive oil is more of a “dressing” or low heat oil.
I actually thought of that myself when I made it - didn’t negatively affect the final dish but you don’t get the delicate flavours you are paying for as the heat eliminates them.

Wow, this really took me back to childhood. I grew up in northern New England, and I’d pick wild blueberries during the summers, and my mother would make blueberry grunt with them. She’d make other desserts as well, but this was a favorite, probably because it’s so easy to make. Thanks, for the good memories. I won’t be able to find wild blueberries where I live now, but I can go to the market for cultivated berries. It won’t be the same, as you say, but it’ll still be good.
I hear you - I can’t get them fresh on the west coast - I am going to try it with cultivated as well.

I used a well seasoned carbon steel pan for this one, which makes a nice crispy egg. I prefer over medium, so flipped it - but it would have been a great sunny side up.
