    Do you use carbon steel knives? I know they are hard to maintain (rust) and I’ve never seen you wipe the knives after use so just curious.

    Cool video very entertaining but after removing the rib cage what’s the reason for cutting the fillet in half to remove part of the central section are there bones ?? Thanks

      There is a small fish thorn in the place where the middle half is cut. To cut it in half again, only the fish thorn was removed.

    help me to understand.. if you are going to fillet the fish, why go through the hassle of de-scaling it, etc. first? why can't you just fillet the fish straight away and leave the carcass behind intact with the stomach and all?

      @@sotongh1 I didn't understand your writing correctly, but since we make sashimi by trimming fish... a basic grooming process is necessary. Since it is eaten raw, there should be no foreign objects in the fish flesh. So, open the stomach, take out the intestines, remove the scales, and peel the fish.

      일산이 국산보다 정말 좋은 어종은 대표적으로
      돌돔,참돔,중방어 대방어 입니다.
      특히 방어는 국산자연산 의경우 복불복으로 비린게 심한애들과 사상충이많은애들이있는데
      일산은 양식이다보니 냄새X 충X입니다.

De dor...Credo. Que maneira de morrer...Talvez seja a técnica para manterá qualidade da carne...mas ó humanidade cruel.

    회를 뜨면 어짜피 껍질은 버리게 되는데 왜 저 모비늘이라고 하는건 미리 제거를 하는거고 제가 본 어떤 영상에선 방어의 껍질 전부를 벗긴 후에 회를 뜨던데 그 이유가 뭐죠?

      모비늘은 껍질제거할때 걸려서 미리 제거를 하는거고 보통 횟감이 껍질까지 같이 먹는 어종이 있고 껍질이 질겨서 같이 먹지 못하는 어종이 있습니다.

    신케지메를 머리로 안하고 꼬리쪽으로 하냐고 묻는 사람이 많다 하셨는데 전 반대로 궁금했던게 님 말씀처럼 어차피 회 뜰껀데 영상처럼 이케시메 후에 꼬리쪽으로 신케지메 하는게 훨신 간편하고 효율적인 방법이라 생각하는데 굳이 왜 잘 보이지도 않게 머리쪽에 구멍내서 거기에 강선을 찌를까 싶었는데 님께서 그부분을 명확히 짚어줘서 명쾌히 해결이 됬네요ㅎ 진짜 원형 그대로 보관할꺼 아니면 글케 할필요없고 몇일간 숙성시켜도 꼬리에 살짝 구멍내면 되는데 머리로 신케지메 해야된다는 분들은 좀 겉멋인거 같음 좀 어려운 방법으로 해야 괜히 대단해 보인다고 생각하니까ㅋ

    日本人の職人の様に下ろして皮を引くのが上手ですね、縞鯵は、銀色を残して皮を引くのが難しいです!
