      @@Pinot3283 낚시하는분들은 선상타면 많이 잡으시니 무조건 가져와서 회를 못 떠먹더라도 연습삼아 해보시면 일반인보다 훨씬 빨리 배우실거예요.

      정성 부족 같으요. 속도야 늦지만 실패 하진 않찮아요. 하긴 제 친구들 중 제가 제일 잘 뜨긴 합니다.
      한 넘은 낚시 십년에 여전히 못 뜬다고 나자빠져요. 매운탕도 못 끓인데요. 혹시 영어 이름이 다글러쓰 아니신지요?

    궁금해서 그러는데요 어차피 겁질은 벗겨지는데 비늘을 먼저 제거하는건 혹시 살점에 뭍을까봐 그러는거에요?

      오로시하는 사람에 따라
      스타일 문제가 있구요.
      저는 비늘 치고 하는게 맘편하고... 안치고 하면 도마에 비늘이 눈에 거슬립니다^^;;;
      그냥 습관 처럼 하는거예요.
      고급어종이나 돔 종류는 매운탕에 넣거나 데쳐먹을수도 있구요

      사용하려면 할수 있습니다. 광어는 질긴 힘줄이라 의미없고..
      참돔은 잔가시가 있는데
      그거 다져서 된장빵에 싸드시면 됩니다^^

      손질과정에 비늘이 알게모르게 횟감에 남기도 하구요. 저같은경우에는 처음 손질 할때 이외에는 도마에 물기가 없이 오로시 하기 때문에 비늘이 굉장히 많이 붙고.. 그게 눈에 보여서 거슬립니다^^;; 그리고 비늘제거한 껍질은 매운탕에 넣어서 사용도 가능하고 살짝 데쳐서 별도로 드시기도 합니다^^

    보통좋은칼을 사게되면 칼 연마부터배우고..
    찌바리낚시 하며 돔잡으면 사시미부터 초밥에 매운탕을 배우게되는데...
    하긴.. 귀한고기 전문가의 칼맛이 더해지면 기막힌 조합으로 맛과 기분이 배가되긴하져..
    부러운 1인입니다.

      저는 반대로 다른건 다 배운거 같은데 낚시를 아직... 예전에 한번가보고 이제 시간날때마다 취미삼아 다녀야지 하고 장비도 구매하고 했는데.... 정작 시간이 안나서 못가고 있네요ㅜㅜ

      안녕하세요! 간단하게 말씀 드리면 비늘이 있던 없던 껍질벗기는것은 아무런 문제가 없는게 맞지만
      위생적인부분,판매한 회에서의 이물질(비늘) 유무,그리고 비늘을 안친 껍질은 버려야하지만 비늘은 제거한 껍질은 데침(예로.돌돔)이나 매운탕에 넣어서 사용이 가능합니다. 여기에 한가지 덧붙이면 회뜰때(오로시) 편의성도 한몫한다고 보면 됩니다.

      버리기도 하지만 사용할때도 있습니다ㅡ 매운탕에 넣거나.. 데쳐먹거나...
      제가 비늘 치는 이유는
      손질방식중에 비늘치고 하는게 더 편하고 좋으니깐요.
      그냥 습관이예요. 습관.
      비늘 안치는 광어.방어도 있지만.. 비늘 안치고 오로시하면
      도마에 붙어있는 비늘하나가 눈에 거슬릴 정도로 신경쓰여요...

    카메라 위치를 좀더 위로 가야할든 해요 너무 가깝고 낮게있어서 오로시할때 약간 사각지역이 많고 화면이 좀답답해 보여요

      감성돔은 20cm이하 어획금지이고
      금어기는 4월~6월 동안에 한다고 애기는 들었는데 아직 법으로 시행은 안된거 같습니다. 근데 대부분 낚시하는분들도 산란철되면 자제하는 분위기더라구요^^

      감성돔 가능 합니다. 다른 비슷한 어종도 다 가능은 합니다. 단.참돔보다 껍질이 두껍고 질겨서 좀더 신경써서 해야합니다^^

    회뜨기 어떻게 배우신건가요

      거의 독학했습니다...
      횟집에서 살짝 배우긴했는데 그땐 대가리치고 비늘치고... 직접오로시 해보진 않고...옆에서 구경? 하는정도 였고
      그뒤로 여기저기 일다니면서 모르는거 책도 보고 영상도 찾아보고(지금은 유튭이 있어서 좋아졌내요ㅎㅎ)
      조리사카페 활동하며 배우기도 하고 뭐..그렇습니다..
      남들처럼 사수밑에서 제대로 배워보지는 못했습니다.

    전처리를 잘해야 하지 않을까요? 회뜨는데 비늘뛰고 피나오고, 상관없다면 다행이구요. 비전문가의견이니 그러러니 하시구요

      손은 빠른가 모르것는데 핏물나오고 비닐티고 식성 안나오는데 뭐하러 보여주려고 핡까

    제가 감히 한말씀 올리자면 돔!종류의 가시가 있는 어류손질은 비늘치기전에 지느러미쪽 가시를 칼로 제거한후에 손질하는게 안전할꺼같네요,가시가 있는상황에서 손질하다가 가시에 찔리기라도 하면 어후~상상하기도 싫은 고통이...
