This show gave Ms Chase a platform to really reach different audience types. Phenomenal!
Absolutely love seeing Julia and Leah together. They seem to really enjoy talking with each other, sharing New Orleans culture; and julia is actually learning something from Ms. Leah. I need to step my game on making homemade biscuits. Ms Leah makes it look so easy.

I haven't watched this clip yet, but I recall Leah emphatically stating you must use "Lard" for the best deep frying. OK, now I'll watch it. Yup, I watched it. I remember being a bit horrified at that recommendation when I was watching it when it originally aired, but, I now know better! It's the vegetable oil that is the unhealthy fat!!! Do not eat vegetable oil. Saturated animal fats are a healthy choice. Always deep fry with lard (not the hydrogenated Armor crap though!) Save bacon fat and use that to deep fry and you won't have to worry about "moderation" either as long as you keep carbs and sugar out of the meal.
If there's one point of agreement between Leah and Julia is lard! I remember Julia Child admonishing home cooks to demand fresh pork lard from their butcher!
So sad to watch that Ma'am Julia passed away many years already. she's already old in this episode, and this was year 1993 .. love to watch these two grandmas cooking. ♥
When I first visited New Orleans I thought the same as Ms. Leah said, it’s not exactly southern. The food there is beyond amazing, but it’s not like what you’d expect coming from country Georgia or Mississippi.

I'm Southern and I don't know how to fry chicken (properly) my chicken is what we call "Pretty Chicken". Chicken that's beautifully browned yet when you bite into it it's...RAW. This video will help me!
+Demenyaca M I had a tough time at first too. The key to this is not to have the heat too high, but not too low. You want it on a medium or med-high heat depending on your stove ro pan. Also, if you have a cast iron frying pan it cooks it perfectly. I only cook chicken in cast iron, because it holds heat so well. If you use cast iron, I wouldn't put your stove over med heat because the pan will get to hot. lower the temp a little below med if you need too and if your oil is smoking it's too hot. it should sizzle (roll) but it shouldn't smoke.
+Demenyaca M Had this same problem. Next time you go to the store, get one of those cooking thermometer's that clip on the side of the pan. Make sure the oil covers close to half way b/c just the tip won't give you an accurat measurement. My chicken comes out perfect now. Also, paprika and buttermilk darken the crust. You may think it's burning but it's just the color or in the case of the buttermilk, the sugars in the milk browning.
When the chicken is nice and golden put it in the oven for 20-25 min make sure to use a baking rack so the heat goes all around. Turn the oven on to 350.
Kabu Graham Now you know if she cooks it in the oven like you say she will never learn how to proper cook the fried chicken in the pan to doneness AND have it look pretty!
I have discovered through the years that to get good fried chicken , you have to start with room temp. seasoned chicken, a hot pan with 1/2 cup of oil, turn heat down a little when chicken has been in for a for minutes. fry chicken on each side for 10 - 12 min. don't let chicken burn. you can turn chicken but it must cook for the 10 or 12 minutes each side. Oil must be hot when you put in chicken.

For me, trial and error has proved that there is nothing wrong with starting in the oil and finishing in the oven with 3 steps in prep: clean well, cut off excess skin/ fat; brine in buttermilk and salt (hot sauce optional) overnight; drain, then rub with spices, let sit 3 hours in fridge, then let come to room temp at least 30 minutes, coat well in seasoned flour to a muddy coating, let sit until flour permeates; then re-coat, THEN fry at 350 degree shallow oil in pan in non-crowded batches. I've made many a batch of chicken in all levels of oil in pan or pot, but it always comes out the outer is burned, the inner is under-cooked. Ive learned: 5 minutes in uncrowded pan with one flip and then 25 minutes on a rack in 375 oven to 165-ish with instant read thermometer: perfect golden, juicy, crispy, complete. Not soggy, not greasy. Pateint steps makes the best Fried chicken. TO me, it cannot be done in one day. Then again, I'm a white northern boy.

AND you can add a bit of vinegar to the liquid for the evaporated milk and get it closer to buttermilk ;)

I learned to cut up chicken when I was 12. My mom taught me. 9 parts to a chicken cut up. But u can cut extra pieces from the back or breast.🐣🐔🐣
