How to Make Hiroshima Okonomiyaki (Recipe) 広島風お好み焼きの作り方(レシピ)

  • Delicious and easy Japanese crepe topped with cabbage, green onion, bean sprout, noodles, and sliced pork belly from Hiroshima Japan.
    For the complete recipe:

    Ingredients:
    150 ml water (a little bit less than 2/3 cup)
    1 tsp. mirin
    100 g all-purpose flour (Between ¾ cup to 1 cup)
    240 g cabbage (about 3 large cabbage leaves)
    1 scallion/green onion
    2 Tbsp. katsuobushi (dried bonito flakes)
    4 Tbsp. tenkasu (tempura scraps)
    60 g (handful) bean sprout
    2 Tbsp. tororo kombu (optional)
    6 slices of thinly sliced pork belly
    2 yakisoba noodles (egg noodles)
    2 large eggs
    Toppings:
    Okonomi sauce
    Japanese mayonnaise
    Dried green seaweed (Aonori)
    Pickled red ginger (Beni Shoga) (optional)

    My old roommate was from Osaka, & her visiting mom came and made this for us. This was more than 20 years ago, and I still think about it! Heavenly!!

      You can buy the Sauce in any Asian market, also buy the Japanese Mayo, it makes all the difference!

    This is the legit video for okonomiyaki. Gonna base my attempt solely on this one. “Just One Cookbook” has good recipes for the okonomi sauce and Japanese mayo.

    I ate this in Hiroshima at a restaurant where they prepare it in front of you and you eat it directly from the grill plate. It's pretty good and fun to eat with a group of people and a couple of drinks. Though I couldn't really say it tasted significantly better than Osaka style okonomiyaki. And personally I prefer Osaka style for it's doughy consistency over the noodles that are a bit harder to eat without it falling apart.

    Your Okonomiyaki looks almost exactly like the one I had in a small bar directly in Hiroshima. It was so delicious. Definitely a reason to visit Japan again. Would love to try it at home, but it is so hard to get all the ingredients here in Europe...

      I know, it can be hard to find ingredients. I've seen some JOC readers in Europe trying this recipe - some have Japanese grocery stores in their area, some tried best with ingredients they had... I wish one day we can get Japanese ingredients easily outside of Japan. :)

      ***** Thank you again. Last Saturday I have made the Okonomiyaki but think that I have to practice to flip it more often. It didn't looked as great as yours but it was still delicious. By the way I forgot to buy the mirin so I did improvised with things that I had in the kitchen (Souju, brown sugar and small amount of blackcurrant flavored vinegar).

    I used to go to this restaurant in Okinawa that made the best Okonomiyaki and order the same thing every weekend. The chef used to get so mad because nobody would order anything else. lmao! We were addicts!

    When I was in Japan last year with my school, we had Okonomiyaki in Hiroshima! We took up a whole shop in a little side mall we went to >< This looks exactly like what we had~ ah it was so good! I'll have to try making this myself!!

    The flipping part is very challenging. Can I use the normal egg noodle ? Is there any differernt in flavour or texture between the Japanese egg noodle and normal egg noodle ?

    I noticed the chef in Hiroshima was putting powder bonito I assume prior to the pork belly. Is that twice? Once before the cabbage and before the Tororo Kombu? And also on the soba.

    What if I want to do more then one serving? For example, how can make the batter for more than one person? Would it just be putting the same measurements and multiplying it for 2, 5, 10 people?

      +Nelson Baietti No Japanese Mayo (taste slightly different), highly recommend it, most people told me they never go back to hellmanns once they tied kewpie Mayo.

      It's a kind of kombu, so it does have that kombu - seaweedy taste to it and has strong smell before cooking. It's all about umami and you won't taste it once it's cooked. :)

      For a basic recipe all you will need is tomato ketchup, Worcestershire sauce and honey or sugar or soy sauce which are all combined in a bowl. At Okonomiyaki World their easy recipe recommends using the ratio of 3 tablespoons of ketchup, with 1 tablespoon of Worcestershire sauce, and one tablespoon of Soy Sauce.

      Japanese, Korean, or Chinese grocery stores, or Amazon... if you're online, you can also buy from Japanese grocery store online shops too....

      Kitsanapon Pitaratae Yes, make sure you have enough room to scrape together the ingredients that are tossed away from the pancake when you flip it. You can cook the noodles / egg in another frying pan on the side, that's what I do! :)
