Making Ang Chiu / Ang Chew or Hong Zhao (Red Yeast Rice Wine / Chinese cooking red rice wine)

  • This is a recipe that our family have been making at home for many years and always turn out great.
    Ang chew or ang chiu, also known as Chinese cooking red wine is usually used in cooking, not for drinking. It goes by other name too: Hong Zhao or Red Yeast Rice Wine
    The red colour comes from the red yeast rice. Mixed with chiu piah or wine cookies, it ferments the cooked glutinous rice, changing it from solids to liquid. No water is added at all.
    We always have a bowl of mee sua with the soup made with chicken, mushroom and ginger, plus with the star ingredient, the ang chew.
