      Those ribs are getting over 200 degrees so even if it got cross contaminated at that temp bacteria is killed

    I do direct heat with coals and wood then wrap them up with apple juice 2hr and a half tops fall off the bone

    I have the weber summit. It has a second level for a defuser plate. Gives about a 1 1/4 inch smoke gap all around the outter edge of the grill. This keeps you from having hot spots and drying out the meat. I've never owned the ranch model. And was considering it for larger portions of meet 3 racks or more of ribs. Other than that the summit will do 2 huge Boston butts. Leg of lamb. So getting to the point. If you can creat a 3 levels in your pit. The bottom on a small grate creat a donut of lump coal and chunk apple wood or other. Then take your chimney and pour your hot coals in the middle. The second level place a round piece of plate that creates a defuser. You can lay pans on this plate to catch drippings too. Top level put your meat. That's how a summit is created. Of you do this and you can work that out on the ranch model hit me back up. Thanks.

      I also have the Weber Summit and can easily see how awesome your suggestion would be. What’s even more exciting is the grill real estate you would gain if you converted it to the summit’s cooking profile. It’s always something to spend money on but it would probably be worth it to try and find someone to make me a large diffuser for the ranch kettle. I’ll get back to you if and when I go this route. take care.

    I just found out that webber makes the 24 26 and ranch models I been rolling my old 22 with 3 vents for years it was giving to me years ago from a friend I'm always modifying to cook more on it like today I have a s
    2nd rack on foil balls and a water pan also on foil balls.
    I believe a 26 inch is coming to me in the future and the ranch maybe a special b day present to myself next year.

      Hey D. I haven’t used it in years and will have go back to my earlier videos using the drum smoker to get back up to speed. I remember that I did some very detailed video on the XR-50 back then. I’ll try to find them and send you the link.

    The chicken and the ribs look very good, the ribs a bit like a pan flute. I can't play a pan flute but eating these ribs would be a dream🤭😃😃😃

    Have you ever tried not using mustard as a binder on ribs? Rubs will adhere to them without it. Flavor profile from the rub tends to be better. Nice vid

    When using yellow mustard as a binder does it impart a mustard flavor to the ribs or does it cook away?... Great videos BTW love that Weber Ranch👍

    I love hickory smoke on chicken. But my multi-cookoff champion cousin says pecan is best for chicken 😒

      Pecan is a lighter less harsh smoke and it is ideal for chicken. I just love mixing it up when I want a more smoky flavor. Hickory is great for that. Thanks for checking out the video.

      I would never do hickory with chicken on a stick burner, but a few chunks on a kettle isn't going to smoke it out.

      Great question Leslie..I generally reheat in the oven at 180 to 200 degrees to let the meat slowly reheat. This helps to redistribute the juices and keep it from drying out. I use a foil pan and cover with foil on top. Hope this helps.

    Great video. In your opinion, is it worth stepping up from the Webber Summit to Ole Hickory ACE JR? I love charcoal smoking and am looking to spend some cash and would love your opinion as I know you are loving the Ole Hickory. Curious if it is worth the step in money over the Webber Summit..thx!

      Scott Carlson I would say absolutely yes if capacity is your constraint. The summit and ole hickory both are made with exceptional materials but the jump up to all stainless steel with the ole hickory was nice. At the end of the day, The ole hickory is a 100% smoker where the summit can go from smoking to grilling to searing and even baking. If I could only have one grill it would be the summit due to its versatility. I do a lot of catering so for me the ole hickory made total sense and has made smoking at higher volumes a breeze.
