    Edgy Veg recipes fall into "I need to impress my date and make them think that I cook like this all the time" category.
    Pro tip, buy your specialty mushrooms, like oyster mushrooms, at an Asian grocery store. In my experience, the Asian store prices are significantly less than a regular grocery store.

I bought jew's ear mushrooms dehydrated and shrunken down in an Asian store recently, and rehydrated a bunch of them at home, and they grew so much in volume and had such delicious flavour and texture after cooking! And they only came at a couple of bucks. Like 3 Euros or something for a really big bag.

    Gaz is so over the top with his cooking methods though lol. It's definitely nice if you're cooking for others, but if you're doing it yourself, it's not that practical. I make a version of this and just use white buttons or cremini. Take the flat side of a knife and smash the mushroom (kind of like you do with a garlic clove), then fry in a pan, take it out, chop in slivers, coat with spices and bake. You can also add slices of tofu to bulk it up too. You get the same tenderness/juiciness and crispy parts as with regular shawarma.

      LOL, I do love Gaz' videos, but you're right, he is very extra when it comes to cooking methods sometimes. He's like a chef version of Tim Allen's character in the sitcom "Home Improvement" - "More power! * manly grunts * " -, except that Gaz is infinitely more likeable.

    I'm from Toronto and oyster mushrooms are very easy to find. Any Asian grocery would have them. And we have an abundance of Asian markets. We're very lucky!

    2:38 that scraping sound 😭 I could hear the nonstick pan screaming "no! please don't use metal utensils to scrape stuff off of me! use the cast iron that you just used as a weight!".

    I have a great tip for that pita! Separate the 2 layers like a book and make sure you keep them attached at the bottom. Then you put the filling between the layers in a line and when you close the top layer, you can wrap both sides in. And as long as you kept them connected at the bottom, the stuff doesn't spill out! It makes for a much cleaner sandwich! Sometimes the layers can be hard to separate, but just bite or cut a small little piece off the edge, and then you can get your fingers in between the layers to pull them apart at that seam.

    You did a great job simulating Gaz's version of the vegan shawarma. I made them a few months ago after I watched his video, just baking the mushrooms on high heat in the oven without the skewers and they turned out amazing! I made them for my brother and sister-in-law and they were blown away by the flavors. I've made it several times since then because it's so damn good! By the way who is the jazz musician playing in the background? The music was a great addition to the video.

    I'm a big fan of cast iron, and I have found (with a gas stove) that heating the pan low and slow makes for better cooking every time. The pan still gets plenty hot, but it does so evenly and slowly enough that you won't have sticking, cold spot, or burning issues.
    ETA: I watched the vid he did with Chef Sarno recently making oyster mushroom BBQ. They added oil in each time they flipped or pressed the mushrooms to build up a fattiness. I think that would aid with the spice burning issue for sure.

    Wow glad I did youtube search before trying this. I too don't have an open flame and was going to try my own version glad to know someone like as experienced as you have tried this. I can follow your version. BTW I think you should have made it in the cast iron pan then it might not burn. Which pan are you using? It looks like a non-stick but you are using a steel/metal spoon and it does not seem to be scratching the pan.

    @Edgy Veg, I created an amazing Vegan mac-n-cheeze that is mind-blowingly realistic. Here's the recipe for you to try.
    "Herne's Vegan "Slap Yo Mama" Mac-n-Cheeze"
    1) Prepare in a saucepan 8 palmsfull (approx 7 oz or 1 1/2c) macaroni (no salt), to just past al dente; drain, and return to pot.
    2) Add about 1/2c Daiya Cheddar Style shreds; mix until mostly melted.
    3) Next, add about 2-3 TBSP, each, Kroger Simple Truth Organic plant sour cream, & Nurishh Cream Cheese Spread Alternative; mix until these are creamed through. Turn heat back on, to level 3 (low-medium).
    4) Add seasonings of: 1/2tsp, each, salt, fresh ground black pepper,, and turmeric, then, pour over about 1/3c Myoko's Liquid Vegan Pizza Mozzarella; mix till blended.
    5) Last, pour over about 1/2c Silk Next Milk (2%); mix well to combine.
    Serves two adults

    You would get a better sear in a cast iron pan and maybe release more juice out of the mushroom, and then you put spice on the squished mushroom. It looked delicious anyway, thanks for the demonstration.

    I need to show my parents MUD/WTR since 1. It’s Kosher (jew here) 2. It looks really healthy and I have trouble sleeping and I had a really bad crash at work (babysitting) and my mind was awake but my body wasn’t. 3. I really need to start changing my diet/habits since I am getting older and it sucks a lot. Hopefully this will help me out and save me money from spending on SB or DD runs.
