Sweet Bread: From Dough to Delicate Perfection

- Ingredients:
Dough
• Flour: 300 gr
• Yeast: 6 gr
• Milk: 130-150 gr
• Sugar: 40 gr
• Egg: 1
• Saffron Extract: ½ tsp
• Butter: 30 gr
Cream
• Milk: 100 gr
• Sugar: 40 gr
• Flour : 25 gr
• Rose Water: 2 Tbsp
• Vanilla Extract: 1 tsp
Method:
• To prepare the dough, we mix the dry yeast with warm milk. Then, we add sugar and mix it a little.
• We add the wet mixture and stir it until it loses its lumpy texture.
• To give the bread a nice color and better aroma, I used saffron extract, but you can also use vanilla.
• Now, we add the flour and mix it well. After a bit of kneading, the dough should become slightly firm.
• The last thing we add is melted butter... we incorporate the melted butter and knead the dough well.
• You can do this by hand or with a mixer. In the end, the dough should be elastic and soft, like what you see.
• Now, the dough needs to rest for an hour.
• Let's move on to the cream topping. On medium heat, we gently stir the milk and sugar.
• Once the milk is slightly warm, we add the flour and stir quickly on low heat.
• When the flour is well mixed, we add the rose water and vanilla and stir.
• Now, our fragrant cream is ready. We pipe it and set it aside, then go back to the dough.
• You can see that after resting, the dough has doubled in volume and is now ready to be shaped.
• We knead the dough lightly to release any excess air bubbles.
• We transfer it to a baking tray and gently press it down with our fingertips.
• Now, we poke the surface of the dough with a fork. This helps the center of the bread bake evenly.
• We pour the prepared cream on top of the dough, then preheat the oven to 160°C. After 10 minutes, we place the dough in the oven.
• Bake: 160°C, 30 minutes.
