the reason you wait before cutting into the steak is to let the juices redistribute back into the meat. If you don't wait and you cut into the meat right away the juices leak out and your left with a dry steak.

You should watch Ramsay's videos anyway to save time. This video only teaches you how to cook a steak and is 7 minutes long. In a Ramsay video you can learn a 3-course meal in under a minute, and see every molecule of the food up close.
Another approach better than the one you suggested when refrigerating is not to salt and cover the meat with cling wrap! Dry the meat off with paper towels, then salt heavily on both side and put it on a wire rack where air can circulated around the meat over night! The salt will draw out the water through osmosis and the next day the steak will be dry on the outside, slightly darker , but guaranteed to get a much better crust with a more tender and flavourful steak! 🥩 👌

Then cook to how you prefer your steak. If cooking in a cast iron skillet use butter or olive oil to prevent sticking. If on a tradtional grill the no non stick measure is needed.

The meat is releasing it's own fat and steam so the oil is being pushed away as it sizzles. Simple. If its a cheap steak, marinate it over night with any seasoning you'd like and with some kind of citrus if you want (helps break down the meat and make it softer). Expensive steak is usually a nice cut, so just cook it how you want. You can cook any cheap steak, but it will not be as tender if you marinate it over night. Sometimes its more tender with marination over night than an expensive cut.

I'm starting with grass fed skirt steak and a marinade recipe I found on the internet. Once I've practiced with that three times, I'm going to move onto filet mignons for which I will not use a marinade.
I understand that you want to have a crunchy meat but using so much oil for cooking a good meat kills its taste (you are basically frying it). Imho, the natural fat of the meat is in most cases sufficient. When it's not, I use a little olive oil for instance and spread it on the meat. Thanks for the explanation on the different qualities of meat though.
Yeah I was shocked by the amount of unnecessary sunflower oil, but putting olive oil is a bad idea, it can't handle more than 180°C (when sunflower is 240°C), so it won't fry correctly the meat or at all, but it will burn making the taste (and the nutriments) of the olive oil null / disgusting

You still have to dry it off even if you use less soy sauce. Using more just gives you better coverage so you don't have to rotate or move the meat while marinating.

Do you understand why she dried it though? Soy sauce burns incredibly quickly. You cook steak at the oils smoking point. Soy sauce would burn nearly instantly at that level of heat and ruin the steak entirely. She simply wanted the meat to take the flavor of the sauce. It makes since if you've ever cooked before, but you bums probably only eat mac and cheese and chicken nuggets.

the reason you wait before cutting into the steak is to let the juices redistribute back into the meat. If you don't wait and you cut into the meat right away the juices leak out and your left with a dry steak.

Gordon uses stainless steel which is more forgiving with less oil. Cast iron eats up oil as it expands when heated up so the amount she uses is fine.

Another approach better than the one you suggested when refrigerating is not to salt and cover the meat with cling wrap!
Dry the meat off with paper towels, then salt heavily on both side and put it on a wire rack where air can circulated around the meat over night!
The salt will draw out the water through osmosis and the next day the steak will be dry on the outside, slightly darker , but guaranteed to get a much better crust with a more tender and flavourful steak! 🥩 👌
If you leave steak @room temperate for over 2 hrs, bacteria can start to grow :/
Really all you need to cook a good steak is
1.a hot iron skillet
2. a lot of salt *spickles a good amount of salt*
3. A little bit of oil *Pours half a bottle*

That's just salt beef. At minimum you need salt, pepper, garlic powder, onion powder, some kind of citrus fruit (lemons or an orange work fine), and (optional) beer. First you rub the dry ingredients into the steak. The you squeeze the citrus fruit(s) and pour the (optional) beer for the mariande. Then mariande for a minimum of one hour in the fridge. Then cook to how you prefer your steak. If cooking in a cast iron skillet use butter or olive oil to prevent sticking. If on a tradtional grill the no non stick measure is needed.

Mario F. Actually, unless you're cooking meat that's breaded or battered or if it's dusted with flour, it doesn't soak up the oil. The meat is releasing it's own fat and steam so the oil is being pushed away as it sizzles. It's just on the surface and if you dab it with a paper towel when it's finished, you'll be getting pretty much no added fat. A tablespoon or a quarter cup of fat or even if you deep fried it, it will add about the same amount of oil which is negligible.

I like the $5 range for chuck steaks myself (single portion/eat at one sitting kind of size), $10 range for tri-tip and flank (again, single portion size), and $15 for decent quality ribeye (single portion size). If you get cheaper ribeye steaks, you NEED to be very, very wary. Don't buy a ribeye under $10, unless you can see red throughout the ENTIRE steak, and the expiration date/if its marked down, etc., is the day you buy it, or the day after at the very latest, etc. Anything above $20 really should be a fair amount of meat you are buying... Like a good quality roast... Of course, I haven't had wagyu beef, but spending $100 on a steak is kind of like burning money... Kind of... :-/ Its a little silly, but yes, I've heard wagyu is AMAZING...
Simple. If its a cheap steak, marinate it over night with any seasoning you'd like and with some kind of citrus if you want (helps break down the meat and make it softer). Expensive steak is usually a nice cut, so just cook it how you want.
You can cook any cheap steak, but it will not be as tender if you marinate it over night. Sometimes its more tender with marination over night than an expensive cut.

I understand that you want to have a crunchy meat but using so much oil for cooking a good meat kills its taste (you are basically frying it). Imho, the natural fat of the meat is in most cases sufficient. When it's not, I use a little olive oil for instance and spread it on the meat. Thanks for the explanation on the different qualities of meat though.
Yeah I was shocked by the amount of unnecessary sunflower oil, but putting olive oil is a bad idea, it can't handle more than 180°C (when sunflower is 240°C), so it won't fry correctly the meat or at all, but it will burn making the taste (and the nutriments) of the olive oil null / disgusting

I am pretty sure that you are from another continent, because at least in Europe, I have rarely seen someone cook meat with so much oil. Then is it good or not? This an individual question and you will have an infinity of answers (except from a health pov). My first post is appreciative of the video but questions the quantity of oil, now everyone is free to enjoy and cook the way he/she likes. I will stick to my no/low oil usage and you can keep frying yours. Enjoy!
