Peggy Hill wouldn't use American cheese on Frito Pie. If Hank's favorite is Pepperjack, she would have used that. If she were to use the default cheese used, she would have used Cheddar, or possibly Colby. They're Texans. Texan's default cheese for Frito Pie is usually Cheddar. Some people use the big bags of pre-shredded "Mexican Style" cheeses, but nobody but broke college kids and stoners melt American cheese food product slices over their Frito Pie.
Peggy is from Montana, not Texas, and refuses to admit she's wrong. If she made it "perfect", that would be by her own standards, not Hank's. Just as she refused to use REAL butter on her Brown Betty, she would have refused to use anything but American on her Frito Pie. Babish got it right.

From a Texan: When you make apple brown bettie, don't use regular bread crumbs, use yellow cake mix, and don't be afraid to use pre-made canned pie fillings... apple is great but my favorite is probably blackberry and my second favorite is probably peach (with Fredricksburg peaches), and don't feel bad about spending the extra dollar to buy quality vanilla ice cream over standard fare. Cake mix makes all the difference in the world, and you actually don't even need to use the brown sugar mixture if you do, it has plenty of sugar in it already as does the filling if you make it yourself or use pre-made fillings. By far my favorite desert in the world, though we don't call it apple brown bettie, we call it a "crunch".
Yeah, just use the cake mix itself, don't mix it with egg and milk. Moisture from the filling is enough to keep it from burning too bad and it also crisps up nice in the oven on top.

yeah it's an actual thing, and i think it came from the late 40's-50's so the sentiment of cooking ability isn't very incorrect like, have you seen some of the things that came from that era? stuff gets weird when you got limited ingredients

As an Italian from new Jersey who moved to Texas I can say that yes this is what they do in Jersey we make our own sauce but since moving to texas to be by my husband's family they just used jar sauce with some sugar and it's not as good but it will do lol

West Texan here, and I grew up in New Mexico. I've never seen anybody use stright cheddar on Frito Pie. Everyone I've ever met either uses melted queso or shredded Mexican blend cheese.

As a Canadian, I had never heard of Frito pie until this show, and I always thought it must be something fancier than that. Asked a friend from Texas about it, and couldn't believe Peggy was making stoner food for dinner. Texas is a strange place.

I made the Apple Brown Betty for thanksgiving one year. It was a huge hit. Now I have to make it for every birthday, family gathering, holiday and special occasion. I'm ok with that. Thank you Babish for showing me how to make this recipe.

Funny thing is I am a Texan, and the only thing he did, that I have any complaints about, is how long he cooked the spaghetti sauce. My family has their own recipe for the sauce, and we cook it for a minimum of 6 hours, on medium low heat.
I say minimum of 6 hours, due to that bringing out more flavor, from the sauce overall. Remember, the longer you cook it, the more flavor you get. Also an easy way to cut the acidity of the tomatoes, is to add boiled eggs to the sauce, it'll soak up the acidity, while having next to no effect on the flavor.

I'm legit crying. Everything in this episode is my mom. Store-bought ground beef. Disgusting parmesan from a can (must be at least 2 years old). Canned chili. Under cooked tomatoes. Weird peach cobbler derivatives. I'm sorry babish. This one just really got me.
If you want to mask the acidity of a tomato sauce and sweeten it up a little then finely grated carrot into it when you add the tomatoes. In fact you can grate a lot of vegetables into it and they get hidden in the sauce. A great way to get your daily vegetables especially with kids.
They're two issues I have with this video. 1. Peggy has one Substitute teacher of the year three times. 2. Peggy's apple brown betty has a teaspoon of orange juice in it, because "nobody else does that".

I try not to be, but yeah... I'll admit I was triggered by the frito pie. It is usually just piled on and the cheese gets melted by the chili... And everyone knows that the best ones are simply served in the bag. Take an individual sized bag of fritos, cut it open along the side, spoon in the chili, top with shredded cheese. That's it.
I'm pretty sure the whole idea of a Frito chili pie is that you only need a crock pot to heat the chili with, no oven required. It's a concession stand staple down here: Pop open the back of a bag of Fritos (or put them in a little paper boat if you're working with big bags). Ladle on the chili (no beans), and sprinkle on some shredded cheddar, and/or ladle on some Ricos Nacho Cheese Sauce. And the customer can usually throw on a scoop of diced onion or jalapeno slices. Perfect for sitting in the bleachers at a football game on a windy Friday night in late October.
Where I'm from the frito chili pie is baked in the oven, you put the fritos on bottom, pour the chili on top, top with shredded sharp cheddar and bake. BUT, better than frito pie is Rotel chicken. I totally forgot about that recipe until I was typing this! I bet we had Rotel chicken once a week when I was a kid.

You should have used Colby cheese for the Frito pie. Greasy enough to keep it from being dry, yet flavorful and a great melt consistency. You can reduce the grease if halved with Velveeta instead.

I've never seen frito pie as an actual pie. I've always seen it as a synonym for walking tacos, which is done actually in the bag of fritos and can be taco meat or chili, then shredded cheese. :)
Texans don't use the Wolf Brand with beans normally. Use a shredded Colby/Monterrey mix for the cheese and if y'all are feeling fancy add some diced onions.
Yeah, but you'd be surprised how hard it can be to find it without beans when you're not in the south. I moved from Texas to California, and the only place I can find it is in the super Walmart here. All the other supermarkets only have the kind with beans, if they have it at all.

Three egregious mistakes that were made: 1. Chili never has beans, especially in Texas 2. No American cheese on frito pie, shredded cheddar, Mexican blend, or queso only. 3. You don’t bake frito pie. You simply put Fritos in a bowl cover with chili and cheese.

West Texan here, and I grew up in New Mexico. I've never seen anybody use stright cheddar on Frito Pie. Everyone I've ever met either uses melted queso or shredded Mexican blend cheese.

As a Canadian, I had never heard of Frito pie until this show, and I always thought it must be something fancier than that. Asked a friend from Texas about it, and couldn't believe Peggy was making stoner food for dinner. Texas is a strange place.

I made the Apple Brown Betty for thanksgiving one year. It was a huge hit. Now I have to make it for every birthday, family gathering, holiday and special occasion. I'm ok with that. Thank you Babish for showing me how to make this recipe.

Funny thing is I am a Texan, and the only thing he did, that I have any complaints about, is how long he cooked the spaghetti sauce. My family has their own recipe for the sauce, and we cook it for a minimum of 6 hours, on medium low heat.
I say minimum of 6 hours, due to that bringing out more flavor, from the sauce overall.
Remember, the longer you cook it, the more flavor you get.
Also an easy way to cut the acidity of the tomatoes,
is to add boiled eggs to the sauce,
it'll soak up the acidity, while having next to no effect on the flavor.
This is how these recipes are made now. Goodbye old bad recipes, hello good babish recipes

If you want to mask the acidity of a tomato sauce and sweeten it up a little then finely grated carrot into it when you add the tomatoes. In fact you can grate a lot of vegetables into it and they get hidden in the sauce. A great way to get your daily vegetables especially with kids.
They're two issues I have with this video. 1. Peggy has one Substitute teacher of the year three times. 2. Peggy's apple brown betty has a teaspoon of orange juice in it, because "nobody else does that".

I try not to be, but yeah... I'll admit I was triggered by the frito pie. It is usually just piled on and the cheese gets melted by the chili... And everyone knows that the best ones are simply served in the bag. Take an individual sized bag of fritos, cut it open along the side, spoon in the chili, top with shredded cheese. That's it.

I'm pretty sure the whole idea of a Frito chili pie is that you only need a crock pot to heat the chili with, no oven required. It's a concession stand staple down here: Pop open the back of a bag of Fritos (or put them in a little paper boat if you're working with big bags). Ladle on the chili (no beans), and sprinkle on some shredded cheddar, and/or ladle on some Ricos Nacho Cheese Sauce. And the customer can usually throw on a scoop of diced onion or jalapeno slices. Perfect for sitting in the bleachers at a football game on a windy Friday night in late October.
Where I'm from the frito chili pie is baked in the oven, you put the fritos on bottom, pour the chili on top, top with shredded sharp cheddar and bake. BUT, better than frito pie is Rotel chicken. I totally forgot about that recipe until I was typing this! I bet we had Rotel chicken once a week when I was a kid.

You should have used Colby cheese for the Frito pie. Greasy enough to keep it from being dry, yet flavorful and a great melt consistency. You can reduce the grease if halved with Velveeta instead.

I've never had frito chili pie baked in an oven before. Usually it's fritos, spread out in a shallow bowl, chili on top, and shredded cheese. Optional addition of hot sauce and/or sour cream.
I've never seen frito pie as an actual pie. I've always seen it as a synonym for walking tacos, which is done actually in the bag of fritos and can be taco meat or chili, then shredded cheese. :)

As a Texan, I would have used colby jack in the frito pie.. It's always been present at every event on some HEB cheese tray and I love it.

Texans don't use the Wolf Brand with beans normally. Use a shredded Colby/Monterrey mix for the cheese and if y'all are feeling fancy add some diced onions.

Yeah, but you'd be surprised how hard it can be to find it without beans when you're not in the south. I moved from Texas to California, and the only place I can find it is in the super Walmart here. All the other supermarkets only have the kind with beans, if they have it at all.

Three egregious mistakes that were made:
1. Chili never has beans, especially in Texas
2. No American cheese on frito pie, shredded cheddar, Mexican blend, or queso only.
3. You don’t bake frito pie. You simply put Fritos in a bowl cover with chili and cheese.
The chili argument needs to be laid to rest. Some Texans like beans, others don't. We can be civilized about it, we're not Oklahomans for God's sake.
