When I was little, my mom would just halve hard-boiled eggs, and put a dollop of mayo on top. I think that's gotta qualify as the most basic egg salad. 😂
my favourite thing is how these episodes always start as faithful reproductions of what's on the show and from there they just get progressively more unhinged

It's really nice that he has the chance to do what he wants nowadays, but i just prefer the og-stuff, Binging and the odd episode of Basics (and i know, technically, Anime with Alvin is kinda Binging, but... it's not).
Some people get road rage, I get egg peeling rage. I’ve tried all the methods. The one you used in this video is by far the best. I peeled 60 hard boiled eggs last night, for deviled eggs at 2 Thanksgiving celebrations today. Egg shells came right off. Wasn’t irritated after peeling all the eggs. This method is a keeper!
The only thing I’ve found to be reliable was old eggs. Not like expired but not fresh ones either. If I know I’m going to need a bunch of devilled eggs for an event in advance I’ll buy the eggs a couple weeks out. Then I boil and do the ice bath when I need them. Maybe it’s just coincidence but it’s been the only thing that I find consistently works😅

thats a very home-made american way of eating it, yes! we like to add lots of stuff to it. this one is a bit more inspired by gas station egg salad, or even japanese conbini egg salad, which tend to only have mayo as the main additive
i spent a month in japan and i cant tell you how many convenience store egg sandos i consumed but i can say they absolutely live up to the hype. i was very skeptical but its so simple and delicious, just egg, kyupie mayo, and that incredibly soft bread. and thats all you need to be happy in this world

I always toast one side of my bread If you have a wide slice toaster, put both slices of bread in one slot When it comes out, bread is only toasted on one side. So like in that last sandwich, toasted for the inside, soft on the outside It’s a nice texture contrast that most people can’t pick out but are always pleased is there. In fact most people don’t know, but even fast food and sit down restaurants almost always toast only the inside of buns or bread when they make sandwiches/burgers.

A Hack for fast peeling of eggs i learning while working in a bakery is to slightly slam the egg on both tips, and then roll it while applying som epressure over it. That way you can get the shell of in usually one to two swoops.
For peeling eggs easily, a cocktail shaker. I pour in enough water to cover the hard boiled egg. Shake a couple times, and the shell shrugs off super easy. If it isn't off the first try, give a few more shakes.

Could be related to where you live! When I moved away from Denver, I had to relearn how long to boil my eggs because it was so much faster at lower altitudes
When I was working in a local restaurant, the trick I learned for peeling boiled eggs was cracking both the top and bottom, and gently rolling it under your palm and fingers against the table. If you're careful, you'll peel the egg perfectly without mashing the egg up on the table.
Like my guy really went from "just some eggs and mayo" to "let me casually whip up some Japanese milk bread and make a special mayo with MSG while we're at it." 💀This is peak Babish energy, and honestly, I'm here for it.
I'm so glad I can just buy milk bread at a Japanese bakery near me. I love using it for sandwiches in general, but especially egg salad. Same with kewpie mayo. This is the most complex egg salad I've ever seen made!
(8:10) I'd actually recommend replacing the lemon juice and seeing if that would work. I tried making homemade mayo but I kept getting something that smelled like uhh..."rainbows after a night of drinking". After taking out the lemon juice from the recipe, it lost all flavor but it didn't smell like a back alley anymore.
I substiture the celery with almost minced pickle in my egg salad. It still gives that crunch and the acid cuts through how rich the egg and mayo are. I despised egg salad until i did this.
I pull the yolks out and mix them with the sauces before integrating them with the solid parts. It makes a really smooth binder for the rest of the egg salad.
Seeing a few other comments as well but I'll give my 2 cents as well. I miss this from Andrew. Feel like he lost his way in the past few years with all the "culinary universe" stuff. Sometimes adding baking soda to the ice water can help.
It makes the water a bit softer and slipperier.
But some eggs are just mean.

Honestly, i only have difficulty peeling white eggs. Grew up with only brown eggs and never had problem peeling them.

I'm so glad I can just buy milk bread at a Japanese bakery near me. I love using it for sandwiches in general, but especially egg salad. Same with kewpie mayo. This is the most complex egg salad I've ever seen made!

(8:10) I'd actually recommend replacing the lemon juice and seeing if that would work. I tried making homemade mayo but I kept getting something that smelled like uhh..."rainbows after a night of drinking". After taking out the lemon juice from the recipe, it lost all flavor but it didn't smell like a back alley anymore.
I substiture the celery with almost minced pickle in my egg salad. It still gives that crunch and the acid cuts through how rich the egg and mayo are. I despised egg salad until i did this.
I pull the yolks out and mix them with the sauces before integrating them with the solid parts. It makes a really smooth binder for the rest of the egg salad.

I'm not sure if you've tried it, but mustard paste just works great with an egg salad sandwich.

Chopped egg, mayo, mustard, B&B pickle juice, sweet Red pepper relish and grated cheddar on a toasted Bialy...S&P optional...
Seeing a few other comments as well but I'll give my 2 cents as well. I miss this from Andrew. Feel like he lost his way in the past few years with all the "culinary universe" stuff. I've been subbed since the pre one million mark and this is the most honest and normal of a video I've seen from him in ages. MORE OF THIS PLEASE!
