I'm actually very happy with the way Matt slowly introduced us to Santi over time, bringing him in for more and more episodes, getting us familiar with him while also guaging our reactions to seeing him on screen and taking more leading roles. It really made this first video feel like just another food theory, nothing too off the mark from a typical video. Hats off to you, Santi! You made a really enjoyable video to watch!
I like Santi, originally I didn't but he grew on me, unfortunately same cannot be said for Tom, he kind of just sucks, don't like him or his voice. We need an AMERICAN voice actor for Game Theory!
There's just something fitting about how Santi's first video, while being the host of the channel, is him finding the spiciest chicken sandwich. It seems that torturing yourself is a trait you inherent when becoming the host of one of the theory channels.

Agreed! Different spices create different experiences, which can make it better or worse. For example, you don’t want nose-running spice like ginger if you’re gonna have a super saucy sandwich, cause you’ll need all the napkins you can for one thing, not both. Meanwhile, if you have a spice that makes your eyes water and cough, along with a lot of sauce, it’s a better experience.
It’s gonna be so strange when I go back to watch older videos and I don’t hear santi’s voice it just feels like he fits in to the role of host so well that it’s hard to believe he hasn’t been the host of food theory since the beginning
I think Santi is the perfect new host for Food Theory. Food Theory has become the most chaotic of the 4 channels, and Santi perfectly embodies that. It is sad that Matthew isn't hosting anymore, but I think Santi is a fantastic replacement, and this is a great opening episode.
I like how they made the thumbnail look like the other spicy food videos. Also its clever how they're spacing the premiere episodes apart so we get aquainted with each new host individually, not to mention doing it in the order the channels were made.
MatPat knew exactly how to make this transition between hosts. And all the ‘new crew’ (I say ‘new’ because they’ve been behind the scenes for a while) have absolutely NAILED IT. :)
@NateyCat They are good, but I think what really did it was getting us used to seeing and hearing them long before they were slated to take over as hosts. We already knew and liked them, and so they have escaped a lot of the anti newness bias that can be unfairly levied at someone taking over from a beloved host like Matpat.
Out of all of MatPat's succesors, Santi's my favorite. He's cut from the same cloth of chaos as I am and his love of food reflects in every video he's in. Plus, he's hilarious and more than a little masochistic so this is the PERFECT first video to host!
You're doing great, Santi! The only suggestion I would make is to consider having others testing along with you. From an experiment perspective, you'll have more data and be able to include people with different preferences and biases than you. And from a content perspective, the banter between different team members always takes the fun up a notch or two! But this is a great first episode! Way to hit the ground running!
I couldn't agree more. I listed different reasons but for the same point: getting at least one person on top of him would be great, just like we had at least Stephanie when Mat was the host.
I was going to comment this very thing. He needs more people to do it with him so he can build that sense of comfort, friendliness, and comradely with his audience. Watching people enjoy things or not enjoy things together really adds to a video experience.
Ngl I was so scared of this transition and I genuinely like every new host on each channel you guys are keeping it still authentic and the same flow to videos (which helps my adhd) and I don't do well with change but this was so good! Great job Santi 😭❤️
That's how I felt! I was kind of worried myself about how it was going to go and whether or not we were going to like the new hosts, but I do I think they did a good job and really picked people that lived with the audience and vice versa.
I was kinda worried about how the theory channels would change because of Mat's leaving, but Santi is so good! I love this new era and wish the best to all of the team, including Mat.
The only thing that's really changed is the voice and maybe the theories. Everything else will stay the same because most of these new hosts had already been writing for their respective channels for a long time.
PBS Space time had a channel host change maybe 4 or 5 years ago. For the few episodes I missed the original host, but now I barely remember him and the new host is great
Honestly? I’m so happy seeing santi’s first episode. I miss the collaboration and having more than one person testing, but I honestly love santi as the new host. A worthy successor for food theory
I don't really agree, the whole video he kept insisting tomatoes were horrible with fried chicken but never bothered to explain, because he can't as it's just a personal bias. That is 100% something Matpat would have and HAS targeted and either designed the experiment to get around or at least established it was his own bias.
He did explain, at 12:20 that he thought they didn’t have the acidic punch the pickles did, and that the flavor strongly overpowered the rest of the sandwich. Sure it’s still personal bias, but he didn’t just leave it at “I don’t like tomatoes.”
@@cherriberri8373 he said the tomatoes are not acidic enough to lower the spiciness, numbing your palate, and they're too watery, making the sandwich feel soggy. That's curious, because usually meat+tomato is a winner.
@@lexiepound1062 I was being kind subconciously and blocked that out of my memory. Tomatoes and pickles are very close in acidity, so that was just him reaching for a reason, and the wateriness obviously wasn't a big enough issue for him as he gave multiple.. quite soggy chickens mid scores. The only issue is his bias, which is fine, except that it highlights the other bias problem that's like an elephant in the room... ONLY him himself tasted stuff.
I am so glad they gave Santi food theory, I feel it suits him so well. Also, I love that they slowly introduced/included the rest of the team in recent videos before Matt leaving. It made it easier for the transition! Cant wait to see these channels grow even more! Still miss you though matt!
To be honest, I thought the retirement of MatPat would end my interest in these channels, but Santi really knocked it out of the park on this one. He kept the same vibes MatPat brought but put his own spin on things that I really enjoy. I can't wait to see more from you Santi!
Unfortunately this channel is the only one I'm not sure i can agree on. Obviously waiting for future videos cause maybe he will fix his blunders but I didn't appreciate the whole tomato hatred bias that was stated as fact. Wonder why it was never explained, maybe there's an issue with the evidence...

No one will ever be able to replace MatPat because there is only 1 MatPat, but you can replace a host when they leave and you can be the best Santi there is because there is only 1 Santi like you! Food Theory was the first theory channel I saw. It slowly introduced me to the other channels but this always held a special place in my heart. And through many videos, you can see the love and passion Santi has towards food, and he's not afraif of trying new stuff out. I'm so excited for his takeover and wish him the best.
It's still weird seeing people who found these channels without going through game theory, but I guess they aren't even that new anymore, so I guess it makes sense
I love Santi’s energy and jokes, I think they fit the channel very well. The one criticism I have is I wish he included a few more people in the testing to get a range of view points. Defining something as the best is a very opinionated matter and I believe that it’s best to take the average of several views in tests like these. It allows for the transference of ideas and allows a more unbiased ranking over all. No hate on Santi, love the work you’re doing and I’m excited to see you grow with the channel as its new host. Congrats on the position, and we’re excited for the next episode!
It's possible they're still building a team to figure out how things are gonna work in LA. It was easier for Matt to just call people to his house to make food or test soaps since they're all sort of in that location. I'm sure in a few episodes or more we'll start to see more people involved!
I came to say the same thing. Never noticed how much interaction between MatPat and Steph was heart of the channel before today. Not only one perspective subjectivity of single host for a test like this was pulling it down, but joy of food is such a interpersonal, if not communal thing, that one person trying all those sandwiches felt a little more sad than it should. Not Santi's fault, but episode concepts like this desperately needs at least one co-host. Especially with a spicy food, where suffering together could bring some energy and warmth (pun intended). We saw Santi dealing with how spicy things were maybe once, or twice, for a short moment. My guess mostly because there was no one to bounce against pulling up fun of the situation.
They’re probably still figuring things out and perfecting the little things. Give em a few weeks or so. It’ll get better over time and they probably will eventually get more people on the channels after a while (Correction not “each ep” that doesn’t make sense sorry)
Exactly what I am saying! The whole tomato thing was maddening, the entire video was almost 1/10th dedicated to talking about how tomatoes don't work FOR SANTI on fried chicken sandwiches, and then passing it off as fact and never bothering to explain. If they don't bring back this key element of the channel it's genuinely not worth it, this video felt like a weird mix between a generic fast food review and a food theory episode that came out poorly.
Yeah, but it definitely took more of a backseat. This felt more like a blend between watching a random, generic food reviewer and what is expected from food theory. I mean, the dude didn't even bother explaining why tomatoes don't go with fried chicken. It's obvious why, he's wrong, and so he doesn't have an explanation besides "it's my opinion!!1!" but passes it as a fact. Definitely, I'm personally not going to watch Santi food theory if he drops half of the good stuff and introduces bias I don't even think he realizes he has.

You don’t understand how excited I am for future uploads. Santi made his first episode super entertaining with his narration! I do however think that the camera lights are a bit too bright and should maybe be toned down just a tad. Other than the camera this first episode is most likely my favorite out of the three! Can’t wait to see future episodes of Santi!

Santi you are absolutely my favorite new host. You are so comfortable with the camera and, although not as dramatic as Matt's, have the same lilt in speech with your voiceovers that keep the viewer engaged. Very good and solid first episode. I can't wait to see more! Especially one where you go all out on spicy food :D
Santi has a really good voice and cadence for voice-over work. Plus, his unbridled love of food gives him bonus credibility. He will definitely make an excellent host for this channel.
Matpat honestly chose the best person for food theory , santi is such a vibe cant wait to see more and more of him as well as i would personally say its not just the theory thats important but the person behind the theory and conveying the information and santi did just that very much entertaining to watch .
Honestly, as a viewer of Gamertheory all the way to his zombie video YEARS ago and his fnaf theories, I’d like to say I love how you try to honor him with the little movements, puns, everything. It’s also nice seeing how you are yourself and I can say this channel is in great hands. I’m excited for food theory videos in the future
I love how all the new hosts are starting off their debut episodes with "Hey, you may be wondering why MatPat sounds different" as if we didn't all hear about Mat's retirement. But I still appreciate what each of them is bringing so far and I look forward to watching the first Style Theory with Amy when it goes up. After watching the whole video, I kind of wish that Arby's buffalo sandwich had been part of the lineup, though that might be brand bias as an employee, and its ingredients are so simple that I don't know how it would hold up. I will say that the simplicity of the Arby's sandwich could've made it unique to what was used here. The spicy sauce is applied directly onto the chicken, it uses ranch instead of mayo, and the only other thing on it is lettuce. I'm not big on spice normally but maybe I'll run my own comparison between that and the Wendy's sandwich.

Out of the three new hosts so far, I think Santi is the most comfortable with VO. Lee and Tom still seem like they're a little awkward and are still finding their groove, but Santi seems like a natural. Can't wait to see what comes of the new hosts! Good job 👏👏👏
in tom and lee's defense, santi was on camera, and helping on episodes, a lot earlier then the rest (in the actual episodes). Tom or Lee to my knowledge never really did that. Style Theory is yet to be seen, but I think she will do well enough, as it seems it was always in the works that's she'd take over that channel at some point (she's always been present in the Style Theory episodes)
@@MiniCerberus991 Tom has been on camera a lot of times too, specifically on gt live, but I'm not talking about them being filmed for the video, I'm specifically talking about the voice over. Talking to the camera for live scenes is a little different than doing voice over, specifically because with live scenes there's usually someone else in the room with you, so it feels more like a conversation with that person as opposed to voice over, which is usually done on their own, and can make it sound like they're reading straight from a script. Not saying that they're not supposed to read from a script, but you have a very distinct voice when you're talking naturally versus reading something. The ability to read and convey the emotion of talking to someone in front of you is a skill that takes time to master, and it's something that MatPat said he spent years learning how to do. Go back to a theory MatPat released years ago and you can see how he's developed his speech style. Tldr; the new hosts have to learn how to be able to express emotions while they're speaking in vo because the audience can't see their face, so it's not as easy to pick up on those emotional cues you normally get while someone is talking. I think Santi has done a really good job mastering that so far, and that Tom and Lee still sound a little bit robotic or too much like they're reading from a script. Nothing wrong with that though, just means there's room for them to grow.
I foresee both Tom and Lee developing those annoying yet endearing ways of speaking that we love our theorists voice overs to have. Just give it a bit of time.
Now that I think about it, Santi, you are the perfect person for this channel. Not because of any legitimate reason just because I swear when I was going to South Carolina we stopped that place called Santi’s kitchen. Like that sounds like it would be a local food chain and I’m pretty sure it’s just my imagination but as soon as you start talking about chicken… The thought came to mind and now I can’t get it out of my head. Santi’s kitchen.
Suggestion for a future episode: As I understand it, the calories marked on food are based on the heat that can be generated by burning it. But when you digest the food, what comes out the other end can still burn (in varying quantity ofc, depending on the type of food ingested), so it standard reason that you did not in fact consume all of those calories. So I think it would be really interesting to take a look at different foods and how much of those calories you actually digest and if there are some where it’s more and some where it’s less.
The spicy oils in peppers don't digest, they pass thru completely unaltered. And they DO, in fact, burn the _entire_ way. 'S why spicy food gives you the runs, your body wants to get rid of it.
The heat you feel from spicy foods is just the capsaicin in the pepper triggering your taste buds, making them essentially feel like they're on fire. It's not actual heat in a way that we measure for caloric numbers. Just the illusion of heat, it's a defense mechanism of the peppers like a poison. I forget why, but they also trigger heat receptors on the other end. So you aren't consuming less calories when the food burns on the other end, that's just some of the capsaicin surviving for round 2.
Santi saying the classic "Hello Internet, and welcome to Food Theory" line kind've caught me off guard by how different it hit, but this is one of my favorite Food Theory episodes of recent! Extremely excited for the future of ALL of the Theorist channels!
It should to a fault, your breath starts at your body temperature and cools as it touches the air in the room around you, leaving most of the cooling effect up to the movement of the air itself and not the temperature.
So it's not that you're imparting a cooler temperature on the food, but the food is hotter than ambient temperature, and thus it tries to heat up the air. However air isn't the most thermally conductive material, so what ends up happening is that the food becomes surrounded with a layer of hot and warm air, and since the transfer of heat is based on the temperature gradient, or the difference in temperature between two points, the food releases heat slower. Blowing on the food pushes that hot later of air surrounding the food away allowing the food to be in contact with more ambient temperature air and repeat the cycle. This is the same reason why wind can feel so much colder even if the air is the same temperature, because the air isn't colder, but your body heats up the air nearby and how fast you cool down slows. That layer of air is referred to as a boundary layer and effectively acts as a form of insulation, and similar to the case of food, it feels colder because the wind pushes that layer of warmer air away.
I love how Santi is still sprinkling in the abundance of mediocre puns that have always made this channel shine. I always loved watching Mat, Steph, and Santi beat the dead horse with as many bad puns as they could, and I'm glad that isn't dying with the retirement of MatPat.

Food theory is my favorite of the theory channels! I was a little sad when I found out someone else would be taking over, but every time Santi is in a video, I can't help but find it enjoyable, and this was no different! I'm a vegetarian AND I don't like spice but I still was entertained by this! Something about his personality is just likeable and easy to watch.

We love how brutally honest you are, Santi! Would love to see you do a "best homemade fried chicken method" episode. There's a restaurant at the Morgan St Food Hall in Raleigh called Katsu that does a fried chicken sandwich that they pound the chicken flat for and its really good, and we have a family recipe for a brine that has salt and sugar in it that makes chicken taste amazing. There's another place in Raleigh called Soo Cafe that does a Korean fried chicken that's awesome, too!

@NateyCat They are good, but I think what really did it was getting us used to seeing and hearing them long before they were slated to take over as hosts. We already knew and liked them, and so they have escaped a lot of the anti newness bias that can be unfairly levied at someone taking over from a beloved host like Matpat.
Out of all of MatPat's succesors, Santi's my favorite. He's cut from the same cloth of chaos as I am and his love of food reflects in every video he's in. Plus, he's hilarious and more than a little masochistic so this is the PERFECT first video to host!

You're doing great, Santi! The only suggestion I would make is to consider having others testing along with you. From an experiment perspective, you'll have more data and be able to include people with different preferences and biases than you. And from a content perspective, the banter between different team members always takes the fun up a notch or two! But this is a great first episode! Way to hit the ground running!
I couldn't agree more. I listed different reasons but for the same point: getting at least one person on top of him would be great, just like we had at least Stephanie when Mat was the host.
I was going to comment this very thing. He needs more people to do it with him so he can build that sense of comfort, friendliness, and comradely with his audience. Watching people enjoy things or not enjoy things together really adds to a video experience.
Ngl I was so scared of this transition and I genuinely like every new host on each channel you guys are keeping it still authentic and the same flow to videos (which helps my adhd) and I don't do well with change but this was so good! Great job Santi 😭❤️

That's how I felt! I was kind of worried myself about how it was going to go and whether or not we were going to like the new hosts, but I do I think they did a good job and really picked people that lived with the audience and vice versa.

I was kinda worried about how the theory channels would change because of Mat's leaving, but Santi is so good! I love this new era and wish the best to all of the team, including Mat.
The only thing that's really changed is the voice and maybe the theories. Everything else will stay the same because most of these new hosts had already been writing for their respective channels for a long time.
PBS Space time had a channel host change maybe 4 or 5 years ago. For the few episodes I missed the original host, but now I barely remember him and the new host is great

Honestly? I’m so happy seeing santi’s first episode. I miss the collaboration and having more than one person testing, but I honestly love santi as the new host. A worthy successor for food theory
I don't really agree, the whole video he kept insisting tomatoes were horrible with fried chicken but never bothered to explain, because he can't as it's just a personal bias. That is 100% something Matpat would have and HAS targeted and either designed the experiment to get around or at least established it was his own bias.
He did explain, at 12:20 that he thought they didn’t have the acidic punch the pickles did, and that the flavor strongly overpowered the rest of the sandwich. Sure it’s still personal bias, but he didn’t just leave it at “I don’t like tomatoes.”
I agree. Having at least two people to see their tastes is important to this kind of theory.

Tomatoes and pickles are very close in acidity, so that was just him reaching for a reason, and the wateriness obviously wasn't a big enough issue for him as he gave multiple.. quite soggy chickens mid scores.
The only issue is his bias, which is fine, except that it highlights the other bias problem that's like an elephant in the room... ONLY him himself tasted stuff.

To be honest, I thought the retirement of MatPat would end my interest in these channels, but Santi really knocked it out of the park on this one. He kept the same vibes MatPat brought but put his own spin on things that I really enjoy. I can't wait to see more from you Santi!

Food Theory was the first theory channel I saw. It slowly introduced me to the other channels but this always held a special place in my heart. And through many videos, you can see the love and passion Santi has towards food, and he's not afraif of trying new stuff out. I'm so excited for his takeover and wish him the best.
It's still weird seeing people who found these channels without going through game theory, but I guess they aren't even that new anymore, so I guess it makes sense

I love Santi’s energy and jokes, I think they fit the channel very well. The one criticism I have is I wish he included a few more people in the testing to get a range of view points. Defining something as the best is a very opinionated matter and I believe that it’s best to take the average of several views in tests like these. It allows for the transference of ideas and allows a more unbiased ranking over all. No hate on Santi, love the work you’re doing and I’m excited to see you grow with the channel as its new host. Congrats on the position, and we’re excited for the next episode!
It's possible they're still building a team to figure out how things are gonna work in LA. It was easier for Matt to just call people to his house to make food or test soaps since they're all sort of in that location. I'm sure in a few episodes or more we'll start to see more people involved!
I came to say the same thing. Never noticed how much interaction between MatPat and Steph was heart of the channel before today. Not only one perspective subjectivity of single host for a test like this was pulling it down, but joy of food is such a interpersonal, if not communal thing, that one person trying all those sandwiches felt a little more sad than it should. Not Santi's fault, but episode concepts like this desperately needs at least one co-host. Especially with a spicy food, where suffering together could bring some energy and warmth (pun intended). We saw Santi dealing with how spicy things were maybe once, or twice, for a short moment. My guess mostly because there was no one to bounce against pulling up fun of the situation.
They’re probably still figuring things out and perfecting the little things. Give em a few weeks or so. It’ll get better over time and they probably will eventually get more people on the channels after a while

Exactly what I am saying! The whole tomato thing was maddening, the entire video was almost 1/10th dedicated to talking about how tomatoes don't work FOR SANTI on fried chicken sandwiches, and then passing it off as fact and never bothering to explain. If they don't bring back this key element of the channel it's genuinely not worth it, this video felt like a weird mix between a generic fast food review and a food theory episode that came out poorly.
Tbh Santi lives far away compared to everyone of the team so if they do it, it's probably once every few theories

Yeah, but it definitely took more of a backseat. This felt more like a blend between watching a random, generic food reviewer and what is expected from food theory.
I mean, the dude didn't even bother explaining why tomatoes don't go with fried chicken. It's obvious why, he's wrong, and so he doesn't have an explanation besides "it's my opinion!!1!" but passes it as a fact. Definitely, I'm personally not going to watch Santi food theory if he drops half of the good stuff and introduces bias I don't even think he realizes he has.

Seeing and hearing the new theory hosts has been great, i very much look forward to see more from them.
You don’t understand how excited I am for future uploads. Santi made his first episode super entertaining with his narration! I do however think that the camera lights are a bit too bright and should maybe be toned down just a tad. Other than the camera this first episode is most likely my favorite out of the three! Can’t wait to see future episodes of Santi!

Honestly, as a viewer of Gamertheory all the way to his zombie video YEARS ago and his fnaf theories, I’d like to say I love how you try to honor him with the little movements, puns, everything. It’s also nice seeing how you are yourself and I can say this channel is in great hands. I’m excited for food theory videos in the future
I love how all the new hosts are starting off their debut episodes with "Hey, you may be wondering why MatPat sounds different" as if we didn't all hear about Mat's retirement. But I still appreciate what each of them is bringing so far and I look forward to watching the first Style Theory with Amy when it goes up.
After watching the whole video, I kind of wish that Arby's buffalo sandwich had been part of the lineup, though that might be brand bias as an employee, and its ingredients are so simple that I don't know how it would hold up. I will say that the simplicity of the Arby's sandwich could've made it unique to what was used here. The spicy sauce is applied directly onto the chicken, it uses ranch instead of mayo, and the only other thing on it is lettuce. I'm not big on spice normally but maybe I'll run my own comparison between that and the Wendy's sandwich.

Out of the three new hosts so far, I think Santi is the most comfortable with VO. Lee and Tom still seem like they're a little awkward and are still finding their groove, but Santi seems like a natural. Can't wait to see what comes of the new hosts! Good job 👏👏👏
in tom and lee's defense, santi was on camera, and helping on episodes, a lot earlier then the rest (in the actual episodes). Tom or Lee to my knowledge never really did that. Style Theory is yet to be seen, but I think she will do well enough, as it seems it was always in the works that's she'd take over that channel at some point (she's always been present in the Style Theory episodes)
@@MiniCerberus991 Tom has been on camera a lot of times too, specifically on gt live, but I'm not talking about them being filmed for the video, I'm specifically talking about the voice over. Talking to the camera for live scenes is a little different than doing voice over, specifically because with live scenes there's usually someone else in the room with you, so it feels more like a conversation with that person as opposed to voice over, which is usually done on their own, and can make it sound like they're reading straight from a script. Not saying that they're not supposed to read from a script, but you have a very distinct voice when you're talking naturally versus reading something. The ability to read and convey the emotion of talking to someone in front of you is a skill that takes time to master, and it's something that MatPat said he spent years learning how to do. Go back to a theory MatPat released years ago and you can see how he's developed his speech style.
Tldr; the new hosts have to learn how to be able to express emotions while they're speaking in vo because the audience can't see their face, so it's not as easy to pick up on those emotional cues you normally get while someone is talking. I think Santi has done a really good job mastering that so far, and that Tom and Lee still sound a little bit robotic or too much like they're reading from a script. Nothing wrong with that though, just means there's room for them to grow.
I foresee both Tom and Lee developing those annoying yet endearing ways of speaking that we love our theorists voice overs to have. Just give it a bit of time.

Now that I think about it, Santi, you are the perfect person for this channel. Not because of any legitimate reason just because I swear when I was going to South Carolina we stopped that place called Santi’s kitchen. Like that sounds like it would be a local food chain and I’m pretty sure it’s just my imagination but as soon as you start talking about chicken… The thought came to mind and now I can’t get it out of my head. Santi’s kitchen.
Suggestion for a future episode:
As I understand it, the calories marked on food are based on the heat that can be generated by burning it. But when you digest the food, what comes out the other end can still burn (in varying quantity ofc, depending on the type of food ingested), so it standard reason that you did not in fact consume all of those calories. So I think it would be really interesting to take a look at different foods and how much of those calories you actually digest and if there are some where it’s more and some where it’s less.
The spicy oils in peppers don't digest, they pass thru completely unaltered. And they DO, in fact, burn the _entire_ way. 'S why spicy food gives you the runs, your body wants to get rid of it.

The heat you feel from spicy foods is just the capsaicin in the pepper triggering your taste buds, making them essentially feel like they're on fire. It's not actual heat in a way that we measure for caloric numbers. Just the illusion of heat, it's a defense mechanism of the peppers like a poison. I forget why, but they also trigger heat receptors on the other end. So you aren't consuming less calories when the food burns on the other end, that's just some of the capsaicin surviving for round 2.

It should to a fault, your breath starts at your body temperature and cools as it touches the air in the room around you, leaving most of the cooling effect up to the movement of the air itself and not the temperature.

So it's not that you're imparting a cooler temperature on the food, but the food is hotter than ambient temperature, and thus it tries to heat up the air. However air isn't the most thermally conductive material, so what ends up happening is that the food becomes surrounded with a layer of hot and warm air, and since the transfer of heat is based on the temperature gradient, or the difference in temperature between two points, the food releases heat slower. Blowing on the food pushes that hot later of air surrounding the food away allowing the food to be in contact with more ambient temperature air and repeat the cycle. This is the same reason why wind can feel so much colder even if the air is the same temperature, because the air isn't colder, but your body heats up the air nearby and how fast you cool down slows. That layer of air is referred to as a boundary layer and effectively acts as a form of insulation, and similar to the case of food, it feels colder because the wind pushes that layer of warmer air away.

I'd also love you to add the restaurant's logo on the screen somewhere in the corner when you're sitting on the couch and talking about a sandwich, so it would be easier to keep the track of what's praised or reproved at the moment.

Food theory is my favorite of the theory channels! I was a little sad when I found out someone else would be taking over, but every time Santi is in a video, I can't help but find it enjoyable, and this was no different! I'm a vegetarian AND I don't like spice but I still was entertained by this! Something about his personality is just likeable and easy to watch.

We love how brutally honest you are, Santi! Would love to see you do a "best homemade fried chicken method" episode. There's a restaurant at the Morgan St Food Hall in Raleigh called Katsu that does a fried chicken sandwich that they pound the chicken flat for and its really good, and we have a family recipe for a brine that has salt and sugar in it that makes chicken taste amazing. There's another place in Raleigh called Soo Cafe that does a Korean fried chicken that's awesome, too!
