    At first I followed the exact measurement and the heavy cream didn't thicken. Kept squeezing more lemon juice, about half a large lemon and it worked! it tastes so darned good! better than store bought sour cream. I'm using this to make your creamy cilantro dressing. Thank you for your recipes!

    I realized too late that I had ultra pasteurized heavy cream, but being a stubborn person I wanted to make it work. As others have said it will not work the normal way if ultra pasteurized. I added 5 tsp lemon juice to the 1 cup of cream and IT WORKED!!!! I needed it for potato soup and am excited I don't have to run to the store with it snowing outside.

    It wasn't thickening for me so I got our my KitchenAid mixer with the whipping attachment. Put it on #6 for a minute or so and that did the trick! Tastes great! Thanks so much!

    I just tried this minutes ago and I must admit it does work. I could have use less heavy cream, but yes indeed. I had to use almost 6 teaspoons of lemon juice from the bottle but kept the salt input the same and after whipping several minutes and my husband joining in it WORKED!!!!!. THANKS BECAUSE I SAVE A TRIP TO THE GROCERY STORE AND WERE HAVING LOADED BAKE POTATOES.

      Cherel Johnson it only took me about 3 teaspoons . But at the same time im not a big fan of sour cream so i don't really know what it should taste like

    Didn’t stiffen up like you demonstrated. Added another teaspoon distilled vinegar, still liquid, added almost a tablespoon of lime juice and brought out the electric mixer. Finally, stiffened up and had a tangy taste. Will use it for now but think I will stick with store bought sour cream. Enjoyed your video, anyway,

      Ive got it in my stand mixer, added lots of lemon and lime juice, and some heavy cream. It's just as liquid as when I started 10 minutes ago. She's just thrilled collecting money from the comments and promoting her channel.

    Whitw vinegar works. I used about 2 tbsp for 1/2 cup of cream though. Thanks for the tip!

    I was out of sour cream for my potato pancakes...I live 35 miles from the nearest store...OH NO! The Frugal Chef to the rescue...I had fresh lemons, I had cream from my neighbors cows...I was getting ready to make cheese. It can't be that easy and good...IT WAS.     Living in Japan, and I have no access to sour cream without going to expensive and inconvenient specialty markets.

    Sorry for the delay Shelby! I have been traveling. I have found that the thicker the cream I use the better this comes out. Perhaps you can use a heavier cream next time? If not, I also found that if you refrigerate it for a couple hours the cream will thicken up. Thank you so much for stopping by!

    I found a recipe for homemade sour cream in a cooking blog, it lets the lemon juice stand on the cream for 15mins without stirring. It didn't turn out the way I wanted cause it wasn't thick enough, I found out that your technique is better and easy to make. Thanks for this vid, I'm subscribing from now on. :-)

    Thank you so much for this recipe. I am stuck in South Korea (in my second year now) and won't be returning home until Christmas. Problem is, I miss sour cream so badly and the only sour cream here is REALLY sour - it's called Denmark sour cream and omg, I hate it (and I have to go to a large city to get it). Whipping cream has just become available in my small town and lemons are easy to get so I can't wait to make my own with this easy recipe!

    Mine was thin, i used 35 percent cream, so i had to add regular 2 percent yogurt and that actually made it taste EXACTLY like sour cream, we were actually amazed.
    So to make your way better, add in curd yogurt.

    Awesome Cacille! I hope this works for you. I love this. Remember that you might have to add a little more juice, or whisk a little more to get the consistency you want. Some people have said they refrigerate it for a while and it gets to where they want it as well. Take care!

    I did not know anything about whipping cream so I thought it would only take a few seconds, just like your video shows...much to my surprise and sore arm, it took about 6 or 7 minutes of constant whisking! Lesson learned.

    I needed sour cream tonight. I had some whipping cream & lemons so I gave this a try. I used exactly 1 C. of cream with 1 tsp fresh lemon juice. It didn't work. It thickened a little, but nowhere near as thick as yours. I added more lemon juice & it still did not thicken up like yours.It was the consistency of a dip. I expected it to thicken up before my eyes while whisking like yours did. It thickened more in the refrigerator and I was able to use it, but I wonder why it didn't work like yours?

    Thanks for the reply Mary Ann! I will try this again. I used heavy whipping cream with a meyer lemon. These lemons are a little sweeter, so maybe they're not acidic enough? Also the cream said ultra pasteurized, if that makes any difference. I love this idea, and so I'm buying more cream today and I'll use a regular lemon. Maybe I needed to whisk faster. I was just stirring it with the whisk. I'll let you know! Love your videos!

    I tried this. It did not work. 1 cup heavy whipping cream and 1 teaspoon of lemon juice. whipped and whipped and whipped it never got thicker than butter milk. In the video it took seconds for yours to get thick.

      Add more lemon juice. I had to whip for a while, but it finally thickened.

      I use to make it by put ice in another bowl and whisk the cream on top of the ice. I mean 2 layer bowl with ice n cream.

    A lot of people are harping on this not being sour cream. Well duuuh, no kidding ! She didn't say it made real sour cream . It is a substitute for when you don't have the real deal and don't want to run to the store. This is no more sour cream than adding vinegar to milk makes it buttermilk . They both will work as decent quick substitutes though. For those having issue getting it thick , it's whipping cream, whip it.
