Loving this! I am a family of ME, so this is how I cook. Once or twice a month I make two or three recipes at a time. About 4 or 5 portions each and pack them up like this so I have a variety of dinners to enjoy after a long work day.
About 2-3 times a year, I use 5 lbs ground meat, whatever I wind up with, and make a huge batch of small meatballs. Bake in the oven, then freeze on clean cookie sheets, then bag up in zip lock bags. I can then use them with pasta, simmer a few in bar b que sauce, mushroom soup, or sweet and sour. I can then make dinners, or sub sandwiches, have only one big mess to clean up and don't have to wait an hour to eat.
I also am solo so cook a bit like this but I make 5-6 recipes and freeze meals for the month. I also use my crock pot to make soups to freeze for those days when I don't feel like a heavier meal. Glad to know others do the same.
This might sound funny but I was taught in school to tie my hair back, wash my hands, and put on my apron before I started cooking. Now that I’m old, you have no idea how much I appreciate seeing a young person following these rules. It makes me happy. 😃

My kids are 12 and 8 and they have no idea what TV dinners are. My mother in law taught me how to cook. Thankfully I have been blessed to be a stay at home mom for the past 10 years
My mom, 94 years old, passed away this year. ❤️ She made the best meatloaf. It called for rolled oats, milk( which I’m sure was used to stretch, eggs, beef or “meatloaf mix” , onions. The “W” sauce. The best part was the topping. Ketchup, dry mustard, brown sugar and a little bit of nutmeg. The house would smell amazing.
I do this for my hubby who is a long haul truck driver. I make large meals as there is just the two of us and then make him freezer meals to take on the road.
I did this when my husband drove as well. I was fortunate enough to ride with him the last several years. We very seldom ate anything outside of the truck. We are empty nester so it is easy to divide meals up and freeze them. Now that he is retired, I still cook this way.
i make 15 meals like this for my mom every week…i freeze meals, but i have started to create meal kits for dinner. for the past 2 summers i have kept lunch kits ready in the refrigerator, i do so much work in my landscape it is nice to come in and pull out a kit, go back out and sit in the shade…i describe as taking care of me. i have quite the system for making my moms, i have to wash bento boxes, shop for the seafood, cook, assemble and deliver. right now i have 15 in the freezer, she usually has 6-7 left on delivery day, which means 9 or 8 to go…so i currently have a 2 week inventory….this is what i strive for. she doesn’t eat them all because i usually send 8 omelettes and 4-5 frittatas…. she has such food restrictions, no dairy, pepper, salt, gluten, no spices…so everything is scratch, flavor layering, it’s odd that i do enjoy it, but i plan professional medical education events for a hospital, so guess this is in my wheelhouse. i make sure to take time to relax.
Texture of the mashed potatoes will be better after being frozen if you leave out the milk, add twice the butter an about 4 tablespoons of sour cream an 4 of cream cheese.
My meatloaf includes the same as presented in the video plus liquid smoke and beef & onion Lipton soup mix in the meat and the sauce has Worcestershire sauce, stone ground mustard (instead of yellow) and instead of brown sugar I use our favorite bbq sauce and ketchup. I make mine into mini loaves since it's just two of us eating. I make the mini loaves and freeze them raw (in sets of two), and defrost the day before and bake fresh (just have to make the sauce). Even if cooking for 2 or for 6, this has worked really well because they don't take long to bake when they are small 6oz loaves (usually get 4 loaves per pound of meat). My other favorite freezer items is to: (1) cook and shred chicken to be frozen flat and then used however I'd like (so not pre-seasoned); (2) pre-made burger patties in sets of two - ready for the grill (I add Lipton soup mix to our burger patties); (3) chicken spaghetti frozen dinners; (4) ready to fry fried-rice mix (with ham, zucchini, onions, bell peppers, and peas, just defrost the day before or in the morning; just cook eggs and fry the mix - very quick meal!); (5) I also like packaging up the big packages of raw chicken and seasoning them but never with a citrus (those come out terrible) - typically pesto or (6) chili adobo come out best and are great for the grill or oven. (7) I also like to pre-cook plain rice to have a side item ready to go I might have to try the (8) mashed potatoes like this video for our meatloaf nights! (9) I love breakfast burritos too! (10) and when a fruit is on sale (or needs to be used up) I make muffins and freeze the extra for a quick work-day breakfast! Doing all these things has not only helped me with the dreaded "what's for dinner" but helped us not eat out.
Back in the very early 70's, before food storage containers were a thing, I used to buy Patio Mexican dinners and chicken pot pies and save the tins and then make meat loaf,.fried chicken, chili, beef stew etc and put in mashed potatoes or rice and veggies and reheat on low in the oven. My son loved them!
Those containers are great; I’ve used them before in busy seasons of life. I’ve also utilized my slow cooker quite a bit, this way, my family can eat in shifts as we call it. I’ve also made this meatloaf before - everyone loves it - and I think I’ll make it this week! With any leftovers, I can pack it up for my husband the next day in those fabulous containers, or start a small individual freezer meal inventory for busy days.
This is such a great idea! My husband and I are going on our anniversary vacation this coming month, and this would be perfect for me to leave in the freezer for my youngest son and mother! I love how nostalgic these trays are!! Mom and Alex would love it!

Love this idea! We actually add cheese into our meatloaf, my kids love it! We’re in the path for hurricane Ian so we are currently not trying to put anything in the freezer but rather pull what we can and can it up. We will definitely be doing some of these once the hurricane has passed 🐒💕
TV dinners. You should have thrown a veggie or two in the potatoes! As a kid I always remembered there was a pea or two that migrated to the mashed potatoes. 😂 and the gravy somehow made its way to the dessert. Hahaha!
Nope sorry. I love my mashed potatoes ONLY with milk, LOTS of butter, and salt/pepper. I have never in my 60 years seen anything else added in mashed potatoes except for maybe real bacon bits & cheese

The topping for meatloafs in my family (in Denmark) is bacon slices across the top 🥓 may need a little oven grill-time at the end to crips it up, but it is soo good! 🤤

I didn’t realize my hubby didn’t like meatloaf the first time I made it for him (thank u crappy HS cafeteria meatloaf lol). I got him to love meatloaf! 👏🏻👏🏻👏🏻. Mine is a pound of meat, bread crumbs, onion soup mix, ketchup, mustard, 1 egg, a couple of dashes of whats it’s face sauce & TLC. One hour (& change), bread pan 350° with sweet baby rays on top to “seal” it.
I have an old Beaty Crocker cookbook and I use that recipe for meatloaf but I use a whole pound of beef and a whole pound of ground pork. I have tried other recipes but my family hasn’t like them. I’m the only one that likes green peppers.

If you add hot milk to your mashed potatoes, they get super fluffy! I also cook mine in the IP, but steam them instead. 15 minutes gets them really to mash.
It would be nice to find old fashioned style aluminum sectioned 'tv trays' for use in the air fryer. Food reheats so nicely in them. In addition to Salisbury steak we also love enchiladas, individual portions of lasagne and chicken pot pie.
When I’m freezing pies or crisps, I line my pan with parchment paper and freeze it. Then pop it out of the pan and wrap it up. This keeps my pan from being stuck in the freezer. Maybe you can line a divided dish, fill with your meal and freeze it. Then pop it out and reheat in the air fryer. Seems like it should work.
I just learned something. I am going to have to do this especially with football season going on and then basketball then track. It will make those days so much easier.
I remember that Salisbury steak video, and then I took your favorite and made it ours, and it is delicious! So good, reminds me of the meal in elementary school where our lunch ladies cooked everything! Yes, we were spoiled! I will be trying the PD meat loaf, only not doubling it! Only 2 of us so it will be enough. Our H-E-B (Texas grocer) stocks those freezer containers, so I will grab some of those too. We are eating more meals at home, and frankly, we are enjoying it more. I would love to do this but my family will not eat my homemade food as leftovers! They devour it on the day I cook but if I try to feed it to them as leftovers or freeze it and serve it another time they won’t eat it.

When it comes to the bell pepper for the meatloaf…have you tried to grate it so you don’t get big chunks? I’ve never tried so I don’t know how easy it would be to grate.
Our best meatloaf is all the usual ingredients plus oatmeal, bbq sauce. We top with bbq sauce too. Sometimes we smoke it, which adds a lot. I’ve won awards for that one.

I make meatloaf in our muffin pans. Cooks in about 20 minutes! Since we have such active kiddos, it helps get a good dinner on the table quickly.

I have made individual dinners like these for many years. Great for lunches, too.
It would be nice to find old fashioned style aluminum sectioned 'tv trays' for use in the air fryer. Food reheats so nicely in them. In addition to Salisbury steak we also love enchiladas, individual portions of lasagne and chicken pot pie.
When I’m freezing pies or crisps, I line my pan with parchment paper and freeze it. Then pop it out of the pan and wrap it up. This keeps my pan from being stuck in the freezer. Maybe you can line a divided dish, fill with your meal and freeze it. Then pop it out and reheat in the air fryer. Seems like it should work.
I just learned something. I am going to have to do this especially with football season going on and then basketball then track. It will make those days so much easier.
Great meals! My go to freezer meal is turkey, gravy, mashed potatoes, stuffing, and corn. Love Thanksgiving dinner year around.

I remember that Salisbury steak video, and then I took your favorite and made it ours, and it is delicious! So good, reminds me of the meal in elementary school where our lunch ladies cooked everything! Yes, we were spoiled! I will be trying the PD meat loaf, only not doubling it! Only 2 of us so it will be enough. Our H-E-B (Texas grocer) stocks those freezer containers, so I will grab some of those too. We are eating more meals at home, and frankly, we are enjoying it more. Very clever! These TV inspired dinners do look much better then store bought!!! Now for the recipe for the Salisbury steak could you share it? Your voice was a little soft and it was hard to understand at least for me. Thanks Kimmy! I have Paula Dean's cookbook hopefully has her meatloaf in it.

I did meatloaf meals last week. I like doing the muffin or mini loaf pans. Used fresh green beans from the garden!

If you don’t have onions and peppers to put a Meatloaf add salsa
What i freeze most often is left over gyro meat. Also left over bbq pulled pork.

You come up with the best ideas. While you were in your food storage room I noticed that the freezer door swing looks awkward. Did you know that you can easily reverse the swing of the door? Keep the videos coming.

we do this but I vacuum seal the container. put lids aside.
I would love to do this but my family will not eat my homemade food as leftovers! They devour it on the day I cook but if I try to feed it to them as leftovers or freeze it and serve it another time they won’t eat it.
My dad is the same way.

When it comes to the bell pepper for the meatloaf…have you tried to grate it so you don’t get big chunks? I’ve never tried so I don’t know how easy it would be to grate.
Food processor or mini chopper would work. For the onions and mushrooms too.

Our best meatloaf is all the usual ingredients plus oatmeal, bbq sauce. We top with bbq sauce too. Sometimes we smoke it, which adds a lot. I’ve won awards for that one.
How do you keep the integrity of the potatoes? The texture of mine change. I was told not to add milk before freezing.

I use upside at Casey's gas station near me. I love it! I don't eat out that often, but if I do - I will check upside first. I am so glad you are sharing this with other people so they can save money as well!
I don't make a loaf for mine. I put it all in the pan and smoosh it down and just bake it. It's so good
