Yep, im Trini and it's a must to burn the curry first or you get a lot of gas afterwards, plus he got to simmer that gravy a little longer to get the thick gravy. Must reduce it for an authentic Curry Chicken.
I love watching you simply because I am not at all a co-ordinated cook, and it's often hard for me to follow recipes that are meant to be 'easy', but you literally do everything in such a straightforward way it's very easy to understand. It's helpful that you list the ingredients and execute at the same time. Much harder to misunderstand for me :) Keep up the great work!
I was thinking the same thing but I learned how to make curry chicken from someone from Trinidad so I thought that perhaps it was a Trinidad thing but I did notice that the potatoes were missing.
Have to wash the meat. Lemon and a little vinegar. Sanitize surfaces afterwards. I try not to eat out, just don't know how ppl prep raw meat. So easy to get sick if the meat is washed and cleaned properly.

As Jamaican I can proudly say you did a good job! How every the curry is kinda white, next time you can add a little bit more curry or you can minus the oil from the chicken, get a frying pan put the oil in the lightly burn the curry powder then throw the chicken you can transfer to a deeper put if required also .

I can honestly say being a Jamaican that you did a C+ job. The dumplings shouldn’t be deep fried but fried in a moderate amount of oil in a skillet. Also that green stuff you mixed into the chicken before cooking makes it look crazy. I have no doubt the taste is delicious and as always I will continue to like all your content but next time watch the cooking like a Jamaican lady’s videos because they are spot on
curby01 I disagree, when you buy dumpling in a takeaway they deep fry them. They are large and round. Also the green stuff is called green seasoning, he put a Trini twist on it, but a green seasoning is still used in Jamaica. Do you watch West Indian delights here on TH-cam? She’s a Jamaican who shows old country techniques and she has a whole video dedicated to green seasoning.

I would get a jar of homemade green seasoning from my Trini fam.and we treated it like it was gold. Wash meat, soak in lemon juice to ' get de farm off " and then season with spices and add green stuff. Set in fridge overnight. Then cook. That's my Trini take on it. My twist. LOL

I love those takeaway dumplings, it’s why I take the time to go and buy at a takeaway instead of making it home. Restaurant food should be exciting and innovative. I don’t know where you are from but here in the UK the Jamaicans sell the dumpling like that. If I want it the traditional way I stay home.
