THE Crispiest, Juiciest Pork Belly

Crispy pork belly has a different name and unique method of cooking depending on the culture, but here I’m preparing it the Hmong way with sticky rice and a side of hot pepper sauce.
Boil a 2 ½-pound slab of pork belly on for 15 minutes, then remove and poke the skin all over with a skewer. Season with salt or your seasonings of choice and use your hands to spread it all around. Wrap the bottom and sides of the pork belly with aluminum foil to help keep it moist, then thoroughly dry the skin with a paper towel. Brush with vinegar and bake at 375°F for about 1 hour and 45 minutes. Check it often and cover the top with foil if the skin starts to bubble.
Then, brush with more vinegar and broil at 500°F for several minutes until the skin is bubbly and crispy. Slice and serve. Enjoy!
My family is Taidam similar to Hmong culture. My parents came from Laos and I grew up eating this as an Asian American. Pork belly, sticky rice, and pepper sauce 😋

It's also important to note which level rack you should use when it's in the oven. The first time I made this, I broiled it at the top rack without thinking and it burnt to a crisp. Always broil at the bottom rack, even if it's for a few mins.
I did this recipe a couple of days ago, and yeah burnt pretty badly
You can always scrape off the burnt parts with the back of a cleaver or a big knife. It still come out good and crispy
I made this. First recipe I've ever made from a short. Be careful not to burn it with the grill/broil setting. Watch it like a hawk, maybe even with the oven open. The pork came out well and the crackling that wasn't burnt came out better than the recipes with oil. Definitely would recommend adding spices because the pork was pretty tasteless. Definitely make a few sauces/ dips.
Let it burn a bit. You can just scrape it down afterwards. That's how it's done in restaurants

If you go ahead and add some oil after the last step then go into the oven again for 200°C for 20 minutes you get that white golden crispy skin

What tells me the vinegar is unnecessary is that other people recommend baking soda on the skin which should have the opposite effect. I do it without anything but salt and it works like a charm
me too with just salt! but I wonder whether the choice of vinegar vs baking soda depends on the recipe's cooking temperature (or related aspect)? vinegar/acids generally increase the temperature needed to brown/caramelize/burn things (maillard reaction), whereas baking soda/bases decrease the temperature needed
