Drain and while hot quickly work into muffin pan cups so they line the cups. Paint bacon with your favorite bbq sauce. Set aside. Chop 12 sausage coins to "top" the muffin cups. Dice rest of sausage and mix in bowl with room temperature cream cheese, sour cream, shredded cheddar, poblanos, onion and green pepper. Add chives and black pepper to taste. Scoop cream cheese mixture into muffin pan bacon rounds and top with sausage coin. Bake at 350° F for 30 minutes.

I would cook the bacon in the pan for 10-15 min and pull it out and then add the other stuff on top. And I would take some shredded hash brown and finely chop the jalapeño and add egg and mix it up and put it on top like a lid and pop it back in the oven and brown them and then remove and eat. That sounds really good, but your way looks yummy too. Just a little to soft it needs to be a little firmer.

Yes, I have recently discovered that I get a cleaner, less messy cut on some things, when I use clean kitchen scissors, I thought it was for cutting open food packages, but, after watching this lady, I found out I can cut food also.
When I was a kid I thought it was funny that my Granny used scissors to cut the pizza, then I grew up & found out she knew what she was doing way back then!!! 😊 I love my kitchen scissors & use them for all kind of stuff!
yummy!!!…you know what helps with a cutting board from moving ?…I use a folded up damp paper towel!…game changer, then to not waste…it’s my final clean up swipy towel 😁
Nothing really wrong here, but after trying the initual recipe, we wanted more layers of flavor. We tried this 4 at a time. As dipicted, it falls apart. We then cooked the bacon for 5 minutes before assembling. We cut Grands biscuits into thirds and put in the bottom, sprinkled some Rub on the biscuit, Bacon with the BBQ sauce, cheese, Sausage, cream cheese that we added some minced red onion, cheese, Jalapeño and a dab of the Rub on the top. The biscuit absorbed too much of the grease from the bacon and or sausage. We then tried grilling the sausage to add another flavor dimension and remove the oil. That and lean bacon helped tremendously. We then tried some corn bread in the bottom instead of a biscuit. Jalapeño corn bread would work well here. We also put a little minced Garlic in the Cream Cheese. That seemed to be the crowd favorite.
Suggestion: I lay my bacon out side by side. Then brush with bbq sauce. Then line the muffin tin with bacon. For me quicker and easier. I used andouille sausage.

She's so pretty and a good cook too. One thing I've tried before with a similar recipe is cooking the bacon about halfway before putting it into the muffin tins. That's if you want your bacon a little more crispy, plus it holds its shape a little better that way too.
Line each muffin cup with bacon then fill half full with bacon fried bbq corn fritter mix. Insert sausage piece and top with your sourcream mix with jalapeño slice. Now you will have something you can pickup and eat! Enjoy 😊😎

The ones she used are called kitchen shears. I've seen them used a lot to cut out the spine of chickens or turkeys to spatchcock them.
I held my breath with every snip, waiting for her to lop off a finger tip or two. Some basic knife skills would help her here.

Try cooking the bacon in the air fryer for 7 minutes at 350°, then line it in muffin pan includind bottom of each muffin.

There’s one thing that drives me nuts….why people use dried chives??? It’s so easy to buy them fresh and regrow them.
I think some cornbread mix just a little in the bottom will hold it all together better and deff bacon needs more done.
