Yes, I have recently discovered that I get a cleaner, less messy cut on some things, when I use clean kitchen scissors, I thought it was for cutting open food packages, but, after watching this lady, I found out I can cut food also.
When I was a kid I thought it was funny that my Granny used scissors to cut the pizza, then I grew up & found out she knew what she was doing way back then!!! 😊 I love my kitchen scissors & use them for all kind of stuff!

I used chopped green onions instead of jalapeños on top and added a faint sprinkling of shredded cheese on top of that. How I did it tonight. Next time I line the sides and bottom with bacon. Or use a tortilla. Or biscuit like some comments suggest. The bacon & sausage make enough fat so the whole thing lifts out easily but it's still not a "finger-food." I had to eat with a spoon. Ingredients: 12 slices bacon, enough to line each muffin pan cup 12 oz cream cheese, room temp. 1 C sour cream 2 poblanos, chopped 1 C onion, chopped 1 C green pepper, chopped 12 oz smoked sausage, like eckrich 1 C shredded cheddar Bbq sauce Chives Black pepper Instructions: Par-cook bacon in pan over medium heat 8-10 minutes. Drain and while hot quickly work into muffin pan cups so they line the cups. Paint bacon with your favorite bbq sauce. Set aside. Chop 12 sausage coins to "top" the muffin cups. Dice rest of sausage and mix in bowl with room temperature cream cheese, sour cream, shredded cheddar, poblanos, onion and green pepper. Add chives and black pepper to taste. Scoop cream cheese mixture into muffin pan bacon rounds and top with sausage coin. Bake at 350° F for 30 minutes.

Insulin resistance and flammation are the driving forces behind basically EVERY modern disease in crumbling western societies. Follow a fat man/woman around the grocery store and watch what they are buying, and over 50% are using taxpayer funded food stamps. She’s made a wonderfully ketogenic meal/snack here, with maybe a couple tweaks mentioned. I’d be interested to know what your BMI is, and what your overall metabolic health looks like.

I would cook the bacon in the pan for 10-15 min and pull it out and then add the other stuff on top. And I would take some shredded hash brown and finely chop the jalapeño and add egg and mix it up and put it on top like a lid and pop it back in the oven and brown them and then remove and eat. That sounds really good, but your way looks yummy too. Just a little to soft it needs to be a little firmer.

She's so pretty and a good cook too. One thing I've tried before with a similar recipe is cooking the bacon about halfway before putting it into the muffin tins. That's if you want your bacon a little more crispy, plus it holds its shape a little better that way too.
I'd risk both for this type of treat! You only live once, so why deny yourself good food! Besides I take Omeprazole regularly anyhoo, so not a big deal in order to enjoy life to it's fullest! ❤
Suggestion: I lay my bacon out side by side. Then brush with bbq sauce. Then line the muffin tin with bacon. For me quicker and easier. I used andouille sausage.
In Ohio when we grill out we call those hot shots. Of course on a smoker there a 100% better and the bacon 🥓 is thoroughly cooked. And you BBQ them afterwards so they look, taste and the bacon crisp up a little to give them that nice crunch.

yummy!!!…you know what helps with a cutting board from moving ?…I use a folded up damp paper towel!…game changer, then to not waste…it’s my final clean up swipy towel 😁

The ones she used are called kitchen shears. I've seen them used a lot to cut out the spine of chickens or turkeys to spatchcock them.
I held my breath with every snip, waiting for her to lop off a finger tip or two. Some basic knife skills would help her here.
