If you loved pörkölt, and want to eat it sometime at home, mushroom (gomba) pörkölt, and green pea (zöldborsó) pörkölt are easy amazing, cheap, fast, and meat free (my top pick is actually green pea pörkölt, even as a meat eater). Sour cream is highly recommended, but if you have alternative that you eat, it might work.

Yeah, garlic soup and many similar soup is coming from the AH times, when FR cuisine influenced the city meals, and after 1848 the revamped pastoral food called gulyas become famous, and reverted our identity to Hungarian. But the old version comes from the Hunnic times, when it's made in cauldrons, as we do usually on free fire and not in restaurant way. Similarly we have many pastoral food, that is belonged to the nomadic life, and as we are came from the east we have more soups, and boiling cooking culture. Yet, as the westerners don't know the soups, and they have more like a roasting cooking culture, that is the reason why you can find pörkölt (stew), and gulyás soup from the same ingredients. Yes, also we have some sort of celtic influence in food, as scottish, and cimmerians (welsh) people lived in the carpathian basin... but i don't want to go in deep details. PS: The chimney cake originally came from the HU Szekely people in Transsylvania, and become famous, and copied by everyone - even you can find in Asia, where the fill it with sausages, and avoid the sweet versions.

@@ANobodysHerstory I didn't mentioned the traditional Jewish cuisine, what is similar to ours, but different. If you are interested in HU cuisine and it's story, I can give you old recipes, and even a cookbook from AH times. Also interesting aspect if you search for turkic (not turkish) food similarities, and you will see that Szekely cuisine is completely other than the widely known local traditional.

Allow me to clarify a bit.
The shepherds probably never ate goulash. They were too poor for it.
Meat was a festive food. Her's they only guarded and cared for the animals. Even the dead animal had to be dealt with strictly.
They mainly ate pasta, which was prepared with onions and bacon. They didn't know paprika.
The goulash, pörkölt, lecsó is very diverse, as many varieties as there are people who make it.
Hurka. There is also a bloodless version. The base is minced boiled pork offal. Boiled rice is added to this meat. They are seasoned and stuffed into the intestine. Blood is added to the bloody version. In the liver version, minced liver is the main ingredient.
Stuffed Cabbage. There are many variations of this as well. From sour cabbage and sweet cabbage, kale..
What you haven't tasted is the Somlói galuska, madártej, fruit soup.
The market hall is a place very visited by tourists, so it is also expensive.
By the way, this is also true for all such tourist places.
