Try marinating a backstrap in a 50-50 mixture of soy sauce and brown sugar overnight, then wrap with bacon and cook to make bacon browned. The marinade will penetrate about 1/8 inch into the meat, I cooked this as part of a venison supper at my church, the loins were a big hit !
I know that you harvested the venison heart from the prior video. I use take the heart and remove the ventricles add marinate it whatever you like and then stuff it with onions and garlic and wrap it with bacon just like you did with the back straps and put it in the smoker and enjoy! Delicious
I know some people will hang their deer for a week let it age and get black and blue they say the fibers break down in the muscle but its really tender that way. Some people might think its spoiled as long as its 40 or below the fda said it was good, spray some vinegar on it to kill bacteria.
