Rick! I used to make something similar when I was a baker way back in the '70's. The only difference was, I used to pour a runny fondant mixture over the top after I'd put chopped crystallised ginger over the top. It was a best seller and I got a pay rise from my boss for putting them on the shelf of the shop.

I really like those cute tins! I’m one of those who like to make cake goodies for friends and neighbours. They would be ideal for me, anyway I’m making ginger cake this week! Then I’m trying your mascarpone cheese with lemon curd pastries, as I have just got my hands on some home-made lemon curd. Not my home though! 😅.
I made ginger where I worked by slicing up peeled raw ginger, then cooking it in sugar,water,and I liked some lemon juice,as it keeps the ginger a nice color, as well as adding a slight taste,when the water boils away you can drain the ginger on a fine mesh sieve, when cool enough to handle roll in sugar, then allow to dry before storing..I actually stored mine in the syrup it cooked in, as I drained it later, and chopped up for cakes, and cookies as I needed it. If you keep in the cooking syrup refrigerate it,then you might need to warm it before you can drain it,if you drain then roll in sugar, you should be alright a t room temperature once it has dried.Please be aware it can burn easily,so as the syrup gets thick, and the water boils away, you need to watch it carefully.😊
Reminds me of sorghum molasses gingerbread cakes my mom used to make minus a few ingredients. Never had the crystalized ginger but definitely going to get some. Never had rum, only spirits my Dad had was whiskey for making hot toddies when he had the cold or flu. But I know where to get all these ingredients and maybe my family will get this treat for Christmas, definitely will get them. Still have most of my mother's recipes in her own handwriting. Don't know how she did it making cakes on a wood stove but never had any better food. Thanks again for your great recipes.

I would love a link to the little cake pans you used for the rum cakes. I like them much more than what I have at home and am due for an upgrade. I bet people would also order the oven you use. Ginger, and rum lovely.You know us older pastry chefs don’t faff about that’s for the young just out of cooking school😂I watched those young line cooks adding a few drops of milk at a time in their bechamel, and all the other things they got taught. One of my favorite stories was when I had just started work at a new restaurant I was 50 at the time, I took the can opener, you know the sort you attaché to the table, and one of the line cooks asked me if I knew how to use it, so I told him “Yes, before you were born” ,that was the end of those sort of questions, but Abe , and I became the best of friends, and 30 years later we are still friends.😊
As it is Christmas I have done my own version of this cake. I did away with all of the ingredients and just kept the rum...it was very easy to prepare and tasted delicious 🥃. Happy Christmas to you and yours 🎄

My favorite cake of all time is a good, butter-y, Caribbean Tortuga Cake (aka Rum Cake) I have a collection of 6" bundt pans that I use to make multiple cakes at a time for gifts every Christmas...how does this compare in taste? "Spicier" or has a little more bite because of the ginger?
If you do, I'd suggest a very fine mince or grated. Even a pea-sized piece of fresh ginger may be a bit much on the tongue. You can also make your own. Peel ginger, thinly slice. Simmer slices in water for about 15 minutes. Drain (save the liquid-it's ginger tea!). Mix sugar and water in a 2:1 ratio, add ginger, cook at a low boil for 15 minutes, let cool, remove ginger let dry on a rack, coat with sugar if desired. The liquid is now a ginger simple syrup so save that, too.
