Here's my tip - It could take longer if watery veg used. What I would do on a big pie next time it loosely cover the top with foil - bake 3/4 of the way then remove the foil to cook the top (all after the blind bake).
What a fantastic recipe! Wow. I would never of thought to make leftovers into a quiche. And mashed potato pastry! I really can’t wait to make this recipe! Off the charts. Well done Rik. And thank you for another brilliant recipe. 💕
Its nine oclock in the morning here in kansas City and I start the day with your channel. We always have leftover mixtures kind of like this at Thanksgiving and Christmas. I can almost smell and taste yours. Waste not, want not. Am sure going to try that pastry. I also make an end of the garden casserole when I'm getting the last bit of veggies before winter comes, maybe more than once. You just keep the good recipes and ideas coming. Love ❤️ them.
@@BackyardChefIt was delicious. I learned all that from my Irish and Scottish parents. My husband's favorite meal was all veggies, fried okra, fried potatoes, fried squash, sliced fresh tomatoes, cucumbers and onions. Granted probably not the healthiest as far as today's thinking. But I used bacon and lard. My father taught us to eat what is set before you and ask no questions for your stomach sake. He never had a cholesterol problem. Pardon me for rambling on. Sometimes, just ask my daughter, I get too much info out there. But I love my life and wouldn't trade it with any millionaire in the world. Forgive me for this life history.
We make end of the season salsa - different tale on the same thing... And Friday night supper is always different - consisting of whatever is left over in the 'frig.
@@maryannehibbard5686I save whatever veggies are left after the meal and if there is not enough for another meal, I freeze them to use in a soup. When I have enough little baggies I make my soup. There's not much if any throwaways at my house. And I do that in every aspect of my life.
C'mon Rik you have got my mind boggled now as i have made some extra mash with our meal today ready to use for soup tomorrow, but now you made this and now i'm stuck for choice. Looks smashing, thank you rik 👏🏻👏🏻👏🏻👏🏻👏🏻👏🏻
Quiche always reminds me of sitting in my parents' back garden, back in England, in the summer in the 80s and 90s, eating quiche, salad, sliced ham and boiled potatoes.
Rik, life lesson, "hands in, make a dough!". Such a great idea, do the work, bring seemingly unlikely parts together gently, Voila!! Right along the lines of teaching fishing and gifting goats...you know. "Nice and steady."
Rikki baby. You've not only knocked it out of the park mate, but sent it into orbit!!! That's going to be a Monday tea from now on. Not just Christmas leftover tea. 😊

Mash potato pastry sounds a wonderful idea, not a lot of fat(only when making the mash originally). This could be used in so many flans, quiches! Thanks Rik🤗🇬🇧
Oh oh oh looky here! That would be delish Rik, I love the new favourites! through the ‘magic’ of using the ingredients at hand! Waste not want not! That passes the ‘war on waste’ campaign ! 🙌🏼.
My mother use to make Christmas pie for boxing day, sort of the same thing using up the left overs from the Christmas dinner the day before. Only she use to make a short crust pastry instead..it was delicious
That looks great, love the mash potato pastry, same idea as gnocchi. As I live alone, I won’t be making a traditional Christmas dinner, I have a pork tenderloin in the freezer, could do that with Brussel sprouts, maybe some fingerling potatoes, something like that.
What a great way to use Christmas leftovers. I always wonder what to do that’s different. That will be just the ticket. What can I say Rik you’ve done it again. Omg fantastic. Thankyou.
Imagination and creativity with leftovers are true home economic skills that rivals 4-star chefs (who don't have to wash their own dishes :) We all know the adage WNWN. This looks delicious, good one Rik.
Welll Rik it is a Sunday dinner in an open pie, Delicious! I notice Rik you didn`t put an egg yolk in the pastry this time like you normally do! another treat for me to try, what an imagination! I might put the stuffin in the pastry, I`m not trying to trump you, Rik, I can be weired aswell.
Great recipe. I particularly love the pastry. Never thought of using potato. I will definitely try it! Ideal for me as flour makes me ill. I can replace the flour here by rice flour. Full gluten free stuff is usually awful or tasteless so I stopped doing pies. Here the potato will give some taste! And nice texture too. Thanks!
Yummy and tasty ,,,, Dear . I really have to say your recipes and you have enriched my life , So I am happy that you have published a video again , so easy and definitely still delicious . I definitely like quick Recipes . Looks so delicious .Super duper Yummy , Thanks for Sharing .Lovely .
A great way to use up leftovers from Christmas dinner - actually, for all leftovers. Your videos are so wonderfully relaxing, explained so well that even a layman can cook your dishes. Bruce & Bongo from your island would say: "Geil!". Merry Christmas greetings from northern Germany. All the best to you and your loved ones!
I never have a problem with dry mash potatoes in the fridge. 2 ingredients I use when making mashed potatoes is half a bar of cream cheese & a tbsp of sour cream & a tsp of nutmeg. I learned this from watching “The Chew” one day.
